BAKED CURRY CHICKEN WINGS WITH MANGO CHUTNEY
These tender chicken wings are marinated in mango chutney marinade and baked to perfection!

Steps:
- Place chicken wings in a bowl/zip-lock bag. Season with salt and curry powder. Shake/mix well. Make sure they are all well coated with seasoning.
- In a separate bowl combine mango chutney, Worcestershire sauce and oyster sauce. Pour it over wings and mix until each piece is well coated in the sauce. Cover the bowl with cling film (or close zip-lock bag) and refrigerate for at least 30 minutes (for best results several hours or overnight).
- Once marinated, place the wings onto a baking tray lined with baking paper. Make sure there is enough space in between them. Spoon the marinade over the wings. Bake in a preheated oven (400°F/200°C) for 25 minutes or until they are cooked through.
- These wings will come out juicy with sweet mango marinade flavor.
- Serve with dip of your choice!

- In a large resealable plastic bag, combine the first five ingredients. Place chicken wings in bag; seal bag and turn to coat. Refrigerate 4 hours or overnight., In a small bowl, mix sauce ingredients until blended. Refrigerate, covered, at least 1 hour., Preheat oven to 400°. Drain chicken, discarding marinade. Place wings on a rack in a foil-lined 15x10x1-in. baking pan. Bake 45-50 minutes or until juices run clear, turning every 15 minutes. Serve with sauce.

MANGO WINGS
Steps:
- Toss 12 chicken wings with 1/4 teaspoon turmeric, 1/2 teaspoon kosher salt, and pepper to taste. Spread on an oiled baking sheet; bake at 425 degrees F until golden, about 30 minutes. Whisk 1 cup mango chutney, 2 tablespoons each lemon juice and yellow mustard, and a pinch of salt. Toss the chicken with half of the sauce; return to the baking sheet and bake 5 more minutes. Serve with the remaining sauce.
BAKED CHICKEN BREASTS WITH MANGO CHUTNEY SAUCE
Adapted from a Light Cooking Recipe. It's very simple, I serve with a green vegetable and basmati rice. Could easily be a dump chicken recipe although I havent tried.

Steps:
- Pre-heat oven to 375 degrees.
- Combine chutney, yogurt, mustard, ginger and flour. Set aside.
- Arrange chicken breasts in a single layer in a baking pan. Spoon chutney mixture over chicken.
- Bake uncovered for 35 minutes, or until no longer pink in center. Remove from oven and let stand 5 minutes.
- Spoon any baking juices over top before serving.
CHICKEN CURRY WITH MANGO CHUTNEY
This recipe was picked up somewhere, somehow during the past 10 years or so, because it added a new deminsion to my stack of recipes that include mincemeat! There are several flavors of mango chutney, any one of which can be used here. The recipe can be made in advance & reheated, & it also freezes well.

Steps:
- Heat oil in skillet, & brown chicken in oil.
- Remove chicken from skillet, & in same skillet, saute onion, garlic & gingerroot until soft.
- Add curry paste, chicken stock, tomato, salt & pepper, mixing well.
- Return chicken to skillet, then cover & cook over low heat until chicken is cooked through.
- Stir in mincemeat & heavy cream.
- Serve over rice & drizzle with chutney.
- Garnish with cilantro.

- Preheat the oven to 475 degrees F. Line a baking sheet with foil and spray or brush it with the olive oil.
- Add the chicken to a large bowl and pour the buttermilk overtop. Mix well and set aside. In a shallow pie dish or large bowl add the Panko, whole wheat flour and a pinch of salt and pepper. Mix well.
- Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Spray each chicken "wing" with non-stick spray or a mist of olive oil. Bake for 10-12 minutes, then gently flip using kitchen tongs and spray the other side. Bake for 10-12 minutes more, then remove from oven. Reduce the oven temp to 400 degrees F.
- While the chicken is baking make the sauce. In a small-medium saucepan, combine the mango chutney, orange juice, soy sauce, jerk seasoning, curry paste, pinch of pepper and water. Bring the sauce to a boil and then reduce the heat. Simmer 5 minutes or until the sauce has thickened slightly. Remove from the heat and stir in the lime juice + zest and the cilantro.
