8 lamb cutlets, trimmed
1/4 cup seasoned flour
1/4 cup milk
1 egg
1 cup dry or fresh breadcrumbs
1/4 cup pine nuts, chopped
1/4 cup grated parmesan
1 tablespoon snipped chives
8 sage leaves
4 slices prosciutto, halved lengthways
250 gram punnet cherry tomatoes, halved
200 gram cup mushrooms, trimmed
steamed green beans, to serve

Steps:

  • Preheat oven to moderate, 180°C. Line a baking dish with foil.
  • Dust cutlets lightly in flour, shaking off excess. Dip into combined milk and egg.
  • On a plate, combine breadcrumbs with nuts, parmesan and chives. Coat cutlets, making sure to press crumb mix on firmly.
  • Place a sage leaf on each cutlet and wrap each with a strip of prosciutto. Arrange cutlets, tomatoes and mushrooms in dish. Spray with oil and season to taste.
  • Bake for 15-20 minutes, until cutlets are golden and cooked through. Serve with green beans.

1 small eggplant, sliced
1/2 cup (75g) seasoned flour
1 egg
1/4 cup (60ml) milk
1 1/2 cup (150g) dry or (105g) fresh breadcrumbs
1/2 cup (80g) chopped pine nuts
1 tablespoon snipped chives
8 sage leaves
8 slices prosciutto
olive oil spray

Steps:

  • Preheat oven to 180°C. Line a baking pan with foil.
  • Dust cutlets and eggplant in flour, shaking off excess. Dip both in combined egg and milk.
  • Coat cutlets and eggplant with combined breadcrumbs, pine nuts and chives, pressing on firmly. Transfer to a plate and chill for 20 minutes.
  • Place 1 sage leaf on each cutlet and wrap each with 1 piece of prosciutto. Arrange cutlets and eggplant in prepared pan and spray with olive oil. Bake, 15-20 minutes, until golden and cooked. Serve.

This is a fast and easy recipe to make on a busy night. We especially like the crunch of the Panko bread crumbs. (Panko crumbs can be found in the Asian section of the supermarket.)

4 boneless skinless chicken breast halves
3/4 cup flour
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
salt and pepper, to taste
3 eggs, lightly beaten with 1/3 cup water
2 cups panko breadcrumbs
vegetable oil

Steps:

  • Using a mallet, gently beat the chicken breasts to a uniform thickness. (This prevents the chicken breasts from shrinking and promotes even cooking.).
  • Combine the flour, onion powder, garlic powder, salt and pepper in one bowl. Place the egg and water mixture into another. Put the Panko bread crumbs into a third bowl. Dredge chicken with seasoned flour and pass through egg mixture. Shake off excess egg. For an even crispier crust, dredge with flour again and pass through egg mixture one more time.
  • Now completely cover chicken breasts with Panko crumbs, pressing crumbs down gently if needed.
  • Heat oil in frying pan on medium-high heat. Cook for 4 minutes on each side (or until no longer pink inside) and serve.

  • place on a baking tray and cook at 350F for approx 40 minutes or until golden.
  • DO NOT turn them over.

1/4 cup melted butter
3/4-1 cup finely ground salted soda crackers, crumbs or 3/4-1 cup dry breadcrumbs (or combination of crackers and dry breadcrumbs)
1/4 teaspoon fresh ground pepper
1/4 teaspoon sage
1/2 teaspoon sea salt (omit sea salt if using salted cracker crumbs)
1/4 teaspoon thyme
6 pork chops, 3/4 inch thick

Steps:

  • Rub melted butter, crumbs and seasonings together.
  • Rinse chops with cold water and pat dry with paper towels.
  • Coat chops thoroughly with the crumb mixture.
  • Press crumbs on chops firmly with hands.
  • Place chops, in a single layer, on a rack in a shallow baking pan with sides. Do not cover.
  • Bake at 325 degrees Fahrenheit for one hour, without turning, until done.

1 teaspoon salt
1/4 teaspoon pepper
2 cups dry breadcrumbs
2 eggs
4 tablespoons milk
3 tablespoons butter

Steps:

  • Wipe the veal cutlets with a damp cloth. Sprinkle with salt and pepper, and dip into bread crumbs. Beat the eggs with the milk and dip the cutlets into this and then again into crumbs. Saute in butter over medium low heat until nicely browned. Turn only once and brown the second side. Cook until meat is done and serve with mashed potatoes and milk gravy. Note: Cook time depends on the doneness you prefer.
