BAKED CRUMBED CUTLETS
Give your crumbed lamb cutlets a healthy twist by oven baking them alongside tasty cherry tomatoes and mushrooms

- Preheat oven to moderate, 180°C. Line a baking dish with foil.
- Dust cutlets lightly in flour, shaking off excess. Dip into combined milk and egg.
- On a plate, combine breadcrumbs with nuts, parmesan and chives. Coat cutlets, making sure to press crumb mix on firmly.
- Place a sage leaf on each cutlet and wrap each with a strip of prosciutto. Arrange cutlets, tomatoes and mushrooms in dish. Spray with oil and season to taste.
- Bake for 15-20 minutes, until cutlets are golden and cooked through. Serve with green beans.

- Dust cutlets and eggplant in flour, shaking off excess. Dip both in combined egg and milk.
- Coat cutlets and eggplant with combined breadcrumbs, pine nuts and chives, pressing on firmly. Transfer to a plate and chill for 20 minutes.
- Place 1 sage leaf on each cutlet and wrap each with 1 piece of prosciutto. Arrange cutlets and eggplant in prepared pan and spray with olive oil. Bake, 15-20 minutes, until golden and cooked. Serve.

CRISPY PANKO CHICKEN CUTLETS
This is a fast and easy recipe to make on a busy night. We especially like the crunch of the Panko bread crumbs. (Panko crumbs can be found in the Asian section of the supermarket.)

Steps:
- Using a mallet, gently beat the chicken breasts to a uniform thickness. (This prevents the chicken breasts from shrinking and promotes even cooking.).
- Combine the flour, onion powder, garlic powder, salt and pepper in one bowl. Place the egg and water mixture into another. Put the Panko bread crumbs into a third bowl. Dredge chicken with seasoned flour and pass through egg mixture. Shake off excess egg. For an even crispier crust, dredge with flour again and pass through egg mixture one more time.
- Now completely cover chicken breasts with Panko crumbs, pressing crumbs down gently if needed.
- Heat oil in frying pan on medium-high heat. Cook for 4 minutes on each side (or until no longer pink inside) and serve.
