Chicken-Chorizo Paella image

Provided by Jose Garces

Time 2h50m

Yield 4-6 servings

Number Of Ingredients 29

1 pound chicken wings
1 cup chopped Spanish onion
1/2 cup sliced celery
1/2 cup sliced carrot
2 fresh bay leaves
6 sprigs thyme
12 black peppercorns
3 juniper berries
1 tablespoon saffron threads
2 Spanish onions (1 quartered, 1 thinly sliced)
1 fresh bay leaf
2 stalks celery, sliced
1 1/2 pounds skin-on, boneless chicken thighs, fat trimmed
1/2 cup ketchup
2 tablespoons smoked Spanish paprika
1 tablespoon vegetable oil
2 large red bell peppers, thinly sliced
2 cloves garlic, thinly sliced
Kosher salt
2 tablespoons extra-virgin olive oil
1/2 cup Spanish chorizo, thinly sliced
1/4 cup diced Spanish onion
1 tablespoon minced garlic
1 1/4 cups Calasparra rice (or other paella rice)
1/4 cup fresh or frozen peas (thawed if frozen)
2 tablespoons thinly sliced piquillo peppers
1/4 cup chopped pitted kalamata or black olives
Kosher salt
1/4 cup tomato paste

Steps:

  • Make the stock: Combine the chicken wings, onion, celery, carrot, bay leaves, thyme, peppercorns and juniper berries in a large pot and add water to cover. Bring to a simmer over medium low to medium heat; simmer, uncovered, 45 minutes. Add the saffron and simmer 15 more minutes. Strain the stock: Pour the stock through a fine strainer; discard the solids. (If not using immediately, let cool, then cover and refrigerate up to 3 days or freeze up to 3 months.)
  • Poach the chicken: Bring 8 cups water, the quartered onion, bay leaf and celery to a simmer in a large pot over medium heat. Add the chicken thighs and gently poach until just tender, about 12 minutes.
  • Shred the meat: Remove the chicken from the pot using tongs and reserve the poaching liquid. Let the chicken cool slightly, then discard the skin and shred the meat. Make the sauce: the tomato paste, ketchup and paprika in a blender. Strain 2 cups of the reserved poaching liquid; add the liquid to the blender and puree until smooth.
  • Finish the chicken: Heat the vegetable oil in a large skillet over medium heat. Add the sliced onion, bell peppers and garlic and cook until translucent, 10 to 12 minutes. Add the pureed sauce and cook, stirring, until the sauce thickens, 8 to 10 minutes. Add the shredded chicken and stir to coat with the sauce. Season with salt and keep warm.
  • Make the paella: Preheat the oven to 350 degrees F. Heat the olive oil in a paella pan or large ovenproof skillet over medium-high heat. Add the chorizo and cook until the fat renders, about 5 minutes. Add the onion and garlic and cook until the onion is translucent, about 10 minutes. Add the rice and stir to lightly coat with the oil. Stir in the peas, piquillo peppers, olives, 2 cups chicken mixture and 2 1/4 cups saffron chicken stock. Season with salt. Bake and serve: Cover the paella pan or skillet tightly with foil and bake until the liquid is completely absorbed, 20 to 22 minutes. Remove from the oven and let rest, covered, 5 minutes. Serve in the pan. Photograph by Andrew Sabin

CHICKEN 'PAELLA'

Chicken 'paella' image

This paella-style dish is a simple one-pan meal that makes the most of tasty and cheap chicken drumettes. (This is the meaty upper part of a chicken wing - if separating your own wings, keep the tips and use them to make soup or stock.) If you're feeling flush, add a pinch of saffron to the tomato pureé for a more complex flavour, but it's still nice and smoky without.

Time 1h

Yield 8 to 10

Number Of Ingredients 13

400 g quality chorizo
1 small onion
50 g jarred piquillo peppers
½ a bunch of fresh flat-leaf parsley
22 free-range chicken drumettes
2 tablespoons extra virgin olive oil
1 teaspoon smoked paprika
2 tablespoon tomato pureé
400 g Bomba paella rice
120 ml white wine
750 ml organic chicken stock
200 g frozen peas
1 lemon

Steps:

  • Preheat the oven to 180ºC/gas 4.
  • Slice the chorizo, peel and finely dice the onion, and finely dice the peppers. Pick and finely chop the parsley.
  • Season the drumettes all over with sea salt and black pepper. Place a 30cm ovenproof sauté pan over a medium-high heat, add the oil, then add the chicken drumettes, in batches, and brown well on all sides. Remove the chicken from the pan and set aside.
  • Add the chorizo and onions to the pan, and cook until the onions are softened - about 4 minutes. Add the piquillo peppers, paprika and tomato pureé, season and cook until the tomato pureé bubbles.
  • Add the rice to the pan and stir well to coat it evenly with the tomato mixture. Cook the rice for about 3 minutes.
  • Add the wine, stir through and bring to the boil. Once the rice has absorbed the wine, add 750ml hot water or stock, then stir in the peas and half the parsley. Arrange all of the chicken drumettes on top of the rice, in a spoke pattern.
  • Bring the paella back to the boil then transfer to the oven and bake, uncovered, for 30 minutes, or until the rice is nice and tender.
  • Remove the paella from the oven, cover lightly with foil and leave to rest for about 10 minutes.
  • Serve with the rest of the parsley on top and lemon wedges on the side.

PAELLA IN THE OVEN

Paella in the oven image

Try this foolproof way of cooking paella in the oven. You can adapt it according to what you have in the fridge - in this case, chicken, chorizo and prawns

Provided by Orlando Murrin

Categories     Dinner, Main course, Supper

Time 1h5m

Yield Makes 4 easily halved or doubled

Number Of Ingredients 13

400g can chopped tomatoes
600ml chicken stock
1 tsp smoked paprika
good pinch of saffron
1 onion , chopped
1 garlic clove , crushed or finely chopped
2 tbsp olive oil
300g paella rice
4 chicken thighs (skin on or boneless), cut in half
200g chorizo , sliced
150g raw king prawns , leave the shell on a few if you prefer
good handful of frozen peas
1 lemon , quartered (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 8. Put the chopped tomatoes (including their juice), stock, paprika and saffron in a large heatproof jug or bowl and microwave for about 5 mins on high until steaming hot.
  • Tip the onion and garlic into a generous roasting tin or ovenproof dish, drizzle over the oil and mix to coat. Cook in the oven for 20 mins until beginning to brown.
  • Stir in the rice, chicken, chorizo and hot stock mixture, season well and return to the oven for 20 mins (don't cover).
  • Stir in the peeled prawns and peas, dot any shell-on prawns on top, and return to the oven for 5-10 mins until the rice, chicken and prawns are cooked through. If serving with lemon, a nice touch is to pop the lemon slices on top of the paella for the last 5 mins of cooking, to make them hot and juicy. Check the seasoning and serve at once.

VALERIE'S SUPER EASY OVEN PAELLA

Valerie's Super Easy Oven Paella image

Provided by Valerie Bertinelli

Categories     main-dish

Time 1h20m

Yield 4 to 6 servings

Number Of Ingredients 19

1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
Kosher salt
Extra-virgin olive oil
8 ounces Spanish chorizo, sliced thinly on the bias
2 1/2 cups thinly sliced Spanish onion (about 1 large onion)
2 tablespoons minced garlic (about 4 cloves)
2 cups unsalted chicken stock
1/3 cup bottled clam juice
One 14-ounce can chopped fire-roasted tomatoes
1 1/2 cups frozen peas
1 1/2 teaspoons sweet Spanish paprika
1/2 teaspoon saffron threads
Canola oil spray
2 1/2 cups bomba rice or other short-grain white rice such as Arborio
12 ounces jumbo shrimp (21/25 count), peeled and deveined, tails intact
1 pound littleneck clams
8 ounces Prince Edward Island mussels
1/4 cup pimiento-stuffed manzanilla olives, finely chopped
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the chicken with 1 teaspoon salt. Heat 1 tablespoon olive oil in a 10-inch skillet over medium-high heat. Sear the chicken on all sides until almost cooked through and beginning to brown, 5 minutes. Stir in the chorizo; cook until it releases its oil and begins to brown, another 5 minutes. Stir in the onions and garlic; cook just until the garlic is toasted and the onions are slightly softened, 2 minutes more. Stir in the chicken stock, clam juice and fire-roasted tomatoes. Add the peas, paprika, saffron and 1 tablespoon salt. Increase the heat to medium and slowly bring the liquid to a boil.
  • Meanwhile, lightly spray a baking sheet with canola oil. Spread the rice evenly onto the tray and lightly spray with more canola oil. Toast the rice in the oven until light golden brown in spots, 10 minutes.
  • At this point, the chicken mixture should be boiling. Ladle it evenly over the rice and return the baking sheet to the oven. Cover the paella by inverting another baking sheet and placing it on top. Bake until the liquid is completely absorbed and the rice is cooked through, about 20 minutes. Carefully remove the top baking sheet, and then remove the paella from the oven. Preheat the broiler.
  • Sprinkle the shrimp with 1/2 teaspoon salt. Combine the shrimp with the clams and mussels in a large bowl.
  • Arrange the shrimp, clams and mussels on the paella with the shell openings facing up. Lightly drizzle with 1 tablespoon olive oil. Broil--keeping a close eye--until the shrimp are cooked through, the clams and mussels have opened, and the rice is crispy, 2 to 3 minutes for a top broiler or 5 to 6 minutes for a bottom broiler. Sprinkle immediately with the olives and parsley.

4 tablespoons canola oil, divided
6 skinless chicken thighs
2 ham hocks
2 cups onion, diced, divided
1 cup celery, roughly chopped
1 cup carrots, roughly chopped
3 tablespoons garlic, minced
1 cup white wine
Seafood stock, about 2 cups
1 tablespoon saffron dissolved in 1 cup warm water for 3 minutes
1 pound Mexican style chorizo
1 cup red bell peppers, diced

1/2 cup scallions, diced, for garnish
1/4 cup Roma tomatoes, for garnish

Add to pot 1 cup of onions, celery, carrots and garlic and cook for 5 to 7 minutes. Deglaze with white wine and reduce by half. Next add the seafood stock, saffron and 2 quarts of water and let simmer for 2 hours or until reduced by half. When stock is finished simmering, strain and hold stock on low heat.
  • In a large saute pan or paella pan add the remaining 2 tablespoons oil, chorizo, red bell pepper and the remaining 1 cup onion, cook until the onions are translucent, but do not brown. Add rice, salt and pepper to pan and saute until all grains of rice are coated with oil of the pan. Form rice around the pan so it is level, next add 1 cup of broth at a time to the rice; do not stir the rice. When rice is al dente, or 3/4 of the way of being fully cooked, add chicken thighs, shrimp, scallops, mussels, and clams. Bury the seafood items in the rice so they will cook.
  • Add final cup of broth and cover entire pan tightly with another pan or lid. Let sit off heat for 10 to 15 minutes or until seafood is cooked.
  • Garnish with scallions and Roma tomatoes

PAELLA (BEEF, CHICKEN AND CHORIZO)

Paella (Beef, Chicken and Chorizo) image

Had a similar dish at this amazing restaurant in Saint Augustine, Florida and had to recreate for home! The restaurant had the traditional paella and a land-lover's version. I'm not a lover of seafood, so here goes... As a note: Pimento, olives, a little cayenne, shrimp (I can't stand the buggers but have added them for my husband), and sliced green onions have all made lovely additions at one time or another.
