565 ml organic chicken or vegetable stock
6 rashers of higher-welfare smoked streaky bacon
a few sprigs of fresh thyme
1 white cabbage
1 small knob of unsalted butter
extra virgin olive oil

Steps:

  • Pour the stock into a large pan, then add bacon and pick in the thyme leaves. Place over a medium heat and bring to the boil.
  • Meanwhile, discard the tatty outer leaves from the cabbage, then halve and very finely slice the rest, discarding the tough core.
  • Once boiling, add the cabbage to the stock, mix well, pop the lid on and boil furiously for 5 minutes.
  • Turn the heat down to a simmer and continue to cook until the cabbage is a pleasure to eat, topping up with a little extra stock or water, if needed.
  • Add the butter and a good lug of extra virgin olive oil, season to taste with sea salt and black pepper, then serve immediately.

200g smoked lardon, or diced bacon
1 Savoy cabbage
150ml boiling water

Steps:

  • Fry the onion in butter for 2 mins, then add the bacon and cook for a few mins more until golden.
  • Stir in the cabbage and boiling water. Cook for 2 mins over a medium heat until wilted, then cover, turn the heat to low and cook for another 5 mins.
  • Uncover and stir well; the cabbage should have a little colour. If not, increase the heat and cook for a few moments more. Season to taste.

3 lbs cabbage, quartered, core removed, and cut into a large 1-inch dice
1/2 lb sliced bacon
1/2 of medium onion, sliced thinly
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
  • Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
  • Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
  • Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
  • Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
  • Crumble the cooked bacon into the cabbage and serve hot.

One head green cabbage cleaned (cut into wedges, core removed from wedges)
4 slices uncooked bacon (cut into pieces)
Salt and pepper
drizzle of olive oil
1/4 cup butter (melted and browned)

Steps:

  • Preheat the oven to 450 degrees.
  • Cut the cabbage head in half. Cut each half again, making four wedges. Cut each of the 4 wedges to make a total of 8 wedges. Cut the core from each wedge on an angle.
  • Place the wedges in a roasting pan. Salt and pepper the wedges, drizzle with a little bit of olive oil and lay the bacon pieces on the wedges.
  • Using a small saucepan over low heat, melt 1/4 cup of butter. Cook and stir until the butter turns brown (being careful not to over cook, it will burn quickly). Drizzle over cabbage.
  • Bake with the pan covered with foil for 30 minutes. Remove the foil, bake another 30 minutes or until cabbage is tender and starting to turn golden brown, serve immediately.

1 pound bacon - cut into 1" pieces
1 tablespoon vegetable oil
1 head cabbage - roughly chopped
2 tablespoons whole grain mustard
1 cup chicken stock - low sodium
1 1/2 tablespoon salt
1/2 teaspoon red pepper flakes

Steps:

  • Heat vegetable oil in dutch oven or deep bottom skillet. Add bacon and cook until crispy. Remove bacon to a papertowel lined plate. Set aside. Remove all but 3 tablespoons of bacon grease from pot. Turn heat to low.
  • Add mustard, chicken stock, salt and pepper, stirring to incorporate. Carefully add in cabbage and toss to coat with liquid. Continue to cook on low heat for approximately 15 minutes until cabbage is cooked but not mushy. Add bacon back to pot and gently stir into cabbage. Taste and adjust seasoning.
  • Serve immediately. Can be stored in a sealed container in fridge for 2 days.

1 garlic clove , finely chopped
few thyme sprigs
1 celeriac , cut into batons
2 carrots , cut into batons
1 Savoy cabbage , shredded
small glass (125ml) white wine

Steps:

  • In a large pan melt the butter. Add the bacon and sizzle for 5 mins until golden. Add the garlic and thyme to the pan and stir for 1 min. Take the pan off the heat, remove the bacon mixture and reserve.
  • Add the celeriac and carrot batons into the now empty pan with a little of the bacon-flavoured butter. Gently cook for 10 mins until soft, then add the cabbage and cook for 5 mins until it starts to soften. Add the bacon and garlic back to the pan, then add the white wine. Allow the wine to evaporate for a few mins then season the mixture and serve. This can be made ahead and left in the pan, then reheated.

Steps:

  • Preheat your oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper.
  • Cut the cabbage head into 1-inch slices. I got 3 large slices and 2 mini slices from my cabbage, but you can get 4 slices (2 large & 2 medium) if you plan better than I did.
  • Lay the cabbage slices flat on the prepared baking sheet. Brush the top of each slice with some olive oil and then sprinkle the salt and pepper evenly over the cabbage.
  • Lay the bacon pieces over the tops of the cabbage slices so that the entire top is covered.
  • Bake for 40 to 45 minutes or until the cabbage is tender, the outermost leaves have charred a little, and the bacon is crispy. (If you need to crisp up the bacon a little more, turn your oven to broil on HIGH for a couple minutes. Just be sure to watch things so the bacon doesn't burn.)

  • Cook the bacon in a heavy bottomed skillet over medium heat until it starts to become crisp and most of the fat is rendered. Remove the bacon with a slotted spoon to a paper towel lined plate to dry, and remove all but about 2 tbsp of the bacon grease from the pan.
  • Add the onion, cook for about a minute or two, then add the garlic and continue to cook until the onion is softened - about 5 - 6 minutes.
  • Increase the heat a bit, add begin to add the cabbage, stirring well to combine. You might not be able to fit all the cabbage in at once, so continue to stir, and as the cabbage cooks and wilts add more until it is all in the pan
  • Add the paprika, cayenne, salt, pepper and Worcestershire sauce, stir well to combine, then add the cooked bacon.
  • Continue to cook and stir for about 15 mins more, or until the cabbage is cooked and tender.

1 cabbage, about 2 to 2 1/2 pounds
2 large Idaho potatoes, about 2 1/2 pounds
12 ounces lean bacon, cut into 1/2-inch dice
2 cups yellow onions, peeled and sliced lengthwise
1 teaspoon salt
1 teaspoon ground black pepper
2 cups homemade chicken stock, or canned, low-sodium chicken broth

Steps:

  • Preheat the oven to 375 degrees F.
  • Rinse the cabbage under cold running water and remove the tough outer leaves. Cut the cabbage into quarters and remove the hard core. Cut the cabbage quarters into halves and place, rounded side down, in a roasting pan.
  • Cut the potatoes in half crosswise and peel. Cut the peeled potato halves into quarters, and arrange in the roasting pan, alternating with the cabbage pieces.
  • Fry the bacon in a heavy medium skillet for 7 minutes. Add the sliced onions, salt, and black pepper to the pan and cook until soft, about 5 minutes. Evenly distribute the bacon mixture and pan drippings over the vegetables, then pour the chicken stock on top. Tightly cover the pan with aluminum foil and bake for 1 1/2 hours.
  • Remove the pan from the oven and allow to sit, covered, for 15 minutes before serving. Serve the vegetables with the bacon and broth spooned over them.
