Steps:
- Remove the brie from the refrigerator. Remove any paper wrapping and return the wheel to the bottom part of it's wooden box or place it on a small square of parchment paper (that is slightly larger than the brie wheel itself). Make very shallow slits across the top of the brie, just through the rind layer, every ½-inch to 1-inch, in a criss-cross pattern. Let rest at room temperature for 30 minutes.
- Preheat the oven to 350 degrees. Place the brie on a small sheet tray. Sprinkle the top with the fresh thyme and rosemary, and drizzle with honey. Bake for 20 - 25 minutes, until very soft.
- Carefully transfer the brie, in the box or on the sheet of parchment paper, to a serving plate. Serve warm alongside toasted bread, apple slices and/or grapes, for serving.
GARLIC BRIE PIZZA
I'm a garlic junkie and this sounded great. I wanted to post it before I lost it. It's from the Taste of Home Holiday Cookbook and was from Gail Cawsey of Sequim, WA.

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off of each garlic bulb. Brush with oil. Wrap each bulb in heavy duty foil; place on baking sheet. Bake at 425 for 30 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into a bowl and mash.
- Remove rind from brie and discard. Cut brie into 1/4" slices.
- Place crust on a 12" pizza pan. Spread with garlic. Arrange cheese slices over garlic. Sprinkle almonds over cheese.
- Bake at 450 for 8-10 minutes or until cheese is melted.

BAKED BRIE EN CROUTE
This MY tweaked version of a recipe by Paula Deen (She rocks my world!) AND, this is quite similar to the appetizer at THE CAV that we fell head over heels in LOVE with! I am often torn with brie between "rind" or NO RIND". Speaking from experience, this appetizer needs the rind, or it will simply be volcanic OOZE all over you baking sheet! So, I slice off just the TOP rind in order for the preserves and yummy toasted nuts to blend into the cheese. Also, please feel free to use ANY flavor of fruit preserve that suits your tastes. I listed apricot and strawberry because that's what I have used in the past! : >

- Preheat oven to 375°F.
- Defrost puff pastry for approximately 15 to 20 minutes and unfold.
- In a saucepan, melt the butter over medium heat.
- Saute the walnuts in the butter until golden brown, approximately 5 minutes.
- Add the cinnamon and stir until walnuts are coated well.
- Carefully slice the top rind ONLY off of the brie round.
- Spread your choice of fruit preserves over the top of the brie.
- Then place the walnut mixture on top of the Brie ad fruit and sprinkle the brown sugar over the top.
- Lay the puff pastry out on a flat surface.
- Place the brie in the center of the pastry.
- Gather up the edges of the brie, pressing around the brie and gather at the top.
- Gently squeeze together the excess dough and tie together with a piece of kitchen twine.
- Brush the beaten egg over top and side of Brie.
- Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.
- Serve with crackers.
BRIE & POTATO PIZZA

- Cook them in a pan of boiling salted water until tender, 5-7 minutes. Take care not to overcook them or they will start to break up. Meanwhile, preheat the oven to fan 180C/conventional 200C/gas 6 and cut the cheese into thin slices.
- Unroll the pizza dough and its baking parchment on to a baking sheet and scatter over the potato and cheese slices.
- Dot the olives all over the pizza, then sprinkle with the rosemary. Drizzle generously with olive oil, grind sea salt and black pepper over the whole thing and bake for 15 minutes. Serve hot, with a tomato and onion or peppery rocket salad.

BRIE AND PEAR PIZZA
I found this recipe in the Toronto Star, December 26, 2007, rated one of the best recipes of the year. It is a lovely brunch pizza..."do not use a non-stick skillet for the onions, and don't skimp on the pear; it adds the right touch of sweetness". Preparation time will be longer if using home-made pizza dough.

- Heat pizza stone in 400F oven at least 30 minutes.
- For onions, melt butter with oil in large skillet on medium heat. Stir in onions, salt and pepper. Cook stirring often, 5 minutes or until starting to brown. Reduce heat to low. Cook, stirring occasionally, 25 minutes, until golden brown and very tender. Stir in vinegar. Turn heat to medium-low. Cook, stirring often, 5 minutes. Stir in curry powder. Cool to room temperature. Makes 1 1/4 cups.
- For pizza, cut dough into 3 pieces. On floured surface, press 1 piece of dough into 8 inch round. Transfer to pizza peel covered in parchment. Spread with about 1/3 caramelized onions. Brush exposed edges with oil. Put 1/3 of pear slices over onions, arranging like spokes on wheel. Arrange 1/3 of brie slices in between pear spokes.
- Slide pizza on parchment onto pizza stone. Bake 20 to 25 minutes, until bottom is crisp, brie is golden and pears are tender. Garnish with chives. Repeat with remaining dough, onions, pear, brie and chives. (You will have some onions left over).

- Preheat oven to 350°F.
- Cut brie cheese in half across the middle horizontally and set top half aside.
- Spread out the puff pastry sheet and roll it to an 1/8 of an inch thick.
- Place the bottom half of the brie onto the puff pastry.
- Smear the jelly on top.
- Sprinkle the almonds all over jelly.
- Place the top half of the brie back on the wheel.
- Wrap dough up and over the top of the brie, beginning with the corners.
- Carefully turn over the pastry covered wheel, smooth side up and place on baking sheet.
- Sealed, wrapped edges should all be down on the baking tray.
- Bake for 15 minutes or until golden brown.

BAKED BRIE CROSTATA

- Preheat the oven to 400 degrees F.
- On a clean, lightly floured surface, roll the puff pastry out to an even thickness, about a 13-to-14-inch square. Place the Brie wheel in the center of the pastry and cut the pastry into a round 4 inches wider than the cheese on all sides. Remove the cheese and brush the pastry with a thin layer of beaten egg.
- Spoon the cranberry chutney into the center of the rolled pastry and spread with the back of a spoon so it is the same size as the circle traced for the Brie. Place the cheese on top of the chutney.
- Working from the bottom of the circle, begin folding the pastry over the cheese. It will not cover the cheese completely; rather the pastry should just come 1 to 2 inches over the edge of the cheese. Work all the way around the cheese until all the pastry is folded, forming a neat packet around the cheese. (If the pastry is too soft at this point, place in the refrigerator for 15 minutes to firm up.)
- Cut a 2-by-2-inch 'x' in the center of the exposed cheese.
- Brush the folded pastry with more beaten egg and sprinkle with the bagel spice or sesame seeds if using. Transfer to a baking pan and place in the oven. Cook until golden brown, 20 to 25 minutes. Cool 10 minutes before serving. To serve, cut into wedges. Serve with crackers if desired.

- Preheat oven to 400 degrees F.
- In small skillet, melt butter over medium heat.
- Add onion & garlic. Saute until onion is golden brown, then set aside.
- Microwave Brie & cream cheese in large bowl just until melted.
- Whisk in onion mixture, sour cream & remaining ingredients [except for the loaf of bread!].
- Season to taste with salt & pepper.
- Cut off top of bread loaf, & scoop out center, leaving 3/4" thick shell of bread.
- Spoon in cheese mixture.
- Cover with bread lid, & wrap in foil.
- Bake cheese-filled loaf until filling bubbles, about 1 hour.
- Unwrap & place on platter.
- Remove bread lid, & sprinkle sheese with paprika.
- Serve with crackers and/or vegetables [broccoli/cauliflower florets, carrot & bell pepper sticks, etc.

- Preheat the oven to 400° F and brush the top of the naan with a thin layer of olive oil using a pastry brush. - Remove the naan from the oven and cut the brie into small chunks, about 2 inch pieces, and arrange it over the naan. Add some fresh cracked pepper and place it on an oven safe baking sheet and back in the oven for 1-2 minutes until the cheese melts.
