BAKED BEANS WITH SWEET POTATOES AND CHIPOTLES



Baked Beans With Sweet Potatoes and Chipotles image

I used Rancho Gordo Mexican heirloom San Franciscano beans for this richly flavored dish. The beans are dark reddish purple, not too big, with an earthy, sweet taste that fits perfectly into this slightly sweet and spicy baked bean dish. From the supermarket, use red beans or pintos.

1 pound red beans, San Franciscano beans, or pintos, washed, picked over for stones, and soaked in 2 quarts water for 4 hours or overnight
1 bay leaf
2 tablespoons extra virgin olive oil
1 yellow or red onion, chopped
Salt to taste
2 to 4 garlic cloves (to taste), minced
1/4 cup tomato paste
2 tablespoons honey or agave nectar
2 chipotles in adobo, seeded and minced
2 large sweet potatoes (1 1/2 to 2 pounds), peeled and cut in large dice

Steps:

  • Place beans and soaking water in an ovenproof casserole. Add bay leaf and bring to a gentle boil over medium heat. Reduce heat to low, cover and simmer 1 hour. Check beans at regular intervals to make sure they are submerged, and add water as necessary.
  • Meanwhile, heat oven to 300 degrees . Heat 1 tablespoon of the oil in a heavy skillet and add onion. Cook, stirring often, until tender, about 5 minutes. Add a generous pinch of salt and the garlic and cook, stirring, until garlic is fragrant, 30 seconds to a minute. Stir onion and garlic into beans, along with salt to taste, tomato paste, honey or agave nectar, and chipotles, and stir together. Add sweet potatoes and bring back to a simmer, drizzle with remaining olive oil, and place in oven.
  • Bake 1 to 1 1/2 hours, until beans are thoroughly soft and sweet potatoes are beginning to fall apart, checking and stirring from time to time to make sure that beans are submerged. Either add liquid or push them down into the simmering broth if necessary. Remove from heat and serve hot or warm.

4 small sweet potatoes
1 tbsp smoked paprika , plus extra to serve
1 tbsp olive oil
1 large onion , chopped
2 garlic cloves , crushed
1 tbsp brown sugar
1 tbsp red wine vinegar
splash of Worcestershire sauce (Lancashire sauce is a veggie option)
2 x 400g cans mixed beans in water, drained
400g chopped tomatoes
4 tbsp light soured cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pierce the sweet potatoes a few times with a fork, then cook them in the microwave on High for 8 mins or until soft. Rub with 1 tsp of the paprika, 1 tsp of the oil and some seasoning. Transfer to a baking tray, put in the oven and cook for 10-15 mins until crispy.
  • Meanwhile, make the beans. Cook the onion in the remaining oil until soft. Add the garlic, sugar, vinegar, Worcestershire sauce and the remaining paprika, and cook for a further 1-2 mins until sticky. Tip in the beans, tomatoes and a splash of water, and simmer until the sweet potatoes are ready.
  • Serve the sweet potatoes with the beans on top, a dollop of soured cream and a pinch of paprika, if you like.

This recipe is an adaptation from my girlfriend Jan's mother, Alice. I bought one of those mega cans of Bush's Baked Beans and diced prosciutto from Sam's Club/Costco, and made two different types of beans with very little extra work. I loved the chipotle version.

102 ounces baked beans (Bush's original flavor)
2 green peppers (chopped)
2 large onions (chopped)
7 ounces diced prosciutto
1 cup brown sugar
1/4 cup yellow mustard
3 tablespoons Worcestershire sauce
1/4 cup ketchup
1/4 cup pureed chipotle chile in adobo
2 tablespoons olive oil

Steps:

  • Saute the onion, green pepper, and prosciutto in 2 tablespoons olive oil, in a large heavy pot, until the onions and peppers are soft and the prosciutto is browned.
  • Add the entire can of beans into a large pot along with remaining. ingredients, except the pureed chipotle.
  • Divide the beans evenly between two ovenproof casseroles (I covered two ovenproof mixing bowls with foil).
  • I added the pureed chipotle to one of the mixing bowls, then covered them and baked them at 375 degrees for an hour.
  • Uncover and cook for another 20 minutes.
  • Stir them about halfway through the cooking time, and then again when you uncover them.
  • If you so desire, add a little chopped fresh cilantro to the chipotle version.

1 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Toss sweet potatoes and butter together in a large bowl.
  • Whisk brown sugar, onion powder, garlic powder, chipotle chile powder, salt, and black pepper together in a small bowl; sprinkle over sweet potatoes and toss to coat. Pour potatoes in a single layer onto the prepared baking sheet.

2 teaspoons new mexico chile powder
2 tablespoons adobo sauce
1 large onion (chopped )

1/4 lb thick slab bacon, cut into 1/2 inch pieces
1/2 cup ketchup
1/2 cup beer or 1/2 cup water
1/4 cup dark brown sugar

  • Sauté chipotles, onion, and garlic in oil until soft. (I cook bacon in with this).
  • Combine with other ingredients, and mix resulting sauce into the beans. Bake at 325F for 2 hours, adding water if beans get too dry.

  • Rinse dry beans and put into 2 quarts of water to soak overnight. On the next day, add a bay leaf to the soaking water and bring beans to a slow boil over medium head. Add a generous amount of salt and the minced garlic to the pan and continue to cook until the garlic is fragrant--about 30 seconds. Add chopped sautéed onion, raw quartered onions and garlic to the beans. Add salt to taste, tomato paste, honey, molasses and chipotles. Stir well. Bake (covered) until the beans are soft but not falling apart and the cooking liquid has boiled down to form a thick, sweet sauce. This will take several hours. If your beans have too much liquid, you can take the cover off the pan and continue to bake in the oven until the liquid is reduced to the thickness you want.
  • While the beans are baking, drizzle the remaining tablespoon of olive oil over the diced sweet potatoes. Put into a shallow baking pan and roast at 375 degrees F. for about 25-30 minutes. When the sweet potatoes are baked through and soft, stir them into the baking beans about half an hour before the beans are finished baking. You want the sweet potatoes to absorb some of the delicious baked bean sauce. Alternatively, you could add the raw sweet potatoes to the baking beans earlier in the baking process. I found that my sweet potatoes were overdone and mushy when baked this way. For that reason, I opted to roast them separately and add them in at the end.
