Homemade Baked Beans with Bacon (Southern) image

(Recipe video above) Southern baked beans in a thick savoury sauce with a touch of sweet and hint of tang. Loaded with BACON! Serve as a side, or have it for breakfast with bacon and eggs. It even makes a hearty meal itself - great for slopping up with bread!

Provided by Nagi

Categories     Side

Time 1h25m

Number Of Ingredients 14

1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

BAKED BEANS WITH BAKED BACON

Baked Beans With Baked Bacon image

This combines Recipe #187790 and Recipe #29709, with tweaks (like doubling the bacon). Made for July 4th party. It tastes so good, with a big wallop of flavor, I don't feel guilty about starting with Bush's Homestyle Baked Beans.

Provided by KateL

Categories     Pork

Time 1h25m

Yield 10 serving(s)

Number Of Ingredients 5

1 lb applewood-smoked bacon
2 (28 ounce) cans brown sugar baked beans (Bush's Homestyle)
1/3 cup ketchup
1/8-1/4 teaspoon garlic powder
1 small onions or 1 medium onion, chopped

Steps:

  • BAKED BACON:.
  • Preheat oven to 375°F.
  • Line a half sheet with aluminum foil and put a cooling rack on top. Arrange slices in rows, with fat edges slightly overlapping lean edges.
  • Bake 375 degrees without turning 20-25 minutes (depending on thickness) but remove from oven before it begins to crisp. If needed, cook more, 2 minutes at a time.
  • Remove bacon to double layer of paper towel and blot excess grease.
  • Lay bacon on cutting board and cut into bite-size pieces before completely cool. (I cut across the entire pile of bacon with one slice.).
  • BAKED BEANS:.
  • Set oven to 350°F.
  • Mix the Baked Beans ingredients in a 3-quart casserole dish or half buffet tray. Add the cut-up cooked bacon and mix a little.
  • Bake uncovered for 1 hour.
  • Allow to cool 1 hour before serving.

BAKED BEANS WITH A CRUNCHY TOPPING

Baked Beans With a Crunchy Topping image

How about topping these delicious baked beans with crunchy rye bread crumbs? I bet you'll be glad you did. I've adapted this recipe from one I "found" in a Cuisine at Home magazine.

Provided by Suzie

Categories     Beans

Time 50m

Yield 1 Pot, 10 serving(s)

Number Of Ingredients 9

4 slices thick-sliced bacon, diced
1 cup minced onion
2 (15 ounce) cans pinto beans, rinsed and drained
1 (15 ounce) can crushed tomatoes
1/2 cup ketchup
1/2 cup brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons prepared yellow mustard
2 -3 slices rye bread, buttered, pulsed in food processor

Steps:

  • Preheat oven to 400 degrees.
  • Brown bacon in cast iron skillet over medium heat until crisp. A regular large frying pan will work, but you'll need to use an oven-proof pan or transfer to casserole dish.
  • Drain bacon on a plate covered with paper towel.
  • Pour off bacon drippings from skillet reserving 1 tablespoon.
  • Sweat onion in the tablespoon of drippings until soft.
  • Add remaining ingredients (but not the bread crumbs) along with bacon pieces; stir to mix.
  • Sprinkle crumbs on top of beans; bake in your preheated, 400 degree oven until nice and bubbly. I check after about 20 minutes. I put my beans in a casserole dish in lieu of the skillet.
  • You may bake the beans in individual serving dishes. Simply top each with crumbs and bake as above.

  • Cook bacon in a 10-inch skillet over medium-high, stirring occasionally, until crisp, about 10 minutes. Remove from heat. Transfer bacon to a plate lined with paper towels, reserving drippings in skillet. Pulse bread pieces in a food processor until breadcrumbs form, about 20 pulses. (You’ll have about 1 cup.) Add breadcrumbs to drippings in skillet. Cook over medium, stirring often, until golden brown and dry to the touch, about 8 minutes. Remove from skillet; set aside.
  • Add onion and oil to skillet over medium-high. Cook, stirring often, until browned, about 15 minutes. Add cream, salt, and pepper, stirring up browned bits on bottom of skillet. Bring to a boil over medium-high. Reduce heat to medium. Cook, stirring often, until liquid thickens, about 5 minutes. Stir in green beans. Crumble bacon over mixture, and stir to combine. Transfer mixture to a shallow dish or platter. Sprinkle with breadcrumbs.

  • Pick over beans (i.e. remove and discard any foreign objects, like rocks, and any imperfect beans). Rinse and drain beans.
  • Place beans into a large bowl and generously cover with fresh, cold water so they're submerged (and at least two inches or so of water over top). Soak overnight, for about 12 hours.
  • Drain beans and rinse again with fresh, cold water. Place beans into a pot, cover with water (beans should be covered by an inch or two of water, fully submerged in the water), bring to a boil, reduce to a simmer, cover and cook for about 35 to 45 minutes or until beans are tender, but not mushy (they'll finish cooking in the oven). Drain.
  • Meanwhile, preheat oven to 375 degrees Fahrenheit. Place bacon onto a parchment paper-lined baking sheet and cook until crisp, about 15 to 20 minutes (or you could fry bacon on stovetop over medium heat until crispy). Drain grease. Once cool enough to handle, crumble bacon. Set aside. Reduce heat in oven to 325 degrees Fahrenheit.

  • Fry the bacon lardons in a large frying pan over a medium-high heat for 8-10 minutes until crisp, then set aside to cool slightly. Heat the oven to 200°C/180°C fan/gas 6.
  • Put the bacon in a mini food processor and whizz until just broken up (or finely chop and put in a mixing bowl). Add the breadcrumbs, garlic, lemon zest, a pinch of salt and pepper and the olive oil. Whizz again (or finely chop them and add to the bowl) to make small crumbs.
  • Put the cod loins on a baking tray – skin-down if they have the skin on – and top with the crumb and a few slices of lemon. Drizzle with olive oil and bake for 20-25 minutes until the fish is cooked through and the topping is golden. Serve with roast baby potatoes and green beans.
