OVEN-BAKED BBQ PORK RIBS

These Oven-Baked BBQ Pork Ribs make it super easy to get tender, fall-off-the-bone ribs that are full of flavor every single time!

1 tablespoon kosher salt (or to taste)
1 teaspoon black pepper
2 teaspoons dry ground mustard
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ cup brown sugar (light or dark)
1 rack pork spare ribs (whole or St. Louis-style, about 3½ to 4 pounds)
1½ cups barbecue sauce

Steps:

  • Preheat the oven to 300°F.
  • In a small bowl, mix together the rub ingredients until well-combined.
  • Place the ribs on a double layer of aluminum foil large enough to wrap the ribs. Note: I always fold together two pieces of foil to make one big piece for each layer
  • Sprinkle the ribs with the rub on both sides, evenly covering the ribs.
  • Wrap the ribs with the foil (fold the foil over long-ways down the middle and then fold the sides up from the bottom so the juice doesn't leak out). Place the foil packet on a large baking sheet.
  • Bake for 3 hours or until the meat is tender.
  • Remove the ribs from the oven, open the foil, and let the ribs cool completely, about 45 minutes to 1 hour. Cooling the ribs will allow you to move them around more easily in the next steps without them falling apart. Note: If you want to make the ribs a day or two ahead of time, remove the ribs from the cooking liquid and store them covered in the refrigerator. When you are ready to serve them, proceed with the recipe.
  • While the ribs are cooling, preheat the grill to high.
  • Once the ribs are cooled, remove them from the foil and cooking liquid and grill, basting with the barbecue sauce and turning frequently, until they are heated through and the sauce begins to caramelize, about 10 minutes. Note: I usually cut the rack of ribs in half before grilling to make them easier to handle.
  • Cut the ribs into pieces. Serve with extra barbecue sauce, if desired.

2 cups sliced onions
2 cups ketchup
2 cups water
4 teaspoons salt
¼ cup Worcestershire sauce
½ cup white vinegar
½ cup dark brown sugar
4 teaspoons dry mustard
4 pounds pork spareribs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onions, ketchup, water, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split ribs down the center between the bones.
  • Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches.
  • Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder.
  • Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all sauce by two hours. Continue turning and basting ribs using sauce in the pan during the last hour of baking.

1 (18 ounce) bottle BBQ sauce, divided
1 tablespoon liquid smoke flavoring

Steps:

  • Mix brown sugar, chili powder, salt, pepper, garlic powder, and onion powder in a small bowl. Rub each rib with dry rub mixture until thoroughly coated. Let rest for 10 minutes.
  • Mix BBQ sauce and liquid smoke until well combined.
  • Place ribs in the slow cooker and pour BBQ sauce mixture evenly over ribs.
  • Cook on Low until ribs are tender, 4 to 6 hours.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Remove ribs from the slow cooker and baste with remaining BBQ sauce.
  • Broil ribs in the preheated oven for 3 to 5 minutes on each side.

Rib tips are the parts of the rib that are cut away to make St. Louis ribs. Some butchers call this the pork brisket. This cut has a lot of cartilage, but a low, slow cook softens the cartilage and makes it tasty. I like to cut them into small pieces. These meaty bits are a little easier to manage than ribs, and their meaty, chewy texture makes a great appetizer or a main dish. Serve with additional barbecue sauce, if desired.

1 ½ pounds pork rib tips
1 tablespoon seasoned salt, or to taste
¾ cup barbecue sauce, or to taste

Steps:

  • Remove silver skin from underside of rib tips, if it is there. Rub seasoned salt on both sides of the meat.
  • Line a baking pan with aluminum foil and place seasoned meat into the pan. Cover tightly with another piece of foil and refrigerate for at least 4 hours, up to overnight.
  • Preheat the oven to 250 degrees F (120 degrees C).
  • Bake in the preheated oven, covered and undisturbed, for 2 1/2 hours.
  • Remove from the oven and increase oven temperature to 350 degrees F (175 degrees C).
  • Uncover and drain the pan, if necessary. Brush barbecue sauce over ribs. Return to the oven and bake for 15 minutes.
  • Turn ribs and brush with additional barbecue sauce; continue baking for another 15 minutes. Repeat this twice more, for a total of 1 hour baking time at 350 degrees F (175 degrees C). Remove from the oven and cut into desired serving size, about 1 1/2 to 2 inches.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil in the preheated oven to develop a bit of char, 2 to 3 minutes, watching carefully to make sure they do not burn. Remove from the oven and serve.

BBQ Ribs are my passion!!! I've tried several different rib recipes & I have an earlier Rib recipe posted on Zaar, but this even beats that one!!! First of all, DO NOT BOIL RIBS!!!...it takes away the flavor & is just plain WRONG!!! Second, they shouldn't "fall-off-the-bone"...they should be tender, but sort of "SNAP-OFF" the bone!!! Third, everyone has their own favorite "rub" & "sauce"...give Recipe #410170 and/or Recipe #268574 or use whatever works best for YOU!!! I prefer my ribs smoked, but that's me. These ribs are good either way!!! You can mop them with sauce is desired, but I prefer not to. PLEASE READ DIRECTIONS COMPLETELY.

1 -2 pork rib rack (Baby Back or St. Louis)
seasoning (Rib Rub)
barbecue sauce (optional)

Steps:

  • Preheat oven to 275°.
  • Cut ribs in half & generously apply rub on both sides, massaging it into the meat.
  • Wrap each half tightly in heavy duty aluminum foil.
  • Place each in a shallow pan with sides.
  • Bake for 3 hours.
  • Serve with your favorite sauce.
  • NOTE: If you want them BROWNED, carefully remove the ribs from the foil. Place under broiler or on grill until desired, but watch carefully so not to burn -- 10-12 minutes each side should be sufficient.
  • NOTE 2: If you want them SMOKED, carefully remove the ribs from the foil. Place on grill, using indirect method -- smoke for about an hour. I recommend Apple or Hickory.
  • DO NOT soak wood chips/chunks in water! Wood doesn't absorb much water, so all you're doing is cooling off the coals.
