Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Core each apple making a large well in the center and arrange apples on a rimmed baking sheet.
  • Mix oats, brown sugar, and cinnamon together in a bowl; cut in butter until evenly combined. Spoon 1/4 of the oat mixture into each apple.

1/2 cup pecans, roughly chopped
1/2 cup old fashioned rolled oats
1/2 cup brown sugar
1/4 cup butter, melted
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon kosher salt
3/4 cup water
2 teaspoons corn starch
1 teaspoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the apples in a 9x13 baking dish.
  • To make the filling, combine the pecans, oats, sugar, butter, cinnamon, cardamom, and salt in a bowl and stir till fully combined.
  • Portion the filling out between the apples.
  • Mix the water, corn starch, and lemon juice together until the corn starch is fully dissolved. Pour it over the apples.
  • Bake the apples for 20 to 25 minutes or until they are tender and the sauce has thickened.

2 tablespoons butter, melted
1 egg
3 cups almond milk (or cow's milk or non-dairy milk alternative)
3 tablespoons maple syrup
2 teaspoons vanilla
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/4 teaspoon salt
2 cups rolled oats
2 medium apples, chopped (about 2 cups)
1/2 cup chopped walnuts, divided

Steps:

  • Preheat oven to 350 degrees F. Grease 8×8-inch baking dish.
  • In a large bowl, whisk the butter, egg, milk, maple syrup, vanilla, pumpkin pie spice, baking powder and salt.
  • Stir in oats, apples, and 1/4 cup walnuts.
  • Pour oatmeal mixture into prepared baking dish. Bake at 350 degrees until puffed and center is just set, about 45-55 minutes. During last 5 minutes of baking, sprinkle remaining walnuts over top.
  • Serve warm and refrigerate leftovers for 3-4 days. Reheat in the microwave with some additional milk splashed on top.

1 fresh lemon, halved
4 tablespoons unsalted butter
6 tablespoons light brown muscovado sugar
1/8 teaspoon ground cinnamon
Pinch ground black pepper
1 cup apple cider
1 cup whole milk, heated
2 teaspoons finely grated orange zest
1 1/2 cups cooked quick-cooking steel-cut oatmeal, prepared according to package directions, warm
Low-fat Greek yogurt

Steps:

  • Preheat the oven to 375 degrees F. Cut off the top third of each apple. With a small knife, and working from the top of each apple, carefully carve out a large "bowl," including the core, about 2 inches in diameter. Rub the cut part with lemon and put the apples into a 9-inch square baking dish. Dice the carved-out parts of the apples, without the seeds, and set aside. Melt the butter in a small saucepan, and then whisk in 4 tablespoons of the muscovado sugar, the cinnamon and pepper and cook until smooth. Brush the inside of the apples with the butter mixture. Pour the apple cider into the bottom of the baking dish. Cover the dish with foil and bake until the apples are tender, about 30 minutes. Remove the foil and bake for 5 minutes longer. 1 lemon, cut in half
4 large red apples
3/4 cup honey
1 teaspoon cinnamon
4 teaspoons butter
1 cup oatmeal
2 tablespoons light brown sugar
whipped cream, optional

Steps:

  • Preheat oven to 375°.
  • Squeeze juice from lemon halves into a large bowl with 2 cups cold water.
  • Peel top third of each apple.
  • With a small knife and working from the top of each apple, carefully carve out a large"bowl," including the core, about 2 inches in diameter, leaving the bottom of apple intact.
  • Reserve all cut-away pieces.
  • Place carved apples in lemon water.
  • Chop cut-away apple pieces into small chunks, removing any core or seeds.
  • Toss with 3 tablespoons honey and cinnamon; set aside.
  • Combine remaining 9 tablespoons honey with 1/2 cup hot water and stir until well blended.
  • Stand apples, cut side up, in a 9" x 9" shallow baking dish.
  • Place 1 teaspoon butter in bowl of each apple and pour honey and water mixture on top.
