BAKED APPLES WITH MINCEMEAT, CHERRIES, AND WALNUTS



Baked Apples with Mincemeat, Cherries, and Walnuts image

You'll find mincemeat in the canned fruit section of some supermarkets. Serve with ice cream or whipped cream.

Number Of Ingredients 8

1 25.4-ounce bottle sparkling apple cider
1/4 cup red currant jelly
2 tablespoons (1/4 stick) unsalted butter
4 large Fuji apples (about 9 ounces each)
3/4 cup purchased mincemeat with rum and brandy
1/4 cup chopped walnuts
1/4 cup dried tart cherries
1 tablespoon chopped crystallized ginger

Steps:

  • Preheat oven to 400°F. Boil first 3 ingredients in large skillet until reduced to 1 1/4 cups, about 12 minutes.
  • Meanwhile, cut cone-shaped piece from stem end of each apple, 2 inches wide at top and 1 inch deep. Using melon baller, core, leaving bottom intact. Turn apple on its side. Starting halfway down, make 1/4-inch-deep slit all around. Mix mincemeat, walnuts, cherries, and crystallized ginger in small bowl; spoon into apples, mounding in center.
  • Arrange apples in 11x7x2-inch baking dish. Spoon cider mixture over and around. Bake until apples are tender, about 45 minutes. Serve in shallow bowls.

An easy and very tasty mincemeat pie with an apple base. My stepdad asks for me to make him this pie every Friday!

4 apples - peeled, cored and chopped
2 tablespoons butter
2 teaspoons lemon juice
½ cup white sugar
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 ½ teaspoons vanilla extract
2 cups prepared mincemeat (such as None Such®)
1 cup chopped walnuts
1 package of refrigerated pastry for double-crust pie (such as Pillsbury®
1 egg yolk
1 tablespoon water

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place apples, butter, and lemon juice into a saucepan over medium heat, and cook, stirring often, until the apples are tender, 8 to 10 minutes. Stir in sugar, cinnamon, nutmeg, and vanilla extract. Mix in the mincemeat and walnuts until thoroughly combined, and set the pie filling aside.
  • Fit a pie crust into a 9-inch pie dish; pour the filling into the crust. With a brush dipped in water, moisten the edge of the bottom crust. Top the pie with the second crust, and crimp the two crusts together with a fork to seal. Cut 4 slits into the top crust for steam vents. In a small bowl, whisk the egg yolk with water, and brush the yolk mixture over the top crust.
  • Bake in the preheated oven for 15 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Remove the pie from the oven, and cover the crust edges with strips of aluminum foil to prevent over baking. Return the pie to the oven, and bake until the crust is golden brown and the filling is bubbling, 30 to 35 more minutes.

This is another twist on baked apples. I like to serve it with vanilla ice cream. The spices make this very flavorful.

6 apples, peeled, cored and sliced
1/2 cup white sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup raisins
1/2 cup walnuts, chopped
1/2 cup whole milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, or coat with non-stick cooking spray.
  • Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves. Stir spice mixture into apples until evenly distributed. Fold in raisins and walnuts. Spoon into prepared dish. Pour milk evenly over apple mixture.
  • Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly. Allow to cool slightly before serving.

200 g mincemeat
1 1/2 teaspoons ground cinnamon
1 lemon, zest of
50 g walnuts (finely chopped)
75 ml port wine (splash of)
8 apples
1 egg, large
75 ml milk
500 g puff pastry
4 tablespoons demerara sugar
200 ml double cream, to serve (jersey cream)

Steps:

  • preheat oven to 190 or gas mark 5, tip mincemeat into bowl add big pinch of the cinnamon, lemon zest, walnuts and port mix well.
  • core apples with corer and stuff the hollow holes wirh the mincemeat mix.
  • beat the egg and milk together. Lay pastry on a floured surface and roll out to thickness of 50p about 3 mm? (half thickness of pound coin) im rubbish with these kind of measurements.
  • cut into eight even sized squares and lightly brush each with egg and millk wash. scatter half of demmerara sugar evenly across squares and then dust with a couple of pinches of cinnamon.
  • place apple in centre of square of patry and bring pastry up around the apple pressing together so the apple is encased - do this with rest of apples.
  • hold the apples with the pastry sealed on the top of the apple, facing upwards else your apple will slide off.
  • transfer apples to baking tray lined with greaseproof, patry seal DOWN on the greasproof brush each with a little more egg and milk wash and scatter over last of sugar and remaining cinnamon.
  • bake in hot oven fo about 40 mins , the patry should be golden and crispyand apples cooked through servce with the jersey cream, leftovers can be eaten cold the next day. sounds goody yum tums.
