CINNAMON SWEET POTATO APPLE BAKE

Steps:
- Preheat oven to 375℉.
- In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.
- Mix until apples and sweet potatoes are evenly coated.
- Cover with foil and bake in the oven for 40 minutes.
- After 40 minutes, remove foil, add optional pecans, stir and bake for an additional 10-15 minutes or until sweet potatoes are cooked through to your liking.
- Remove from oven, toss or drizzle with 1 Tbsp. melted ghee or butter and dash with cinnamon and a little sea salt.
- Optional - Drizzle with a little maple syrup and top with additional chopped pecans.

- Preheat the oven to 375℉ degrees. Grease a 8×8 baking dish with oil.
- In a medium bowl, combine oats, flax meal, cinnamon, baking powder, and salt. Mix to combine.
- Add eggs, milk, vanilla, sweet potato, and maple syrup/honey to bowl. Stir to combine.
- Stir in apples.
- Spread into the prepared baking dish and top with nuts, if using. Bake for 30-35 minutes. Oatmeal is done baking when top is golden.
- Enjoy warm topped with yogurt, a splash of milk, sliced bananas, an extra drizzle of maple syrup, whipped cream or simply on its own. Let cool completely and store in fridge for up to 4 days.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking pan.
- Mix rolled oats, brown sugar, baking powder, salt, cinnamon, and nutmeg together in a mixing bowl until ingredients are evenly distributed.
- Mix mashed sweet potatoes, milk, eggs, and vegetable oil together in a separate bowl until well blended. Pour sweet potato mixture into oats mixture and mix well. Spread mixture evenly into prepared baking dish.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.

ROASTED SWEET POTATOES AND APPLES

- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- Add enough water to cover the potatoes.
- Bring to a boil; cover and cook until potatoes are'fork' tender.
