BAKED APPLE DOUGHNUTS
These easy and delicious baked apple doughnuts are tender, sweet, and studded with pieces of tart apple. The trick is to coat the dough in lots of cinnamon sugar, and then bake them so they are still soft on the inside and have a wonderful sugar crust on the outside. Enjoy with coffee and a crossword!

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 12-cavity mini doughnut pans.
- Combine flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large bowl; mix together with a fork until combined. Add shortening and mix with the fork until broken up into small clumps.
- Mix together apples, milk, and eggs in a separate bowl. Add to flour mixture and stir just until blended. Spoon batter into the prepared doughnut pans.
- Bake doughnuts in the preheated oven until slightly browned on the bottoms, about 10 minutes. Remove from pan and transfer to a wire rack to cool completely.
- While doughnuts are cooling, place melted butter for topping in a shallow bowl. Mix together 1 cup sugar and 2 teaspoons cinnamon in another shallow bowl. Dip cooled doughnuts in butter and then in sugar mixture to coat.

CINNAMON APPLE BAKED DONUTS
These Cinnamon Apple Baked Donuts not only look cute for fall, but they're bursting with all the season's goodness. Apple Baked Donuts are full of cinnamon apple flavor and a tenderness that melts in your mouth.

- Preheat oven to 400F and set rack on middle or lower middle position. Grease mini donut pans and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg.
- In another bowl, whisk together milk, eggs, 2 TB melted butter, vanilla extract, and grated apple (I use the largest holes of box grater; then squeeze out as much juice as you can. Save juice for drinking - yum.)
- Use rubber spatula to fold wet ingredients with dry ingredients, gently folding just until combined; do not over-mix or it won't be as tender. Spoon or pipe batter into greased mini donut pans until batter is level with the top of pan. Use damp fingers to gently smooth out the tops.
- Bake about 7 minutes or until lightly golden. Cool in pan slightly, just until they are able to be easily removed. Set donuts on wire rack while you make the cinnamon-sugar coating.
- Whisk together the sugar with desired amount of cinnamon in a small bowl (this can be done days ahead of time.) Melt butter in another small bowl. When ready to eat, dip donuts in melted butter and roll generously in cinnamon sugar. Enjoy immediately.

- Preheat oven to 350 degrees F.
- In a mixing bowl, combine flour, baking powder, salt, nutmeg and sugar.
- Cut in shortening.
- Mix in egg, milk and apples.
- Fill greased muffing pans or doughnut baking pan 2/3 full with batter.
- Bake for 20-25 minutes.
- While they are still warm, roll in 1/2 cup melted butter and then roll in cinnamon-sugar (1 teaspoon cinnamon and 1/3 cup sugar).

I wanted a simple baked donut recipe, and created this recipe from a couple of other recipes. My wife found Petit Donut Baking pans (they are about the size of the Hostess Mini-donuts). I bring powdered sugar in a shaker for those that want extra sweetness, however I don't taste a difference.

- preheat oven to 350 degrees.
- place dry ingredients thru cinnamon in a food processor in order and process until everything is mixed into a fine powder.
- start with brown sugar thru vanilla extract, place in a large bowl and completely mix to a smooth texture.
- add dry to wet and mix until completely moistened, do not over mix.
- spray donut pan with nonstick cooking spray, place @ 1 teaspoon of dough into donut pan. try to keep no more than 2/3 full.
- bake for 12 minutes (I do one pan at a time) cool on a wire rack.

BAKED NUTMEG & CINNAMON DONUTS

- Sift flour, nutmeg and seas salt together in a large bowl, or in the bowl of an electric mixer.
- Place ½ cup of the milk in another bowl and stir in the yeast. Set aside.
- Stir in the butter and sugar into the remaining cup of warm milk and add it to the yeast mixture.
- Whisk in the eggs using a fork and add the wet mixture to the dry ingredients.
- Mix until the flour has taken up the yeast mixture.
- If your dough is too dry add a little bit of milk at a time. If your dough is too sticky, then add a little bit of flour, until the dough becomes smooth enough to handle without sticking too much to your hands.
- Turn dough out onto a lightly floured surface and knead for two minutes.
- Shape into a ball and place into a lightly oiled or buttered bowl. Cover the bowl with plastic wrap and allow the dough to rise in a warm area away from drafts.
- Allow an hour or so for the dough to double I size, depending on the temperature.
- Prepare 5 baking trays with parchment paper.
- When the dough has risen, remove the dough from the bowl and punch down. Roll it out on a lightly floured surface to about ½-inch thickness.
- Using your cutter cut out donuts. Cut the outer circle first, then transfer to lined baking trays and then cut out the donut holes (smaller circle)**.
- Cover trays with a clean cloth and allow to rise for another 45 minutes.
- Preheat your oven to 180ºC.
- Bake the donuts for about 8 minutes; do not allow them to get brown.
- While donuts are baking, set up your butter and combine sugar and cinnamon in another bowl.
- Remove donuts from oven and allow to cool for 3 minutes.
- Dip each donut into the melted butter and give it a quick toss in the cinnamon sugar.
- *Make sure not to over heat the milk, the temperature should be just tepid so as not to kill the yeast.
- **Ensure that the holes are at least 2cm in diameter as that the holes will close more after rising and baking.

- Preheat oven to 325 degrees F. Lightly grease two 6-count donut pans and set aside.
- In a small saucepan over high heat, bring cider to a boil. Reduce heat to medium-low and simmer until reduced to 1/4 cup, about 15 minutes.
- In a large bowl, whisk together the vegetable oil, applesauce, sugar, eggs and vanilla. Add the reduced cider and stir to combine.
- In a medium bowl, whisk together flour, cinnamon, baking powder and salt. Add dry ingredients to the wet mixture and stir until just incorporated.
- Transfer batter to a disposable piping bag. Pipe batter into donut pans, filling each well nearly to the rim. Bake until a toothpick inserted into a donut comes out clean, 12-14 minutes. Allow doughnuts to cool in pans for 10 minutes, then remove to a wire cooling rack and allow to cool completely.
- Meanwhile, in a large bowl whisk together powdered sugar and apple cider. Tint to desired shade of green using gel paste food coloring (glaze should be the consistency of glue; thin with additional cider if necessary). Carefully dip the top of each doughnut into the glaze and decorate as desired with sprinkles, disco dust, a candy stem and candy leaves.
