3 tablespoons superfine sugar
1/2-1 ounce grenadine
6 ounces fresh orange juice
6 ounces pineapple juice, canned OK
4 ounces sparkling apple cider
4 ounces dark rum
4 ounces light rum
orange slice (to garnish)
cherries (to garnish)

Steps:

  • Combine all ingredients except garnishes in a large pitcher and stir well.
  • Fill 4 tumblers with ice and divide the punch among them.
  • Garnish each drink with an orange slice & a cherry.

I found this recipe on the Totally Barbados website when looking for a rum cocktail that doesn't require any tropical fruit (only because I didn't have any on hand at the time). So I gave this a try, and it's quite good. I made it with passion fruit juice instead of water. The original source explained that the word "punch" comes from the Indian word "paunch", which means five, and the five refers to the five ingredients of sour, sweet, strong, weak and spice. And this cocktail follows the standard of including one measure of sour, two of sweet, three of strong, and four of weak with a dash of bitters and sprinkle of spice.

1/2 ounce lime juice, fresh squeezed is best
1 ounce sugar syrup (a mix of sugar and water cooked over low heat until sugar dissolves) or 1 ounce simple syrup (a mix of sugar and water cooked over low heat until sugar dissolves)
1 1/2 ounces dark caribbean rum
2 ounces water or 2 ounces passion fruit juice
1 dash Angostura bitters
1 pinch grated nutmeg (freshly grated is best)
2 -3 ice cubes

Steps:

  • Place ice cubes in tall glass. Add lime juice and sugar syrup and stir.
  • Add rum and water (or passionfruit juice), and stir.
  • Add bitters and nutmeg on top, and serve immediately.

Nowadays, rum is produced in all countries growing sugar cane between the tropic of Cancer and the tropic of Capricorn. Posted for ZWT5, taken from "Dine Around The World". Preparation time does not include chilling time.

1 orange
1 mango
1 banana
100 g papayas
1 liter pineapple juice
1/2 liter rum
1/4 liter molasses
4 limes
2 vanilla pod

Steps:

  • Peel orange, mango, banana and papaya, remove seeds, and cut into very small dice.
  • Mix pineapple juice, rum, molasses, and the juice from the limes, and add vanilla pods.
  • Add diced fruit.
  • Place drink in fridge for several hours.
  • Do not forget to remove vanilla pods before serving.
  • Serve ice cold in long glasses, and enjoy!
