Here's a one-of-a-kind pasta salad that combines tender chicken, sweet apricots and crunchy vegetables. Plus, the lemony dressing can't be beat. -Susan Voigt, Plymouth, Minnesota

1 package (8 ounces) spiral pasta
1 package (6 ounces) dried apricots, thinly sliced
3 cups coarsely chopped fresh broccoli
2-1/2 cups diced cooked chicken
1/2 cup chopped green onions
1/2 cup chopped celery
1 cup sour cream
3/4 cup mayonnaise
1 tablespoon lemon juice
2 teaspoons grated lemon zest
2 teaspoons Dijon mustard
1-1/2 teaspoons salt
3/4 teaspoon dried savory
1/2 teaspoon pepper
3/4 cup sliced almonds, toasted

Steps:

  • Cook pasta according to package directions, adding apricots during the last 4 minutes. Drain and rinse with cold water; place in a large bowl. Add broccoli, chicken, onions and celery. , In a small bowl, combine the next eight ingredients. Pour over salad and toss to coat. Cover and chill until serving; fold in almonds.

Grilled Chicken Salad with Apricot Glaze, Homemade Mustard Vinaigrette and Grape Salad image

1/4 cup chardonnay vinegar
1 tablespoon Dijon mustard
1 tablespoon whole grain mustard
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil, plus more if needed
3 Fresno chiles
Canola oil
Salt and freshly ground black pepper
2 cups green seedless grapes, roughly chopped
2 cups red seedless grapes, roughly chopped
2 to 3 tablespoons chardonnay vinegar
2 to 3 tablespoons extra-virgin olive oil
3/4 cup apricot jam
3 tablespoons chardonnay vinegar
4 (6-ounce) boneless, skinless chicken breasts, pounded thin
Canola oil
Salt and freshly ground black pepper
1/4 cup roughly chopped fresh thyme
1 bunch watercress, for serving
1/2 cup sliced skin-on almonds, lightly toasted, for serving

Steps:

  • For the vinaigrette: Whisk the vinegar, the mustards and salt and pepper, to taste, in a bowl. Slowly whisk in about the olive oil and until emulsified. Taste; whisk in a few more tablespoons olive oil, if desired.
  • For the grape salad: Prepare the grill for direct grilling.
  • Brush the chiles with oil and season with salt and pepper. Grill until charred on all sides. Remove to a bowl, cover and let steam for 15 minutes. Remove the skins and coarsely chop. Transfer to a bowl and add the grapes, chardonnay vinegar and olive oil. Season with salt and pepper.
  • For the chicken: Whisk together the apricot jam and vinegar. Season with salt and 1/4 teaspoon black pepper.
  • Brush the chicken on both sides with oil and sprinkle with salt and pepper. Grill until the first side is golden brown, about 2 1/2 minutes. Turn, brush with the glaze and sprinkle on the thyme. Cook until just cooked through, another 2 to 3 minutes. Remove to a serving platter.
  • To serve, top with the grape salad, then the watercress and finally the almonds. Drizzle with the vinaigrette.

Chicken With Apricots image

Chicken with dried apricots is hardly a new idea, but I had issues with its most common interpretations. For one thing, they were almost always cloying; the routine addition of cinnamon and cloves does nothing to offset the apricots' sweetness and makes the dish taste more like dessert than dinner. For another, they were usually stewed rather than braised, turning the chicken skin sodden. I brown the chicken in a nonstick skillet with no fat, and that works well. A tablespoon or two of butter, stirred in at the end, will make the sauce richer. Or you can render some bacon, remove it, and brown the chicken in the bacon fat, then crumble the bacon and stir it in at the end of cooking. Finally, any dried fruit can be used, or a combination; with the short cooking time, even prunes will remain intact. But be aware that fruit dried with sulfur (the common method) becomes tender much faster than fruit dried organically, which needs a couple of hours of soaking before cooking.

1 cup dried apricots
1/4 cup red wine vinegar
1/2 cup red wine
1 chicken, cut into serving pieces
1 medium onion, chopped
Salt and freshly ground black pepper

Steps:

  • Combine apricots in a bowl with vinegar, wine and 1/4 cup water. Let soak while you brown the chicken.
  • Turn the heat to medium high under a 12-inch nonstick skillet, and add chicken pieces, skin side down. Cook, rotating but not turning pieces so they brown evenly. When they are nicely browned - take your time - turn them so they are skin side up. Make a little space to add the onion, and cook, stirring the onion occasionally until it has softened a bit, a minute or two.
  • Add apricot mixture and bring to a boil; cook for a minute, then turn heat to low and cover. Cook until chicken is done, 15 to 20 minutes. Uncover, raise heat and season chicken well with salt and pepper. Boil away any excess liquid; sauce should not be too watery. Serve with white rice or any other cooked grain, or bread.

1 (16 ounce) can apricots in light syrup, sliced (reserve 2 Tablespoons syrup)

1 cup broccoli sprouts (or sprouts of your choice)

1 teaspoon cumin
1 teaspoon soy sauce
3 tablespoons lemon juice

1/4 cup apricot preserves or 1/4 cup peach preserves
1 tablespoon lemon juice

1/2 cup red grapes, halved
1/2 cup slivered almonds, toasted
2 tablespoons chopped fresh tarragon, chopped

Steps:

  • Mix mayo, preserves, lemon juice and cayenne in a small bowl.

Coarse salt and freshly ground black pepper
1/3 cup 2 percent Greek yogurt
1 teaspoon Dijon mustard
1 tablespoon minced chives
2 tablespoon dried apricots
2 tablespoons chopped almonds, toasted
4 slices seeded wheat bread, toasted
4 leaves lettuce

Steps:

  • Make the chicken salad: Fill a medium saucepan with water and bring to a boil. Meanwhile, season chicken with salt and pepper. When water boils, reduce heat, add chicken, and simmer until cooked through, 8 to 10 minutes. Remove and let cool. Cut into 1/2-inch pieces. In a bowl, combine yogurt, mustard, chives, apricots, and almonds. Stir in chicken and season with salt and pepper.
  • Divide the lettuce and chicken mixture between two slices toast. Top each with remaining slices.

1 1/2 cups instant couscous
1/4 teaspoon cinnamon
1/4 teaspoon ground cumin
1/2 teaspoon kosher salt, to taste
1/4 teaspoon pepper, to taste
1 cup fresh parsley, chopped,plus
parsley sprig, for garnish
1 cup mint leaf, chopped
6 tablespoons olive oil
4 chicken breasts, cooked
3 fresh apricots, pitted and cut into bite-size pieces
1 shallot, sliced into rings
1/2 cup unsalted pistachio nuts, shelled
2 tablespoons balsamic vinegar

Steps:

  • Place the couscous in a large salad bowl.
  • In a medium saucepan bring 1 1/2 cups water to a boil and stir in the cinnamon, cumin, 1/2 teaspoon salt and pepper.
  • Pour mixture over the couscous. Cover and let stand for 5 minutes or until couscous is soft. Uncover and fluff with fork. Stir in parsley, mint and 2 tablespoons oil. Set aside.
  • Cut chicken into bite-size pieces and place in a seperate bowl. Add the apricots, shallot and pistachios. Toss.
  • Drizzle with the vinegar and remainining oil. Season with salt and pepper, if desired. Toss.
  • Add chicken mixture to couscous in salad bowl and toss.
  • Garnish with parsley sprigs if desired.
