ZESTY LIME MACARONI SALAD
Come on over to the zesty side! This Southwest-style macaroni salad is made with fresh lime juice, lime vinaigrette and taco seasonings.

Steps:
- Cook macaroni as directed on package, omitting salt. Rinse with cold water; drain well. Place in large bowl.
- Add next 4 ingredients; mix lightly.
- Mix dressing, seasoning mix, lime juice and pepper sauce. Add to salad; toss to coat. Add cheese and cilantro; mix lightly.

Steps:
- Mix sugar, vinegar and flour. Cook to boiling and cook and stir until thick. Cool completely.
- Add butter, mustard and mayonnaise to above mixture.
- Add to macaroni (be sure macaroni is completely cooled first!).
- Stir in chopped eggs, celery, carrots, and onions.

RAW VEGAN ZESTY LIME CORN SALAD
This raw vegan corn salad is super easy and absolutely scrumptious. I have to admit, I am not a huge fan of corn. Well the vegetable variety anyway. I don't cook with it very often as I can think of so many other more nutritious vegetables I prefer to work with. But there is something about the light zestiness of the lime juice and the heat of the chili that puts a zing in the step of even the most corn-phobic diner and bewitches the palate, creating culinary music of a very simple and universal nature. And the best thing about this salad? It doesn't taste "corny"! I have added the quantities of chilli, garlic and lime juice that I like. I used frozen corn, but fresh is always best. The best part is, that either way, you don't have to cook the corn. Just soak it in some hot water for a few minutes and then drain. Throw it together and season to taste. YUM!

LIGHT AND ZESTY PASTA SALAD
This is from Willi Fitzpatrick's Everyday Gourmet. It has less oil and no mayo but very refreshing and a pleasant change from heavier pasta type salads. A great side dish for barbecues.

Steps:
- Cook pasta until tender, drain and rinse in hot and then cold water.
- Meanwhile, mix the orange juice, mustard, lime juice, olive oil, sugar and Worcestershire.
- Toss pasta, dressing and vegetables together.
- Top with feta.
- Serve at close to room temperature.
- (Can be made ahead, covered and refrigerated until 1 hours before serving).
- P.S. We actually prefer it cold.

ZESTY SOUTHWESTERN PASTA SALAD
This goes over well at potlucks - when there's a choice of more than one pasta salad, this one usually goes first. Oddly enough, the leftovers make good soup, too! I just add the leftovers to some vegetable broth and canned tomatoes, and season it with more of the same spices that were in the recipe. This recipe originally came from allrecipes.com, but I have tweaked it in a way that suits me better. As always I have cut back on the oil and lime juice, so add more back in if it suits you. I love the amount of chili powder and cumin in this, but it may be a bit much for some so use less if you don't like those flavors as much as I do.

- Prepare pasta according to package instructions.
- When making pasta salad, I like to cook my pasta a minute or two less than recommended so it stays firmer in the dressing, and holds up better against breaking apart when tossing.
- Drain and rinse under cold water.
- In a large bowl whisk together oil, lime juice, chili powder, cumin, salt and garlic.
- Gently stir in pasta and set aside.
- Gently stir in corn, beans, green pepper, red pepper, onion, tomatoes and 1/2 of the cilantro leaves.
- Garnish with the remaining cilantro.
- Cover and chill at least 2 hours.
