Ingredients

32 ounces elbow macaroni
3 eggs
3 cups milk
4 cups shredded Cheddar cheese
¼ teaspoon salt

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.
Bake in a preheated over for an hour or until a knife inserted comes out clean.

Garnish:
8 oz/250g macaroni(preferably long tubes as opposed to typical American macaroni)
1 tablespoon butter or margarine
12 oz/375g sharp cheddar cheese, grated
1 egg
1 cup 8floz/240ml milk
2 teaspoons onion powder
1 teaspoon hot English mustard
1 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon red pepper sauce or cayenne pepper (optional)
2 tablespoons fine breadcrumbs
2 teaspoons butter
2 tablespoons grated cheddar cheese

Steps:

Bring water to the boil and add the broken up macaroni or macaroni elbows and salt. Boil it uncovered until it is just tender but not overcooked (about 8 minutes). Preheat a moderately hot oven 350F, 180C or Gas Mark 4. Drain the macaroni thoroughly, put it back into the same hot saucepan it was cooked in and mix in the butter. Grate the cheese and mix it in with the macaroni a bit at a time, while it is still warm. Whisk the egg until fluffy and add the milk, onion powder, white pepper, salt, pepper sauce and mustard. Pour in with the macaroni and mix. Place in a greased oven proof casserole dish. Top with a little butter, some grated cheese and fine breadcrumbs. Bake in the centre of the oven for about 30-45 minutes depending on the depth of the dish.

1 lb. rice penne or fusilli noodles
1 green pepper, chopped
1 Tbsp. paprika
1 tsp. white pepper
2 Tbsp. mayonnaise
2 Tbsp. ketchup
1 onion, chopped
1 Tbsp. mustard
fresh parsley, chopped
3 Tbsp. Bajan seasoning (see below)
2 pkgs. shredded cheese, TexMex/Southwestern and 3 Cheese
Caribbean hot sauce, to taste
Topping:
grated old white cheddar
bread crumbs
Parmesan cheese
Bajan Seasoning (Green Sauce):
white pepper
garlic
onion
clove
thyme
green onions
parsley
hot pepper
paprika
Process and let sit. Can be purchased at Mugena - 911A Richmond Road as "green sauce".

Steps:

Preheat oven to 350* Cook and drain noodles. Transfer to a large bowl and add all ingredients. Mix well and place in large Pyrex dish. Add old cheese, bread crumbs and Parmesan. Cook in 350* oven for 30 to 45 minutes or until top looks slightly brown.
