2 cups orange juice
1 yellow onion, sliced
½ cup freshly squeezed lime juice
½ cup extra-virgin olive oil
10 cloves garlic, smashed
2 tablespoons dark brown sugar
1 ½ tablespoons kosher salt
1 tablespoon dried oregano
1 tablespoon ground cumin
2 teaspoons freshly grated lime zest
2 teaspoons freshly ground black pepper
2 dried bay leaves
3 ½ pounds bone-in pork shoulder roast

Steps:

  • Mix orange juice, onion, lime juice, olive oil, garlic, brown sugar, salt, oregano, cumin, lime zest, pepper, and bay leaves in a heavy Dutch oven. Add pork shoulder; turn to coat. Cover and marinate in the refrigerator, 4 hours to overnight.
  • Preheat oven to 325 degrees F (165 degrees C). Remove Dutch oven from the refrigerator and cover tightly with aluminum foil.
  • Bake pork in the preheated oven until heated through, about 1 1/2 hours. Flip pork carefully. Replace foil and bake for 1 hour more. Remove aluminum foil. Continue baking uncovered, turning once halfway through, until pork falls apart and marinade is reduced, 1 1/2 to 2 hours.
  • Remove pork from oven and let rest for 20 minutes. Shred pork in the Dutch oven using 2 forks; mix shredded pork with the reduced marinade. Discard bay leaves.

Steps:

2 tablespoons chopped fresh coriander leaves

Steps:

  • In a shallow baking dish whisk together orange juice, black pepper, chili powder, paprika, cayenne, and salt to taste. Add pork to marinade, turning to coat, and marinate at room temperature 20 minutes.
  • In a non-stick skillet cook pork in marinade, covered, over moderately high heat 6 minutes on each side, or until just cooked through. Sprinkle pork with coriander.

1 tablespoon chopped fresh sage
2 tablespoons soy sauce
1 clove garlic, minced
2 tablespoons orange liqueur (Grand Marnier) (optional)

fresh ground black pepper

Steps:

  • In a small bowl, combine marmalade, sage, soy, garlic, Grand Marnier, salt and pepper.
  • Pour over chops, and marinate for 30 minutes (I put the chops and marinade in ziplock bags).
  • Grill the chops, reserving the marinade.
  • While the chops are cooking, add the marinade to a small saucepan, bring to a boil, then remove from heat.
  • To serve, spoon glaze over the pork chops and garnish with sage leaves.

3 medium garlic cloves, crushed or 1 tablespoon chopped garlic, in a jar
1 1/2 teaspoons salt
1/3 cup packed brown sugar
3 tablespoons coarse grain mustard (stone ground mustard that looks seedy)
1/4 cup apple cider vinegar
1 limes, juice of or 1/4 cup bottled lime juice
1/2 large lemons, juice of or 1/4 cup bottled lemon juice
6 tablespoons olive oil
black pepper

Steps:

  • One recipe for one bag of chicken tenderloins. I haven't had good luck with halving the recipe for smaller portions of chicken. If I'm preparing more chicken, I double the recipe - even if it isn't much more than one bag. Also, I get the best results when the chicken marinates overnight.
  • Delicious hot or cold!

1/2 cup orange juice
6 garlic cloves, minced
2 tablespoons canola oil
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon dried tarragon
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (6 ounces each)

Steps:

  • Combine the first eight ingredients in a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for at least 4 hours., Drain and discard marinade. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°.
