This is one of Rachael Ray's favorite takeout dishes--Chicken with Green Beans in Black Bean Sauce. Rachael says making takeout-style food at home allows you to control the quality and amount of ingredients.

2 1/4 cups chicken stock
1 1/2 cups organic white basmati
1 1/2 pounds boneless, skinless chicken breasts (about 4)
3 tablespoons light soy sauce
2 tablespoons Shaoxing or sherry
About 1 1/2 tablespoons cornstarch
2 teaspoons ground Sichuan pepper or coarse ground black pepper
Salt
1 bag (12 ounces) trimmed green beans, halved across on bias
About 1/4 cup Shaoxing or sherry
About 1 1/2 tablespoons light soy sauce
About 1 1/2 tablespoons dark soy sauce
1/3 cup black bean sauce or black bean garlic sauce
About 1 1/2 tablespoons cornstarch
4 tablespoons safflower or peanut oil or other high-temp cooking oil
2 large shallots, chopped or 1 leek, thinly sliced
2 inches ginger root, peeled with tip of spoon and cut into matchsticks or chopped
4 large cloves garlic, peeled and thinly sliced or chopped
About 1/2 cup fermented black beans, optional
1 cup chicken brodo or bone broth
2 tablespoons toasted sesame oil
Toasted sesame seeds, about 1/4 cup, to garnish

Steps:

  • For the rice: Bring stock and rice to boil, reduce heat to low, cover and cook 18 minutes, shaking pot occasionally.
  • For the chicken and green beans: On a gel board, halve chicken breasts horizontally, then thinly slice.
  • In a medium glass mixing bowl, whisk up light soy, Shaoxing, cornstarch and peppercorn, add chicken and coat evenly.
  • Bring a few inches of water to boil in a deep skillet. Fill a large bowl with ice water. Place a strainer in sink.
  • Salt the water. Boil the green beans 3 to 4 minutes, drain and cold-shock in cold water, then drain again.
  • For the stir-fry sauce: In a second medium bowl, whisk up the Shaoxing or sherry, light and dark soy, black bean sauce and cornstarch.
  • For the stir-fry: Heat a large nonstick skillet over medium-high to high heat with about 2 tablespoons high-temperature cooking oil. Add chicken and brown (in 2 batches if pan is not large enough to brown without overcrowding), about 5 minutes. Transfer chicken to a platter and add 2 tablespoons more oil, 2 turns of the pan. Add green beans and toss a couple of minutes. Add shallots or leeks, ginger, garlic, fermented black beans if using and chicken brodo and toss 1 to 2 minutes. Add stir-fry sauce and toss. Reduce heat to simmer, add chicken back to pan and toss to combine.
  • Line shallow bowls or plates with rice and make a well for the chicken and beans. Drizzle with sesame oil and top with sesame seeds.

I love this Crock-Pot chicken recipe for two reasons: one, my family loves it and two, it is so easy to make! I got this recipe from my sister. She has two children of her own, and they love it too! It's also the best leftovers in the world -- if there are any!

4 -5 boneless chicken breasts, frozen
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

Steps:

  • Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
  • Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
  • Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
  • Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
  • All done and enjoy!

2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1/2 pound boneless skinless chicken breast
1 jar (8 ounces) chunky salsa
1 cup frozen corn
1 tablespoon dried parsley flakes
1 teaspoon ground cumin
1/4 teaspoon pepper
3 cups hot cooked rice
Optional: Lime wedges and fresh cilantro leaves

Steps:

  • In a 2- or 3-qt. slow cooker, combine the beans, broth, tomatoes, chicken, salsa, corn and seasonings. Cover and cook on low 3-4 hours or until a thermometer inserted in chicken reads 165°., Shred chicken with 2 forks and return to slow cooker; heat through. Serve over rice. If desired, serve with lime wedges and fresh cilantro. Freeze option: After shredding chicken, freeze cooled mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

4 pounds bone-in, skin on chicken pieces (legs, thigh, breast)
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
2 pounds small red potatoes (halved)
1 (16-oz) package baby carrots
1 onion (chopped)
3 cloves garlic (minced)
1 (14-oz) can low sodium chicken broth
1 cup light sour cream
3 tablespoons Dijon mustard
3 tablespoons honey
3 tablespoons flour
1 teaspoon thyme (dried)

Steps:

  • Gather the ingredients.
  • Sprinkle the chicken with salt and pepper.
  • Heat the olive oil in a large skillet over medium heat and brown the chicken, skin-side down, just until the skin is browned and lightly crispy. Set aside.
  • In a 4- to 5-quart slow cooker , add the potatoes, carrots, onion, and garlic to the inner pot. Top with the browned chicken.
  • Pour the chicken broth over top. Cover the crock pot and cook on low for 8 to 9 hours until chicken is thoroughly cooked to 165 F and the vegetables are tender.
  • In a small bowl, stir together the light sour cream, mustard, honey, flour, and thyme until well blended.
  • Stir the sour cream mixture into the sauce in the crock pot and turn the heat to high. Cook for 15 to 20 minutes, stirring occasionally until the sauce is thickened.

This recipe was created based on what I had in my kitchen and recipe #89204. When I use chicken, I like tomatillo verde or green, versus a red tomato salsa or sauce. I just like the green tomatoes much better with chicken. I had one can black beans and one can small red beans, so that's what I used. I had the two different jars of verde tomatillo sauce/salsa and it worked like a charm. I made the comment that I would use two of one kind the next time and hubby said, don't change that recipe! He LOVED it. We used flour and corn tortillas and made tacos with the meat. Hubby heated and poured it over Frito's. We used sour cream and shredded cheeses for toppings. My next batch will be the filling for enchiladas in corn and flour tortillas and mozzarella cheese topped w/green sauce and queso fresco. I used a 6 qt crock pot and it's perfect size for the amount of food. Freezes very well. If you want to make it more of a soup, add chicken broth before cooking til preferred consistency for soup. You may need to add more once the cream cheese is added. Would be great with tortilla chips or over brown rice.

8 boneless chicken thighs
2 (15 1/2 ounce) cans black beans, drained
2 (15 ounce) cans corn, drained
1 (10 1/2 ounce) jar green chili sauce (I used Herdez Mexican Cooking Sauce, Tomatillo Verde)
1 (15 ounce) jar salsa verde (I used Herdez Salsa Verde)
1.5 (8 ounce) packages reduced-fat cream cheese
sea salt
granulated garlic powder
cumin powder
cayenne pepper
fresh ground black pepper

Steps:

  • 1. Season chicken w/sea salt, and any/all of the spices listed above (or others of your own choosing) and layer in bottom of pot. If they don't all fit, just lay remaining on top. They'll be fine.
  • 2.I poured my salsa/sauce, corn and black beans in a large bowl, mixed together and then poured over the meat in the crock pot. (I added a bit more of the spices into this mix as well, because we like well flavored food).
  • 3. I cooked mine on high for about an hour and then on low for another 5-6 hours.
  • 4. Once done, take 2 forks and "pull" the thighs like you would a pork roast to shred the meat into bite size shreds.
  • 5. Put cream cheese on top of the food and cover. Just let it sit on top for about 30-45 minutes or until completely melted. Mix until all is combined well and serve as desired.
  • For serving: Corn or flour tortillas, corn chips, brown or long grain rice, pasta. Use as filling for Mexican lasagna or enchiladas or anything else your mind can dream up!

2 (15 ounce) cans corn, drained
2 (15 ounce) cans black beans, rinsed and drained
2 cups salsa
8 ounces neufchatel cheese
4 garlic cloves, minced
2 teaspoons cumin
salt and pepper, to taste

Steps:

  • Add all ingredients to crock pot, except Neufchatel cheese.
  • Cook on low for 8 hours or on high for 4 hours.
  • Stir in cheese cut into cubes, turn off heat. Let sit for 20-30 minutes.
  • Stir to blend in cheese.
  • Serve over rice, chips or on wraps.

  • Place chicken breasts in a slow cooker and cover with salsa add the red pepper flakes. Coat all the chicken pieces with the salsa. Toss to do so.
  • Cover and cook on high for 4 hours (or low for 7-8 hours), or until the chicken shreds easily with a fork. In the last 30 minutes of cooking, add the black beans and stir to mix. Adjust salt to preferece. Serve immediately over rice, tortillas, or tortilla chips. Dress with avocados, lime wedges, and sour cream if you'd like.
  • Refrigerate leftovers in an airtight container for up to 4 days. (Salsa chicken and black beans also freezes well.)
