These soft rolls are out of this world. The addition of oat makes them a little heartier than other dinner rolls. -Patricia Rutherford, Winchester, Illinois

Number Of Ingredients 7

2-1/3 cups water, divided
1 cup quick-cooking oats
2/3 cup packed brown sugar
3 tablespoons butter
1-1/2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
5 to 5-3/4 cups all-purpose flour

Steps:

  • In a large saucepan, bring 2 cups water to a boil. Stir in oats; reduce heat. Simmer, uncovered, for 1 minute. Stir in brown sugar, butter, salt and remaining water., Transfer to a large bowl; let stand until mixture reaches 110°-115°. Stir in yeast. Add 3 cups flour; beat well. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; shape into 24 rolls. Place on greased baking sheets. Cover and let rise until doubled, about 30 minutes., Bake at 350° for 20-25 minutes or until golden brown. Remove from pan and cool on wire racks.

5 3/4 to 6 3/4 cups Pillsbury BEST® All Purpose Flour
1/4 cup sugar
2 tsps. salt
2 pkgs. active dry yeast
1 cup water
1 cup milk
1/2 cup butter
1 large egg
Crisco® Original No-Stick Cooking Spray
Butter, melted

Steps:

  • COMBINE 2 cups flour, sugar, salt and yeast in large bowl; mix well. Heat water, milk and 1/2 cup butter in small saucepan until very warm (120 degrees to 130 degrees F). Add warm liquid and egg to flour mixture; blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in an additional 2 1/2 to 3 cups flour until dough pulls cleanly away from sides of bowl.
  • SPRAY large bowl with no-stick cooking spray. Knead in 1 1/4 to 1 3/4 cups flour on floured surface until dough is smooth and elastic, 8 to 10 minutes. Place dough in prepared bowl; cover loosely with greased plastic wrap and cloth towel. Let rise in warm place (80 degrees to 85 degrees F) until light and doubled in size, 45 to 60 minutes.
  • PUNCH down dough several times to remove all air bubbles. Divide dough in half. To make Pan Rolls, lightly spray two 13 x 9-inch pans with no-stick cooking spray. Divide each half of dough into 16 equal pieces. Shape each into a ball, pulling edges under to make a smooth top. Place balls, smooth side up, in prepared pans. Cover; let rise in warm place until light and doubled in size, 20 to 30 minutes.
  • HEAT oven to 400 degrees F. Uncover dough. Bake 16 to 20 minutes or until golden brown. Immediately remove rolls from pans; cool on wire racks for 15 minutes. Brush with melted butter. Serve warm or cool.
  • Tip: To make dough a day ahead, after first rise time, punch down dough, cover and refrigerate dough overnight. Shape dough as directed in recipe; let rise a second time until light and doubled in size, 25 to 35 minutes.

Beginning at center, make a loose swirl or coil with each rope; tuck end under. Place 2 to 3 inches apart on prepared cookie sheets. After rising, bake 12 to 15 minutes or until golden brown. Yield: 16 rolls
  • CROWN ROLLS: Lightly spray 12 muffin cups with no-stick cooking spray. Using half of dough, divide dough into 12 equal pieces. Shape each into a ball, pulling edges under to make a smooth top. Place 1 ball, smooth side up, in each prepared muffin cup. Using kitchen scissors dipped in flour, cut balls of dough into quarters almost to bottom. After rising, bake 14 to 18 minutes or until golden brown. Yield: 12 rolls
  • CRESCENT ROLLS: Lightly spray cookie sheets with no-stick cooking spray. Using half of dough, divide dough in half again; shape each half into a ball. On lightly floured surface, roll each ball into a 12 inch round. Spread each with 1 tablespoon softened butter. Cut each round into 12 wedges. Beginning at wide end of wedge, roll toward point. Place, point side down, 2 to 3 inches apart on prepared cookie sheets. Curve ends to form a crescent shape. After rising, bake 12 to 15 minutes or until golden brown. Yield: 24 rolls
  • CLOVERLEAF ROLLS: Lightly spray 12 muffin cups with no-stick cooking spray. Using half of dough, divide dough into 12 equal pieces; divide each into thirds. Shape each into a ball, pulling edges under to make a smooth top. Place 3 balls, smooth side up, in each prepared muffin cup. After rising, bake 14 to 18 minutes or until golden brown. 2 (1/4 ounce) packages active dry yeast
1/4 cup warm water
1/2 cup shortening
1/2 cup sugar
3 eggs (well beaten)
1 cup warm water
4 1/2 cups flour
2 teaspoons salt

Steps:

  • soften yeast in 1/4 cup warm water and set aside.
  • Place sortening, sugar, eggs, 1 cup warm water, salt, and 21/2 cups of flour in a large mixing bowl. Beat with an electric mixer until smooth.
  • Add softened yeast and blend well.
  • Add remaining flour and mix inches.
  • Cover and place in warm place until rise is doubled.
  • Punch down, cover and place in refrigerator overnight.
  • Three hours before serving, rool out dough and divide in half.
  • Roll out each each half into a rectangle about 1/2 inch thick.
  • Spread with soften butter and roll up like jelly roll. Cut into 1 inch slices.
  • Places slices into greased muffin tins, cut side down.
  • Cover and allow to rise for 3 hours before baking.
  • Bake in 400 degree oven for 15 minutes or until golden brown.

1 (1/4-ounce) package dry active yeast
1 cup warm water, about 110 degrees F
1/2 cup sugar
1 egg, beaten
2 teaspoons salt
1 cup milk, scalded but cooled to warm
4 ounces melted butter, plus 2 ounces
5 cups flour, plus more, as needed
6-cup, 3-inch muffin tin pan

Steps:

  • In a standing mixing bowl with dough hook, dissolve yeast in warm water. Let sit until lightly foamy, then stir in sugar and add egg, salt, warm milk, and 4 ounces of butter. Slowly add 5 cups flour, adding more as needed to make an elastic dough. Mix well, then roll out to floured surface and knead dough for about 5 minutes.
  • Place dough in buttered bowl, cover with towel, and set in a warm place to rise until double in bulk, about 1 hour.
  • Lightly oil the muffin pan. Punch down dough and form dough into 1-inch balls. Place 3 balls in each muffin tin. Fill muffin pan, cover with towel, and allow to rise an additional 1/2 hour.
  • Preheat oven to 425 degrees F.
  • Brush with remaining melted butter. Bake in preheated oven for 10 to 15 minutes, until golden brown.

You can have a delicious full flavor cinnamon roll just like the one you get at the mall. But... without all the fat and calories. This recipe is easy and oh so delish!

Number Of Ingredients 6

1 (8 ounce) package reduced-fat crescent rolls
2 tablespoons butter
4 tablespoons sugar
1 1/2 tablespoons cinnamon
4 tablespoons powdered sugar
1 1/2-2 teaspoons skim milk

Steps:

  • Preheat oven to 375 degrees; have a cookie sheet lined with parchment paper.
  • Keep the tube of crescent rolls in fridge until ready to use and you have all your ingredients ready to go.
  • In a small bowl combine the sugar and cinnamon. Set aside.
  • Melt the butter in microwave safe bowl and set aside.
  • Now, take the tube out of fridge and roll out on a cutting board. You want to flatten the dough out with your hands to make a rectangle. You don't need to use a rolling pin but you can use one if you want to make the same thickness throughout.
  • Spread the butter with a pastry brush over the entire dough. Save a little butter for when you have rolled up this up after the filling is inches.
  • Sprinkle the sugar/cinnamon mixture over the butter (a nice coating). Save a little for when it's rolled up.
  • Starting with the shorter end, roll the dough up into a log.
  • Brush the remaining butter over the outside of the log and sprinkle the remaining sugar mixture over the butter.
  • With a sharp knife cut the roll into 8 slices. To do this, start by cutting the roll in half then half again until you have 8 slices.
  • Place the slices on the baking sheet. You will probably still have extra cinnamon sugar mixture so sprinkle that over the cut slices.
  • Bake for about 10-12 minutes. Turn the pan around after 5 minutes and check after 10 minutes. They should look puffed, light brown and the bottoms will look light to medium brown as well. Remove from the oven and place on a cooling rack.
  • To make glaze: In a small bowl blend the powdered sugar with the milk and mix up until you have a glaze consistency. If you have a mini whisk this makes for easier mixing. You can use a spoon or small fork as well. When the rolls are slightly cooled, drizzle the glaze over each roll.
  • ENJOY these yummy treats!

2 packages yeast (Do not use the quick rising in this recipe)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 1/4 cups flour

Steps:

  • Combine water and yeast in lg bowl; let stand for 5 minutes.
  • With wooden spoon, stir in butter, sugar, eggs and salt.
  • Add flour, 1 cup at a time and beat in as much as you can.
  • (you will probably be able to use all the flour) Cover and refrigerate for at least 2 hours, or up to 3 days.
  • Grease a 13x9 baking pan.
  • Turn dough out onto floured surface.
  • Divide into 24 equal pieces.
  • Roll each piece into a smooth round ball.
  • Place in rows in prepared pan.
  • Cover and let rise for 1 hour; until doubled.
  • Heat oven to 375*.
  • Bake until golden brown, about 17 minutes.

2 eggs
1/3 cup sugar
1 1/2 teaspoons salt
6 tablespoons butter or 6 tablespoons margarine
1 cup unseasoned mashed potatoes, lightly packed*
2 1/2 teaspoons instant yeast
3/4 cup water (potato water, if possible)
4 1/4 cups unbleached all-purpose flour

Steps:

  • Method:In a medium-sized mixing bowl, combine all of the ingredients, and mix until the dough starts to leave the sides of the bowl. Transfer the dough to a lightly greased or floured surface, and knead it for 6 to 8 minutes, or until it's smooth and shiny.
  • Place the dough in a lightly greased bowl or rising bucket, turn to coat, cover the container with plastic wrap, and let the dough rise till it's doubled in bulk, about 90 minutes.
  • To make stand-alone rolls, divide the dough into 16 equal pieces. If you want to make soft-sided, pull-apart rolls, divide the dough into 15 pieces. This isn't as challenging as it sounds: first, divide the dough into three equal pieces (about 375g, 14 ounces, each). Pinch off one piece, about the size of a racquetball or handball (75g, 2 3/4 ounces), off each of the three pieces, setting the pinched-off pieces aside; then simply divide what's left of the three pieces into four pieces each. Presto! Fifteen balls of dough. Gently roll the dough balls under your cupped fingers till they're nice and round. Place the 16 dough balls onto a parchment-lined or lightly greased baking sheet or sheets, leaving about 2 inches between them. Or place the 15 dough balls into a lightly greased 9 x 13-inch pan, spacing them evenly in five rolls of three balls each.
