HONEY LEMON CHICKEN
Succulent chicken in a fresh and zesty sauce with a hint of sweetness.This honey lemon chicken is ready in 20 minutes.

Steps:
- Place the chicken breasts on a tray or board. Mix together the flour, salt, pepper and paprika. Coat both sides of the chicken with the flour mixture.
- Heat the oil and butter in a large frying pan over a medium-high heat, until the butter melts.
- Add the chicken to the pan and cook for 7-8 minutes, turning once, until both sides are golden brown.
- Add the garlic, stir for 30 seconds (don't let the garlic burn), then add the chicken stock, lemon juice, honey and lemon slices.
- Bring to the boil and simmer for 5 minutes, until the sauce is slightly reduced.
- Sprinkle with fresh parsley and serve with rice or pasta.

Steps:
- In a large bowl, combine the first 10 ingredients.
- Pour 2/3 cup marinade into a large resealable plastic bag; add the chicken, seal bag and turn to coat. Refrigerate for at least 4 hours or overnight.
- Cover and refrigerate the remaining marinade.
- Drain and discard marinade from chicken.
- Coat grill rack with cooking spray before starting the grill.
- Grill chicken, uncovered, over medium heat for 12-15 minutes or until juices run clear, turning once and basting occasionally with reserved marinade.

- In a large bowl, combine the first 10 ingredients. Pour 2/3 cup marinade into a large resealable plastic bag; add the chicken. CLAY POT HONEY-LEMON CHICKEN
Steps:
- Prepare a clay roaster by soaking in cold water for 15 minutes.
- Wash the chicken well inside and out under cool running water. Pat dry with paper towels. Rub chicken all over with 2 tablespoons of the lemon juice and season evenly on all sides with the salt and pepper. Place the reserved lemon shell inside the chicken cavity. Place the chicken inside the prepared clay roaster and brush with the melted butter. Cover the roaster and transfer to a cold oven. Set the oven temperature to 400 degrees F and cook for 45 minutes.
- Combine the remaining 1/4 cup of lemon juice, honey, and soy sauce in a small saucepan and cook over medium heat until heated through. In a small bowl, make a paste from the remaining 4 tablespoons of butter and the flour. Whisk the butter-flour mixture into the melted honey-lemon-butter mixture. Continue to cook until the sauce has thickened slightly. Remove the clay cooker from the oven and pour the honey-butter mixture all over the chicken, making sure to evenly cover the breast and any exposed areas. Cover the roaster and return the chicken to the oven for 45 minutes, or until it is cooked through and very tender. Transfer the chicken to a platter or carving board, cut into pieces and serve immediately. Transfer the sauce to a gravy boat for serving, or spoon some of the sauce over each piece of chicken.
CHICKEN IN HONEY-LEMON SAUCE
This is enough for 3-4 people, you can double this complete recipe, though you will have to bake it in a much larger baking dish. Serve this with cooked rice.

- Set oven to 400 degrees.
- Great a 13 x 9-inch baking pan.
- In a large heavy plastic bag combine the flour, salt, paprika, garlic powder and pepper.
- Place one or two pieces of chicken in the bag and toss to coat the chicken.
- Then dip the floured chicken in the 1/2-cup melted butter.
- Place in the baking dish skin side up.
- Repeat with the remaining chicken pieces.
- Bake uncovered for 30 minutes.
- Remove from oven and drain off any fat or pan drippings, then turn the chicken over.
- In a small bowl combine the honey, lemon juice and 1/4 cup melted butter, then pour over the chicken in the baking dish.
- Cover with foil and return to oven for another 25-30 minutes, or until the chicken is done, basting occasionally with the pan juices.
- Delicious!

LEMON & HONEY CHICKEN

- Preheat the oven to 190C/gas 5/fan 170. Arrange the chicken in a shallow ovenproof dish. Mix together the honey, lemon zest and juice, oil, salt and pepper, then pour over the chicken breasts and turn them around until well coated.
- Roast the chicken breasts for 40-45 minutes, turning them halfway through the cooking time, and basting occasionally, until they are golden brown and shiny and the marinade has almost evaporated. Leave to cool, then wrap in foil and chill until ready to eat. (The chicken may now be frozen for up to 1 month. Defrost before serving.)
- On the day, spread the lettuce over a large platter, tearing up any large leaves. Slice the chicken breasts, keeping them together, then arrange over the lettuce.

- Mix canola oil, lemon zest, lemon juice, Dijon mustard, honey, garlic, Worcestershire sauce, Italian herb seasoning, salt, and black pepper in a bowl; pour into a resealable plastic bag. - Preheat oven to 400˚F (200˚C).

- Preheat the oven to 200C/Gas 6/fan180C. Squeeze the juice from 2 lemons into a small pan and heat with the butter, honey, rosemary, garlic and salt and pepper, until the butter melts and it smells fragrant.
- Lay the chicken in a roasting tin - don't pile it up or it won't cook so well. Add the potatoes and drizzle with lemon butter to coat evenly. Cut the third lemon into 8 wedges and tuck them in. (Can be made up to 2 hours ahead up to this point.)
