BACON WRAPPED SCALLOPS
These bacon wrapped scallops are jumbo scallops coated in a sweet and savory glaze, then broiled to perfection. A simple yet elegant appetizer or main course option that is sure to get rave reviews!

Steps:
- Preheat the broiler. Coat a sheet pan with cooking spray.
- Wrap a slice of bacon around each scallop and secure with a toothpick. Arrange the scallops in a single layer on the baking pan.
- In a small bowl, mix together the maple syrup, soy sauce, garlic powder, salt and pepper. Brush half the mixture over the top of each of the scallops.
- Broil for 10-15 minutes, or until bacon is crisp and scallops are cooked through. Brush the remaining sauce over the scallops halfway through the cook time.
- Sprinkle with parsley, then serve.

- In an ungreased 1-1/2-qt. microwave-safe dish, combine rice and broth. Cover and microwave on high for 7-8 minutes or until liquid is absorbed and rice is tender. Let stand for 5 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 1 tablespoon drippings., Saute the onion, zucchini and garlic in drippings until tender. Add scallops; saute for 3 minutes. Add the tomatoes, seafood seasoning and thyme; saute 1-2 minutes longer or until scallops are firm and opaque. Fluff rice with a fork; serve with scallop mixture. Sprinkle with green onions and bacon.

- Stir together maple syrup, soy sauce, and Dijon mustard in a bowl until smooth. Add the scallops, and toss to coat. Cover bowl with plastic wrap, and marinate at least one hour.
- Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with a sheet of aluminum foil.
- Arrange bacon pieces on baking sheet so they do not overlap. Bake in preheated oven until some of the grease has rendered out of the bacon; the bacon should still be very soft and pliable, about 8 minutes. Remove bacon from the baking sheet and pat with paper towels to remove excess grease. Drain or wipe grease from the baking sheet.
- Wrap each scallop piece with a piece of bacon, and secure with a toothpick. Place onto baking sheet. Sprinkle the scallops with brown sugar.
- Bake in preheated oven until the scallops are opaque and the bacon is crisp, 10 to 15 minutes, turning once.

- Heat a skillet over high temperature and sauté the bacon for 4-5 minutes, until limp and partially browned; remove from skillet, drain, and set aside to cool.
- In a bowl, combine the green onions, bourbon, maple syrup, soy sauce, mustard, and pepper, and stir well; remove about 2 tablespoons of marinade to another container and set aside.
- Add the sea scallops to the marinade in the bowl and toss gently to coat.
- Cover and place in refrigerator to marinate for 1 hour, stirring occasionally.
- Preheat your oven broiler; pan spray a broiler pan.
- Cut the partially cooked bacon strips into 4 sections apiece.
- Remove the scallops from the marinade (reserve marinade) and wrap a piece of cut bacon around each scallop - if the scallops are very large, they might only reach halfway around.
- Thread the wrapped scallops onto the skewers (going through each end of bacon strips if they only reach halfway around), making sure to leave space between each scallop so that the bacon will cook well.
- Place the completed skewers on the pan-sprayed boiler pan and broil for 8 minutes or until the bacon is crisp and the scallops are opaque, occasionally basting with the marinade used with the scallops (how long they need to cook depends on the size of the scallops).
- Remove skewers from broiler, place them on a serving platter, and brush or drizzle with the reserved marinade (that which was not combined with the scallops in the refrigerator).
- Note: these can also be cooked on the grill if you watch them carefully so that the scallops do not overcook.

- Preheat oven to 350 degrees. Place bacon slices individually onto a baking sheet. Bake until a pale golden brown, about 8 minutes. It should still be flexible, not crisp. Cut slices in half crosswise and let cool.
- Wrap one slice of bacon around the sides of each scallop and secure it with a toothpick. (They can be prepared 6 to 8 hours ahead. Just cover and refrigerate.).
- Preheat oven to 400 degrees Place the scallops on a baking sheet and bake until cooked through, about 8 minutes.
- While the scallops are cooking, boil the cream in a large skillet until it is reduced to about 3/4 of a cup, approximately 3 minutes. Keep an eye on the heat and lower to medium maintaining a steady reduction. Add mustard and maple syrup then boil for approximately another 4 minutes. Season with salt and pepper to taste.
- Spoon sauce on a serving platter. Arrange scallops on the platter, sprinkle with chives and serve.

- Partially Cook Bacon for 3-5 minutes in a pan, on medium heat, putting a plate or weight on the bacon to flatten it as it cooks. Do not overcook, as it will complete the cooking process on the BBQ. Remove from pan and place the partially cooked bacon slices on a paper towel and pat with papertowels to remove any excess grease, then set aside.
- Lightly Salt the Scallops, and then wrap them with the partially cooked bacon and secure them with toothpicks.
- Mix Maple Syrup and Dijon Mustard together, and coat the bacon wrapped scallops with the mixture, and refrigerate for (1) hour if you have the extra time, if not you can grill them right away.
- Lightly Oil the BBQ grill, and cook until lightly browned. Serve immediately.

- Soak long wooden skewers in water for about 20 minutes (available from the dollar store).
- Preheat BBQ to about 250°F.
- Mix BBQ sauce and Maple syrup.
- Wrap bacon around each scallop and thread onto a skewer (4 on each).
- Place each skewer on the grill.
- Sear for about 2 minutes each side.
- Spoon or brush BBQ sauce/Maple syrup mixture over entire skewer each turn.
- Grill and turn every 2 minutes.
- Remove from grill after about 8 minutes. The longer they are left on the crispier and somewhat chewier they will be.
