SAUSAGE BALLS
Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

Steps:
- Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
- Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
- Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
- Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.
BACON-WRAPPED STUFFING BALLS
My family loves these. They can be served as an appetizer or a side dish. They can be stuffed with sliced Italian sausage, chunks of cheese, or other small savory treats.

Steps:
- Heat oil in a large skillet over medium heat. Add red bell pepper, celery, and onion; cook and stir until softened, 5 to 10 minutes.
- Preheat oven to 375 degrees F (190 degrees C).
- Combine stuffing mix, cream cheese, butter, and beaten egg in a large bowl; add hot water and mix well until incorporated. Let sit until liquid is absorbed, about 10 minutes. Stir in red bell pepper mixture. Shape into 1-inch balls.
- Place bread crumbs in a shallow dish. Roll balls in bread crumbs; arrange them on a baking sheet. Flatten slightly into patties. Wrap patties in bacon.
- Bake in the preheated oven until bottoms are browned and crisp, about 10 minutes. Flip and continue baking until crisp on top, about 10 minutes more.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
- Mix ground beef, eggs, Parmesan cheese, parsley, bread crumbs, garlic, onion powder, salt, black pepper, oregano, and basil in a large bowl until thoroughly combined. Form meat mix into 2-inch meatballs.
- Wrap half a bacon slice around a meatball; turn the meatball around 45 degrees and wrap a second half-slice of bacon around the meatball so the meat is enclosed by bacon. Repeat, forming 12 meatballs and wrapping each one in 2 half-slices of bacon. Place wrapped meatballs onto the prepared baking sheet with seam sides down.
- Bake in the preheated oven until meatballs are no longer pink inside and bacon is crisp, about 45 minutes. An instant-read meat thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C). Pour off excess grease.

These little guys are ALWAYS a hit with the adults and kids. Barbecue appetizers or backyard hors d'oeuvres as I like to call them are a great way to give your guests a hint of what they're in store for. Not to mention they'll fend off the hungry crowds while the ribs are finishing. But don't be offended when some misguided soul raves about these and neglects to mention your fine 'cue! You can do these on the pan in your smoker or if its full they work just as well in the oven. Trust me, they're great either way.

- Cut the bacon strips in half length-wise (just leave in the package and cut with a knife). Cut the sausage into pieces that are about the same width of the bacon strips. Just toss the ends of the sausages.
- Wrap the 1/2-strips of bacon around the sausages and hold it in place with a toothpick. Place on top of a cookie sheet. Now I like to do these two ways: for a spicy kick shake a few pepper flakes on top of each sausage or for more of a sweeter flavor try a small sliver of candied ginger.
- Top each sausage with a loose 1/2 - 3/4 tsp scoop of brown sugar. The brown sugar will be used to gauge when the sausages are done. When it melts down and turns into a little volcano of brown sugar they are READY!
- If your grill is already full then put these in your oven at 300°F for approximately 45-60 minutes. Its nearly impossible to overcook these, but you do want to keep some of the molten brown sugar on top for flavor. So don't forget to give your guests this treat.

- -- Preheat oven to 400 degrees.
- -- In a bowl mix sausage, bisquick, chedder cheese and crushed red pepper.
- -- Roll mixture in to 1 inch balls, wrapping each one with 1/2 slice of bacon. place each wraped ball on a greased cookie sheet 1 inch apart.
- --place in oven for 10 mins, after 10 mins turn the oven to BROIL for 2 or 3 more mins just to make sure the bacon gets done.

BACON WRAPPED SAUSAGE MEATLOAF
A different way of using sausages and a recipe from the Good Food Magazine from 2000, we love it and I made this many times. Serve sliced with some mustard, chutney or roasted onion gravy on the side. Any left overs are good on sandwiches. You can put it together up to a day ahead, leaf in the fridge until you are ready to cook it. It can be cooked without the tin, on a baking sheet and can easily be doubled. Adjust the seasoning to the type of sausagemeat you bought.

- 1 small (500 ml) loaf tin (optional, see intro).
- Preheat oven to 350°F.
- Heat oil in a frying pan, fry onion for about 8 minutes until golden brown, remove from the heat.
- With a sharp knife cut open the sausages, remove the meat from the casings and put in a bowl.
- Add the onion, tomato puree, mustard, breadcrumbs and egg.
- Add seasoning if needed, depending on the sausage meat you have chosen.
- Using your hands mix together well and shape into a large sausage, the length of the loaf tin.
- Wrap the bacon rashes around the sausage and put it in the loaf tin.
- Bake for 50 to 60 minutes, the bacon should be crisp and the meat cooked through.
- Let rest in the tin for 5 minutes, turn out, slice and serve!
