BACON AND APPLE WRAPPED PORK TENDERLOIN WITH MAPLE APPLE GLAZE

2 large cloves garlic, minced
1 tablespoon minced fresh sage
1/2 teaspoon salt
1 teaspoon extra virgin olive oil
1 1 1/2-pound pork tenderloin
1 pound bacon
2 apples, peeled, cored, and thinly sliced
1 1/2 cups apple juice
1/4 cup apple jelly
1/4 cup maple syrup
2 tablespoons Dijon mustard

Steps:

  • 1. Combine garlic, sage, salt, and olive oil in a small bowl. Rub mixture over all sides of the pork tenderloin.
  • 2. Place a 14-inch piece of plastic wrap on a large cutting board. Place 8 14-inch strands of kitchen twine 1 inch apart on the plastic wrap. The twine should be perpendicular with your body. Place bacon strips in an overlapping fashion on top of kitchen twine.
  • 3. Place apple slices in rows on bacon. Place tenderloin on the apples slices closet to you. Fold the thin end of the tenderloin over on itself to create even thickness.
  • 4. Using the plastic wrap, begin rolling the bacon and apple around the tenderloin. Roll as tightly as possible. When you completed the roll, pull the ends of the twine from within the roll and tie to the loose ends. You might benefit from someone holding the roll while you tie the first couple of pieces of twine.
  • 5. Bring apple juice to a boil in a small sauce pan. Lower heat and continue simmering until juice has reduced by half. Add apple jelly and continue simmering until completely melted. Remove from heat and whisk in maple syrup and mustard. Set aside.
  • 6. Preheat grill to 300 degrees. Turn off one burner on grill and place tenderloin over unlit burner. Close grill and cook for one hour or until internal temperature reaches 150 degrees. After 30 minutes, begin basting with maple glaze. Baste again after 15 minutes and then again when meat is done. Let rest for 10 minutes. Slice and serve.

1 to 2 thick slices bread (enough to make 1/2 cup coarse breadcrumbs)
1 tablespoon Dijon mustard
1/8 teaspoon salt, plus more to taste

1 pork tenderloin (1 to 1 1/4 pounds)
8 to 10 strips of bacon (about 12 ounces), cut in half

Steps:

  • Heat the oven to 450F: Have on hand a rimmed baking sheet.
  • Roast the tenderloin: Roast for 20 to 25 minutes, or until an instant-read thermometer inserted into the center of the meat registers 145F to 150F and the bacon is brown and crisp. If the roast is ready before the bacon browns, place the tenderloin under the broiler for 3 to 5 minutes to brown the bacon.
  • Let the tenderloin rest for 10 minutes before cutting into slices: Serve with the pan juices spooned over top if desired.

14 strips bacon (about 13 ounces)
1 pork tenderloin, trimmed (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
1/3 cup Dijon mustard
3 tablespoons packed light brown sugar
1 1/2 teaspoons garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay the bacon onto a rimmed baking sheet lined with a baking rack. Bake until the bacon has rendered some of its fat but is still completely flexible and hasn't begun to brown, about 15 minutes. Remove from the oven and let cool 5 minutes. Raise the oven temperature to 450 degrees F.
  • Generously sprinkle the tenderloin with salt and black pepper.
  • In a small bowl, stir together the mustard, brown sugar, garlic powder and cayenne. Coat the tenderloin all over with the mixture.
  • Starting at one end, wrap the bacon strips around the tenderloin, overlapping them slightly so they are shingled.
  • Place the tenderloin on the baking rack and roast until 130 degrees F at the thickest point, about 17 minutes. Let rest 5 minutes, then transfer to a cutting board using a long offset spatula and tongs. Slice into 1-inch-thick rounds and serve.

1 tablespoon Dijon mustard
1 tablespoon real maple syrup
1 (1 1/4 pound) pork tenderloin
salt and ground black pepper to taste
½ medium Fuji apple - peeled, cored, and cut into slices
1 tablespoon minced red onion
2 teaspoons fresh thyme leaves
9 slices bacon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Stir together mustard and maple syrup in a small bowl.
  • Pat pork tenderloin dry. Without cutting all the way through, slice the tenderloin lengthwise and open like a book. Spread mustard mixture evenly over the inside and outside of the tenderloin, then season with salt and pepper.
  • Place apple slices on one side of the tenderloin. Spread onions on top of the apples and sprinkle with thyme. Close the tenderloin, tucking apples and onions inside.
  • Line up bacon slices in a rectangle shape on a sheet of heavy-duty aluminum foil, with each piece overlapping slightly. Place the stuffed tenderloin across the top ends of the bacon. Use the foil to lift the tenderloin and start to roll it like a jellyroll until it's completely wrapped with bacon.
  • Secure both ends of the tenderloin and each bacon slice with a wooden toothpick. Use the foil to lift the tenderloin into a 9x13-inch baking pan. Spread out the foil to protect the pan from drippings.
  • Cook in the preheated oven until slightly pink in the center, about 20 minutes, turning halfway through. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove from the oven and let rest until internal temperature has risen to 145 degrees F (63 degrees C), 5 to 10 minutes.

This makes a wonderful dinner to serve to guests! You can prepare, stuff and roll the tenderloins, well in advance, cover and refrigerate until ready to cook.

1/4 cup butter
1 lb button mushroom, thinly sliced
1 small onion, finely chopped
1 -2 tablespoon fresh minced garlic
1/3 cup chopped pecans, toasted
2 (12 -13 ounce) pork tenderloin
seasoning salt (or use white salt)
black pepper
8 -10 slices thick bacon
4 tablespoons olive oil, divided
2 teaspoons coarse cracked black pepper, divided

Steps:

  • In a large skillet melt butter over medium heat; add in mushrooms, onion and garlic, saute until tender (about 8 minutes).
  • Stir in toasted pecans; set aside.
  • Place the pork between two sheets of plastic wrap, then flatten to about 1/4-inch thickness using a meat mallet or a rolling pin.
  • Season the side of the pork that you will be stuffing with season salt and black pepper.
  • Divide and spread the mushroom mixture evenly between the two tenderloins, leaving a 1-inch border.
  • Roll up jellyroll fashion starting with the long end.
  • Wrap 4-5 bacon slices (can use more if desired) around each tenderloin roll, then secure with toothpicks.
  • Place seam-sides down in a greased roasting pan/dish.
  • Brush the tops and sides of each roll with about 2 tablespoons (or less) of olive oil.
  • Rub evenly with coarse black pepper then sprinkle lightly with seasoned salt (or white salt).
  • Bake uncovered in a 450 degree oven for 15 minutes.
  • Reduce heat to 400 degrees and continue to bake for another 10-15 minutes or until a meat thermometer reads 160 degrees.
  • Let rest for 10-15 minutes before slicing.
  • Delicious!

1 pork tenderloin
3 slices bread, torn into small pieces
¼ cup butter, melted
3 tablespoons poultry seasoning
1 medium onion, chopped fine
1 stalk celery, chopped fine
salt and ground black pepper to taste
6 slices bacon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Slice the pork almost in half, but do not cut all the way through. Butterfly the sides until the pork is open enough to stuff.
  • Mix torn bread, melted butter, poultry seasoning, onion, and celery in a bowl until bread is evenly coated with butter and seasoning; season with salt and pepper. Stuff the pork tenderloin with the bread mixture. Wrap the pork around the filling and secure closed with toothpicks. Wrap bacon slices around the stuffed tenderloin. 2 pork tenderloin, large, about 2 lbs
10 fresh sage leaves, very finely chopped or 1 teaspoon dried rubbed sage
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
9 -10 slices bacon, thick-cut
kitchen twine
3 -4 apples, such as Cortland, large
1 onion, large
2 tablespoons all-purpose flour
1/2 cup chicken broth or 1/2 cup stock

Steps:

  • If any silver skin on loins is present, cut away and discard.
  • Sprinkle sage, garlic, salt and pepper all over loins. Place loins closely together lengthwise, with thick ends meeting thin ends, to even out roast thickness.
  • Lay out slices of bacon snugly together on a cutting board, forming a rectangle. Place loins across bacon so bacon ends emerge from each side. Beginning at one end, lift a bacon end up over loins at a 45° angle. Then, alternating sides, continue lifting bacon ends down the length of roast forming a chevron pattern of bacon on top.
  • Cut five 12-inch (30-cm) lengths of twine and one 30-inch (75-cm) length. Place 5 shorter lengths of twine under loins widthwise. Working out from roast centre, firmly (but not causing deep indents to form) tie up each piece of twine, spacing evenly apart. Then tie up roast lengthwise with longer piece of twine. Trim twine ends; discard. (Roast can be prepared, covered and refrigerated for up to half a day. Add 10 to 15 minutes to roasting time.).
  • When ready to roast, preheat oven to 425°F (220°C).
  • Heat a large frying pan over medium heat. Lightly brown roast on all sides, about 15 minutes in total.
  • Transfer to a baking pan lined with a rack. Place in oven; set time for 30 minutes. Check and continue roasting until a meat thermometer reads 145°F (63°C).
  • Remove from oven: transfer to cutting board. Cover roast with foil; let rest 15 to 20 minutes.
  • Meanwhile, peel core and slice apples. Thinly slice onion.
  • Drain most of fat from frying pan; place back over medium heat. Add onion; cook 10 minutes or until lightly browned. Stir in flour; cook 1 minute. Stir in chicken broth; add apple slices.
  • Bring to a boil; simmer, covered, 5 to 10 minutes or until apples are tender and sauce is lightly thickened. Add more broth if too thick; keep covered and hot.
  • To slice pork roast, snip off lengthwise string. Then slice about ¾ inch (2 cm) thick, removing crosswise strings as they are encountered.
  • Place a few saucy apples on each warm serving plate, top with a couple of slices of roast and drizzle with more sauce. Serve with mashed potatoes and a steamed julienne of carrots.

Add the apple, cider, Riesling, chicken stock, sage and thyme and simmer until the apple softens, about 7 minutes. Transfer the contents of the saucepan to a blender and puree until smooth. Strain the sauce back into the saucepan and boil until it coats the back of a spoon, about 5 minutes. Season with salt and pepper.
