15 Medjool pitted dates
1 pound aged Manchego, cut into 15 blocks
5 slices bacon, cut into thirds
1/2 cup maple syrup

Steps:

  • Preheat the oven to 400 degrees F.
  • Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
  • Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.

35 to 40 pitted dates
70 to 80 salted roasted almonds
2 pounds thin bacon, cut in half

Steps:

  • Preheat the oven to 425 degrees F.
  • Stuff each date with 1 to 2 almonds. Wrap each date with half a piece of bacon and secure with a toothpick.
  • Bake, turning the dates halfway through so the bacon is evenly cooked, 15 to 18 minutes. Serve warm or at room temperature.

hickory or applewood smoked bacon
whole, pitted medjhool dates
asiago cheese
smoked paprika
YOU SHOULD DETERMINE HOW MANY YOU WILL NEED BY ALLOWING 2 OR 3 DATES PER SERVING, AND PURCHASE ENOUGH BACON, ASIAGO AND DATES FOR THAT AMOUNT.

Steps:

  • 1. Line one or two jelly roll pans (any large shallow pan with sides will do) with aluminum foil. (If you want a little less oily product, place a cooling rack in the pan and when assembling the appetizers, place them on the rack.) Set aside until needed.
  • 2. Cut bacon strips into halves or thirds crosswise (the pieces should be about 3-4 inches long to allow a small overlap when placed around the date). Place on plate and set aside Place about 2 to 4 Tbsp of smoked paprika on another small plate and set aside. Cut the Asiago cheese into sticks about 1/4 inch square by 1 inch long. Place on a separate plate and set aside.
  • 3. Make your assembly line by starting with the box or container of pitted dates, then the Asiago cheese plate, then the bacon with the paprika plate nearby. Then a container of toothpicks to hold the bacon around the dates. And finally, the foil lined baking pans (with or without optional cooling racks.)
  • 4. Stuff each date with a small stick of Asiago, take one piece of cut bacon and dip one side in the paprika, then wrap it (Paprika side in) around the date. Toothpick in place and put finished roll on baking pan. Continue in this method until all ingredients are used (or you run out of one of the ingredients.)
  • 5. Bake at 400°F for 6-8 minutes, turn over and bake for 6-8 minutes more. When bacon is brown and crispy, remove from pan to paper towels to drain. Serve hot or warm for best flavor.

4 slices applewood-smoked bacon, each cut crosswise into 3 pieces

Steps:

  • Preheat oven to 425°F. Using small knife, make small cut in side of each date; remove pit. Insert 1 piece of cheese into each date. Brush bacon slices generously on 1 side with smoked paprika. Wrap each date with 1 piece of bacon, with paprika side against date. Secure bacon with toothpick. Arrange dates on rimmed baking sheet. Roast until bacon is browned on bottom, about 6 minutes. Turn dates; roast until bacon is cooked, about 6 minutes longer. Transfer to plate; cool slightly. Remove toothpicks.

1 pound pitted dates
4 ounces blue cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.
  • Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

1/2 lb bacon, sliced into quarters

Steps:

  • Microwave bacon for about 2 minutes, until partially cooked, but not browned.
  • Wrap each date with a strip of bacon and secure with a wooden toothpick.
  • Broil on low 3 minutes, turn dates, and continue broiling 3 to 4 minutes longer, or until browned.

You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

Steps:

  • Stuff each date with one almond.
  • Cut bacon into half or thirds.
  • Wrap bacon around date and secure with a round toothpick.
  • Preheat oven to 400 degrees.
  • Place dates on a foil lined (they are messy and this makes them much easier to clean up) baking pan and cook until bacon is crispy (around 15 minutes).

One more note, these CAN be made without bacon if need be for a special diet.

Steps:

  • Preheat broiler (high setting).
  • Cut your cheese into small rectangles just large enough to fill the cavity of your pitted date.
  • Stuff 1 piece of cheese into each date.
  • Wrap each date with a piece of bacon.
  • Place on baking sheet, seam side down, and broil for 4 minutes. Turn dates over and broil another 4 minutes.
  • Serve hot.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

16 medium Medjool dates, pitted
Black pepper (optional)

Steps:

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.
