1/2 cup shredded Monterey Jack cheese
4 slices bacon, chopped
1 pound ground beef chuck
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing the grill pan
4 large sweet Hawaiian buns, such as King's Hawaiian, split

Steps:

  • Combine the cheese and bacon in a bowl.
  • Put the ground chuck in another bowl and sprinkle with salt and pepper; mix with a rubber spatula. Flatten a quarter of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; place in the center of the patty. Bring up the sides of the patty over the filling, making sure the cheese is completely covered; flatten slightly to shape. Repeat with the remaining meat and filling. Set the patties side-by-side on a platter and refrigerate while preparing the grill.
  • Place a large grill pan covering two burners over medium-high heat, or preheat an outdoor barbecue until very hot. Brush the grates with oil. Grill the burgers for 8 minutes per side for medium. Transfer to a clean plate.
  • Rub the grill grates with more oil. Grill the buns cut-side down for 1 minute to toast.
  • Serve the burgers with your favorite condiments and garnishes.

Who doesn't love bacon-wrapped shrimp? Try this variation on that theme by putting crispy bacon inside a shrimp burger.

1 pound peeled and deveined raw shrimp
6 tablespoons panko, plus more as needed
2 teaspoons prepared horseradish
1 large egg, lightly beaten
3 scallions, thinly sliced
2 teaspoons hot sauce
1/4 teaspoon fine sea salt (optional)
3 strips bacon
1 loaf French bread, sliced into six 4-inch-long pieces and lightly toasted
Mayonnaise, for serving
Sliced tomato, for serving
Lettuce, for serving

Steps:

  • 1 Pat the shrimp dry with paper towel
  • 2 In a food processor, add the shrimp and pulse, scraping down the sides as needed, until just finely chopped but not pureed into a paste
  • 3 Transfer the shrimp to a large bowl and add the panko, horseradish, egg, scallions, hot sauce and salt, if using
  • 4 Gently mix to combine; the mixture should easily form into patties
  • 5 If it is too wet, add more panko, a scant tablespoon at a time
  • 6 Divide the shrimp mixture into 12 equal portions and shape into patties about 2-inches wide and 1/2-inch thick
  • 7 Lay the patties on a large, rimmed baking sheet, cover with plastic wrap or a towel and refrigerate for at least 10 minutes and up to 1 day
  • 8 In a large frying pan over medium heat, fry the bacon until crisp
  • 9 Transfer to a paper towel-lined platter
  • 10 Roughly chop the bacon
  • 11 Reserve the bacon drippings in the pan
  • 12 Just before cooking, remove the patties from the refrigerator
  • 13 Divide the chopped bacon into six equal portions
  • 14 Using your thumb, make a dent in the center of 6 of the patties
  • 15 Place a portion of bacon in each dent
  • 16 Top each with another patty and press the edges together to seal, checking each patty on all sides to be sure
  • 17 Gently flatten each patty to about 3/4-inch thick
  • 18 Reheat the bacon drippings in the large skillet over medium heat, until shimmering
  • 19 Gently add the patties, without crowding, and fry until golden and firm, 5 to 7 minutes, turning once after about 3 minutes
  • 20 Serve on lightly toasted French bread, with mayonnaise, tomato and lettuce

1 clove garlic, minced
1 teaspoon hot sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
4 strips bacon, diced
1/2 onion, chopped
1 cup grated sharp Cheddar
4 burger buns
Lettuce, tomato, pickles for garnish

Steps:

  • Preheat grill to medium.
  • In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

3 pounds ground beef
¼ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons barbeque sauce
½ teaspoon garlic powder
½ pound bacon, cut into 1/4 inch pieces
1 medium onion, finely chopped
¾ cup shredded Cheddar cheese
6 hamburger buns, split

Steps:

  • In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
  • Prepare a grill or large skillet for medium heat.
  • As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
  • Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

1 lb ground chuck
1 lb ground round
2 teaspoons black pepper, freshly ground
2 tablespoons garlic salt
8 ounces sharp cheddar cheese, coarsely shredded
1 lb bacon, cooked and crumbled
2 medium vidalia onions, sliced
1 tablespoon butter
8 ounces sweet barbecue sauce (your choice)
6 -8 hamburger buns
8 ounces lettuce (optional)
8 ounces tomatoes (optional)
1/2 cup onion

Steps:

  • Combine ground round, ground chuck, salt and pepper in a large bowl.
  • In another bowl, combine the coarsely shredded sharp cheddar and cooked bacon pieces.
  • Let bacon and cheese mixture sit at room temperature for about 20 minutes to get soft.
  • Then, shape mixture into balls (for however many burgers you would like to make). Form 2 patties of meat and place one cheese/bacon ball in between them.
  • Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
  • Cook burgers on grill over medium flame for about 7 minutes on each side.
  • While burgers are grilling, slice sweet Vidalia onions and sauté them in a skillet with 1 tablespoon of butter. Once onions become translucent (about 4 minutes), add some sweet barbecue sauce.
  • Flip burgers, and baste the cooked side of the patties with the same sweet barbecue sauce used in the onions.
  • After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking).
  • Baste again with sweet barbecue sauce before removing from grill.
  • Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
  • To build burger, take toasted bun, add patty, and top with smothered barbecue onions. You can add tomato or lettuce, if you'd like, but the flavors are great without them.
