Steps:
- Put oven rack in middle position and preheat oven to 375°F.
- Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
- Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.
- Trim crusts off bread and reserve for another use (see cooks' note, below), then cut each slice into 4 squares. Bake toasts on baking sheet until beginning to brown on edges, about 20 minutes.
BACON SWISS SQUARES
This is a delicious breakfast casserole that's also great for dinner. Comes from Quick Cooking cookbook.

Steps:
- Cook bacon on stovetop or microwave; crumble.
- Mix biscuit mix and water in a bowl for 20 strokes, or until just combined.
- Knead 10 times and place into the bottom of a greased 13x9x2 inch baking dish.
- Spread dough evenly into bottom of dish and slighty up the sides.
- Place Swiss cheese in 1 layer over the dough, then top with crumbled bacon.
- In a bowl, whisk together the eggs, milk and onion powder and pour evenly over bacon.
- Bake at 425*, for 15-18 minutes or until tests done in center. Cut into squares and serve while hot.

TOMATO BACON SQUARES

Steps:
- Preheat oven to 375 degrees Fahrenheit.
- Grease a 9x13" baking pan, then distribute the corn meal evenly over the bottom.
- Combine bacon, tomatoes, bell pepper, onion, and basil in bowl and mix lightly.
- Press the pizza crust into the greased pan so that it's an even thickness all around.
- Mix mayonnaise with garlic, and spread over the crust.
- Top evenly with bacon mixture, and then cover with the shredded cheese.
- Bake 18-20 minutes or until the top is bubbly and crust is a deep golden brown.
- Cut into 24 squares and serve.

- Heat oven to 450ºF.
- Crumble hash browns into 15x10x1-inch pan sprayed with cooking spray; press gently to form even layer.
- Bake 15 to 20 min. or until golden brown. Meanwhile, whisk eggs, milk and sour cream in large bowl until blended; stir in half each of the cheese and bacon.
- Reduce oven temperature to 350ºF. Pour egg mixture over crust; bake 15 to 20 min. or until set. Remove from oven. Top with remaining bacon and cheese; sprinkle with onions. Let stand 5 min. before cutting to serve.

FRIED-EGG-AND-BACON PUFF PASTRY SQUARES
The bacon-topped puff pastry squares can be made a couple of hours ahead of time. Re-crisp them in a warm oven before serving.

- Unfold puff pastry on a lightly floured work surface, and roll out into a 12-inch square. Prick pastry all over with a fork. Cut into thirds to yield three 4-inch-wide strips, then cut strips crosswise into thirds (you should have nine 4-inch squares). Transfer to a parchment-lined baking sheet, and freeze until firm, about 30 minutes. Preheat oven to 425 degrees with rack in top position.
- Lightly beat 1 egg with water. Brush top of pastry squares with egg wash; place 2 pieces (1 slice) bacon on each square. Bake until pastry is puffed and golden brown and bacon is cooked through and crisp around edges, 15 to 18 minutes.
- Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Crack 3 eggs into skillet, and cook until whites are set and golden brown along edges but yolks are still runny, about 4 minutes. Place 1 egg on top of each of 3 pastry squares, and season with salt and pepper. Transfer to a serving platter, and loosely cover with foil. In 2 more batches, cook remaining 6 eggs in remaining 2 tablespoons butter, transfer to pastry squares, and season. Garnish with chives, and serve immediately.
TOMATO BACON SQUARES
I've been making these for years as an appetizer and they never disappoint - even my kids love them. I got this recipe from a Pampered Chef party. It is a light recipe with approximately 47 calories and 1 grams of fat per square.

- Coarsely chop pepper and onion with food processor.
- Combine first six ingredients in a bowl; set aside.
- Grate cheese, if necessary.
- Unroll bread dough and press into bottom of 9x13-inch baker.
- Roll dough 1/4-inch up sides of 9x13 baker to form a rim.
- Trim excess dough and discard.

PECAN-BACON SQUARES A LA MODE

- Make the crust: Preheat the oven to 375 degrees F. Butter an 8-inch-square baking dish and line with nonstick foil, leaving an overhang on 2 sides. Lightly butter the foil.
- Combine the flour, sugar and salt in a food processor and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal. Add the lemon juice and pulse until the dough just comes together. Press the dough into the bottom of the prepared baking dish and bake until lightly golden, about 15 minutes.
- Meanwhile, make the filling: Cook the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes; drain on paper towels. Whisk the eggs, corn syrup, sugar, melted butter, vanilla and vinegar in a medium bowl until combined.
- Scatter the pecans and bacon over the prepared crust, then pour in the filling. Bake until the filling is set and the nuts are golden brown, 30 to 35 minutes. Let cool completely in the pan on a rack, then lift out of the pan using the overhanging foil. Cut into squares and top with ice cream and more pecans.

- Preheat oven to 410°F (210°C). Line baking sheet with parchment paper.
- In a food processor, add flour, baking powder, and salt then half your butter, and pulse three or four times to combine. Add the remainder of your butter and pulse until well combined, and sandy then transfer to a large bowl. (If you don't have a food processor, lightly whisk dry ingredients in a large bowl then grade FROZEN butter into the dry mix. Rub between the palms of your hands until the mixture is coarse and sandy.)
- Add cheddar, mozzarella, apple, onion, and bacon and toss lightly to combine. Now add your buttermilk. Start with 1 1/2 cups and add more if needed. Mix dough with a wooden spoon until a shaggy, loose dough begins to form then turn out onto a well-floured surface. Knead biscuit dough with well-floured hands 5 - 8 times, or until dough holds together well.
- Shape dough into a large round, about 1 1/2 inches thick., then cut biscuits into the desired shape with a sharp biscuit cutter or knife. Transfer onto waiting baking sheet, leaving about 1/2 inch between each biscuit. Bake at 410°F (210°C) for 15 - 20 minutes depending on biscuit size.
- Remove and cool on a baking rack for about 5 minutes then, just try to resit them!

- Divide the asparagus into 6 bundles. You could do more or less if desired. Mine ended up being 6 bundles of 5 asparagus spears each. Wrap the bacon around the middle of the asparagus bundles so that it overlaps a little (see photo for reference). Place the bundles on the prepared baking sheet.
- In a small bowl, whisk together the olive oil and garlic powder until combined. Plush that all over the bacon and asparagus. Sprinkle to taste with salt and pepper.
- Roast in the oven for 15-22 minutes or until your bacon is nicely cooked (it won’t be very crispy at all). Once out of the oven, I recommend placing the bundles on a paper towel lined plate to absorb some of the excess grease.
