Savory little bites of spinach, garlic, spices, and two kinds of cheese, today I'm sharing with you my recipe for the Best Ever Spinach Balls Appetizer. You might want to make a second batch, because these go fast at parties!

20 oz frozen chopped spinach (defrosted, drained)
2 cups gluten free breadcrumbs
1 cups Parmesan cheese (grated)
1/2 cup unsalted butter (melted)
1 bunch green onions (chopped)
3 large eggs
1 cup white cheddar (shredded)
1/2 tsp salt
1/2 tsp black pepper
1 tsp garlic powder

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix together spinach, breadcrumbs, Parmesan, butter, green onions, eggs, cheddar, salt, pepper, and garlic.
  • Form into balls and place on a large greased baking sheet.
  • Bake for 20-25 minutes, or until spinach balls are golden brown and cooked through.

Sauteed Spinach with Bacon and Onions image

1 tablespoon bacon grease
1/2 yellow onion, finely diced
3 cloves garlic, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper flakes (for a little spice because Trisha likes it)
Salt and ground black pepper
Salt and ground black pepper
12 ounces baby spinach

Steps:

  • In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten
1/4 cup grated Parmesan cheese
6 tablespoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.

2 (10 ounce) packages frozen chopped spinach
1 (6 ounce) package chicken Stove Top stuffing mix
1 cup grated parmesan cheese
6 eggs, lightly beaten
3/4 cup butter, melted
salt, & pepper to taste

Steps:

  • Cook spinach according to instructions, drain in a sieve, use back of a wooden spoon to press the spinach against the sieve to get as much moisture as possible out In a bowl combine the spinach, stuffing mix,cheese, eggs, butter, salt& pepper Mix thoroughly& roll into small balls 3/4 to 1" size.
  • Place on a cookie sheet& freeze.
  • When frozen place in a plastic zip lock bag.
  • To serve place frozen balls on a cookie sheet and bake at 350F 10-15 minutes or until lightly browned If you are doing them fresh or thawed only bake for 7-10 minutes.
  • Serve hot.

2 cups finely crushed herb-seasoned dry bread stuffing mix
½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

2 tbsp olive oil
15g unsalted butter
1 onion, finely chopped
1 large garlic clove, crushed
350g risotto rice
150ml dry white wine
1.2l hot chicken or veg stock
150g parmesan, finely grated
1 lemon, finely zested
150g ball mozzarella, chopped into 18 small pieces
vegetable oil, for deep-frying
150g plain flour
3 large eggs, lightly beaten
150g fine dried breadcrumbs (panko works well)

Steps:

  • Heat the oil and butter in a saucepan until foamy. Add the onion and a pinch of salt and fry gently over a low heat for 15 mins, or until softened and translucent. Add the garlic and cook for another min. Stir in the rice and cook for a further min, then pour in the wine. Bring to the boil and cook until the liquid is reduced by half. Pour in half the stock and simmer, stirring continuously, until most of the liquid is absorbed. Add the remaining stock a ladleful at a time as the rice absorbs the liquid, stirring, until the rice is cooked through (this should take about 20-25 mins). Stir in the parmesan and lemon and season to taste. Spread the risotto out into a lipped tray and leave to cool to room temperature.
  • Scoop the cooled risotto into 18 equal portions - they should be slightly larger than a golf ball. Flatten a risotto ball in your hand and put a piece of the mozzarella in the centre, then enclose the cheese in the rice and roll it into a ball. Repeat with the remaining risotto balls.
  • Put the flour, eggs and breadcrumbs into three separate shallow bowls. Dip each prepared risotto ball into the flour, followed by the eggs and finally, the breadcrumbs. Transfer to a tray and set aside.
  • Half-fill a large, heavy-based saucepan with vegetable oil and heat over medium-low until it reads 170C on a cooking thermometer or until a piece of bread turns golden brown in the oil within 45 seconds. Lower the risotto balls into the oil in batches and cook for 8-10 mins, or until golden brown and melted in the centre. Set aside on a tray lined with a clean kitchen towel.
  • Eat the arancini warm, or serve with a basic tomato sauce for dipping.

3 (10 ounce) packages frozen chopped spinach - thawed, drained, and squeezed dry

Steps:

  • Heat butter in a large skillet over medium heat. Cook and stir onion, bacon, and garlic until bacon is crisp, 5 to 7 minutes.
  • Whisk flour, salt, and black pepper into onion mixture until blended and the flour and drippings form a paste, 1 to 2 minutes.

6 slices bacon
6 ounces fresh spinach
1/2 teaspoon kosher salt
1/2 cup onion, finely minced
2 cloves garlic, finely minced
1 (8 ounce) block of cream cheese, softened
1/2 cup shredded cheddar jack cheese
1/4 teaspoon cayenne pepper

Steps:

  • In a large skillet cook the bacon until crisp. Set aside to cool and drain on paper towels. Chop when cool. Drain all but 1 tablespoon bacon grease from the skillet. Add the spinach and cook over medium heat until wilted and cooked through. Sprinkle the spinach with salt and set aside on a cutting board to cool. Chop finely when cooled. Add the onion to the skillet and cook until it's translucent and a tiny bit golden at the edges. Add the garlic to the skillet and cook for 1 minute. Remove from heat. Place the cream cheese in a large bowl. Add cheese, onions, garlic, half of the chopped bacon, chopped spinach, and cayenne pepper and stir well. Roll the cream cheese mixture into a large ball and then roll in the remaining chopped bacon. Wrap tightly and refrigerate until ready to serve.

2 slices bacon (about 2 ounces total), cut crosswise into 1/2-inch strips
3 bunches flat-leaf spinach (about 2 pounds total), thick stems removed, well washed and dried
Coarse salt and ground pepper
2 teaspoons white-wine vinegar

Steps:

  • In a large skillet over medium heat, cook bacon until crispy, 5 to 8 minutes. With a slotted spoon, remove bacon, leaving fat in skillet; drain on a paper towel. Set aside.
  • Increase heat to high; fill skillet with as much spinach as will fit. Season with salt and pepper. Cook, tossing spinach and adding more as it wilts (it may take up to 2 minutes to fit it all). Continue to cook until tender, 1 to 3 minutes.
  • Tilt skillet to drain water from spinach (using slotted spoon or a spatula to hold spinach back). Mix in vinegar; season with salt and pepper. Serve sprinkled with crispy bacon.

  • Place the flour in a food mixer bowl with dough hook attachment. Add the salt and sugar to one side of the bowl, and the instant yeast to the other side (yeast and salt don’t like to be in direct contact). Add in the butter and milk. Turn the mixer on to a medium speed and let it mix the dough ingredients, then let run for 7-8 minutes. The dough will be wet and sticky at first, but will be soft and smooth towards the end.
  • Wipe a little oil around the inside of a large bowl and transfer the dough to the bowl. Cover with clingfilm and allow to prove in a warm room for about an hour, until doubled in size.
  • Take a large, oven -proof dish or pan – approx. 30-35cm diameter. Place an oven-proof upturned bowl (approx. 10-12cm diameter) in the middle of the pan. Then lightly brush the outside of the bowl with a little oil – this will stop the doughballs from sticking to it.
  • Once the dough has doubled in size, turn it out onto a lightly floured surface and knock the air back out of it by folding it in on itself repeatedly. Divide the dough into small, equal size pieces, weighing approximately 30g each. Roll each portion into a ball. Arrange the dough balls around the small bowl in the centre. Leave a little bit of space between each ball so they can expand. Cover the dish in clingfilm and leave to prove for another 30-40 mins.
