SOUR CREAM MASHED POTATOES WITH BACON AND CHIVES

Steps:
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the sour cream and butter using a fork or potato masher. Stir in the bacon, chives, 2 teaspoons salt and freshly ground pepper to taste.

BARBEQUE ROASTED POTATOES WITH SOUR CREAM BACON SAUCE
Steps:
- Potatoes: Preheat grill to medium heat.
- In a large bowl add olive oil, barbeque seasoning, garlic and lemon juice. Mix well to combine. Add potatoes and toss to coat.
- Place potatoes in an aluminum foil pouch and seal. Place on the grill or in a preheated 400 degree F oven for 20 to 25 minutes until potatoes are tender.
- Sauce: Combine all ingredients in a small bowl. Put the potatoes into a medium bowl and pour in the sauce. Toss well to coat the potatoes or serve the sauce on the side.
BACON CHEDDAR BAKED POTATO RECIPE BY TASTY

- Preheat the oven to 350°F (180°C).
- Carefully pierce potatoes with a fork. On a baking sheet oil the potatoes well and sprinkle with salt.
- Bake for one hour. If making more potatoes, an additional 15 minutes per potato is needed.
- Once cooled, cut the potatoes vertically, scoop out the inside, and transfer to a bowl.
- In the bowl with the scooped out potato, add the cheese, scallions, ½ cup (110 g) of bacon, sour cream, butter, milk, and pepper, and mix well.
- Scoop the potato mixture back into the hollowed-out potatoes and top with cheddar cheese and remaining ¼ cup (55 G) of bacon bits.
- Bake an additional 15 minutes until the cheese is melted.
- Serve warm with sour cream and chives.

- Cook bacon in a 12-inch heavy skillet over moderate heat, turning over occasionally, until browned and crisp, 6 to 8 minutes.
- Transfer bacon to paper towels to drain, then carefully transfer drippings from skillet to a small heatproof bowl and stir in white parts of scallions, salt, and pepper.
- Put oven rack in middle position and preheat oven to 450°F.
- Tear off 6 (1-foot-long) sheets of heavy-duty foil.
- Make deep crosswise cuts in potatoes 1/4 inch apart, leaving bottom 1/4 inch intact (do not cut all the way through).
- Place each potato on a sheet of foil and drizzle each with 1 tablespoon bacon-dripping mixture, separating slices to allow some to drip into cuts.
- Gather up foil around potatoes, crimping foil to tightly enclose.
- Roast potatoes until tender, 45 to 50 minutes.
- Just before serving, stir together sour cream and scallion greens and crumble bacon over mixture.

- Wrap potatoes in foil and bake in a 400* oven for 45-60 minutes. When potatoes are done, unwrap and let them cool.
- When potatoes have completely cooled, slice them in half, and with a small spoon; gently remove the center and you should have a potato boat.
- Place scooped out potatoes in a bowl and add the rest of the ingredients, mixing well.
- Reserve a handful of shredded cheese for the topping.
- Using a spoon fill the boats with the mashed mixture and top with the reserved cheese.
- Bake on 375* for 10-15 minute then on broil, watching closely so they do not burn until the cheese is slightly browned.
- Top Potato Boats with sour cream and more chives (optional of course), and Enjoy!

I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
