This recipe is from German Deli.com and they recommend using Schaller and Weber bacon, but any smoked bacon (not maple "flavor") will do. This salad can be served hot or cold.

5 lbs potatoes (baking potatoes are NOT recommended, as they are too flaky)
1/2 cup diced smoked bacon
1/2 cup vegetable oil
3 tablespoons white vinegar
1 teaspoon sugar
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper
3/4 cup sliced green onion
1/4 cup chopped chives

Steps:

  • Place unpeeled potatoes in cold salt water and bring to a boil.
  • Boil gently until potatoes are tender, but still firm.
  • Do not overcook.
  • Pour off the boiling water and allow potatoes to cool until easy to handle.
  • (The drained, unpeeled Potatoes can also be placed in a refrigerator overnight).
  • Peel cooled potatoes, slice, then place in a large bowl.
  • Slowly sauté the bacon in a skillet until the bacon pieces are crisp and golden brown.
  • Do not burn the bacon and do not drain the fat in the skillet.
  • Remove the skillet from the heat and add the oil, vinegar, sugar, salt and pepper.
  • Pour this mixture over the sliced potatoes in the bowl.
  • Add the green onions and the chives.
  • Gently toss the potatoes so all ingredients are evenly blended.
  • Taste and adjust seasonings, if necessary.

6 slices bacon (or 3 for diet conscious)
1/4 cup apple cider vinegar
4 lbs tiny new potatoes, about 1 1/2 inches in diameter
3 celery ribs, chopped
1 cup chopped scallion top
1/4 cup sour cream
2 tablespoons mayonnaise

Steps:

  • Cook bacon in a skillet until crisp.
  • Transfer with tongs to paper towels to drain.
  • Pour fat from skillet into a measuring cup and reserve.
  • Coarsely crumble bacon.
  • Pour vinegar into a large bowl.
  • Put potatoes in a 5-quart pot, covered with cold water by 2 inches.
  • And simmer, uncovered until tender, 20 minutes.
  • Drain potatoes in a colander.
  • Rinse slightly with cold water.
  • When potatoes are cool, quarter them.
  • Add them to bowl as cut, tossing to coat.
  • Add 1 tablespoon reserved bacon fat and remaining ingredients.
  • Toss and combine well.

Luchow Hot Potato Salad With Bacon Aka Speck Salat image

Luchow was a famous German resturant in NYC. I have made this recipe since I was 13 and always have had demands for the recipe. The last time I made it for the family picnic, I had to wack the kid with a spoon to keep her out of it before I served it. Wonderful sweet sour taste. This does not expand easily. If more is needed I would recommend making another batch rather than doubling.

1 lb potato
6 slices bacon, diced
1 medium onion, diced
1/2 cup vinegar
1/2 cup stock
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
1 egg yolk, beaten

Steps:

  • Note: use pasturized eggs. Same amount of Boullion may be used for stock.
  • Scrub potatoes, rinse. Boil in jackets; let cool. Peel and cut into 1/4 slices.
  • Cook bacon until crisp. Add the onion and stir until transparent. Add the vinegar, stock and seasonings. Stir. Let come to a boil. Stir in the egg. Remove from heat and pour over potatoes.
  • Servings 2 to 4.
  • Time to make is a guess.

The German-style potato salad doesn't contain any mayonnaise, but is rich with bacon, whole-grain mustard and sweet fried shallots. It's best served warm while the bacon still glistens with fat, but is also nice at room temperature. Make it as close to serving time as possible. Or if you do make it ahead, consider popping it into the microwave for a minute or so just before serving.

2 pounds small waxy white or yellow potatoes, roughly about the same size
6 ounces thick-cut bacon, diced
1/2 cup thinly sliced shallot
3 tablespoons whole grain mustard
1 tablespoon red wine vinegar, more to taste
1/4 teaspoon kosher salt, more as needed
Black pepper, as needed
Chopped parsley, for garnish

Steps:

  • Place whole unpeeled potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over medium-high heat and cook until potatoes are just tender, 15 to 25 minutes depending upon size. Drain and cut potatoes into 1 1/2-inch chunks as soon as you can handle them. Transfer to a large bowl.
  • Meanwhile, fry bacon in a large skillet over medium-high heat until crisp. Remove with a slotted spoon and transfer to a paper-towel-lined plate.
  • Stir shallots into the skillet with the bacon fat and fry for a minute, until just slightly crisped. Remove from heat.
  • In a medium bowl, whisk together mustard, vinegar, salt and pepper. Whisk in shallots and bacon drippings. Crumble in bacon. Immediately toss potatoes with dressing. Adjust seasonings if necessary. Garnish with parsley and more vinegar if you like and serve warm or at room temperature.
