DEVILED SHRIMP WITH BACON DIP



Deviled Shrimp With Bacon Dip image

I found this recipe in the Pittsburgh Tribune-Review, as part of their special section of Super Bowl party recipes. It is originally from "Great Party Dips," by Peggy Fallon (Wiley, $16.95). It is an absolutely superb blend of shrimp, bacon, and cream cheese, with a bit of a kick provided by horseradish, cayenne, green onions, and parmesan cheese. Serve with crackers or pita chips. Great stuff.

8 ounces cooked peeled medium-sized shrimp
6 ounces lean thick-sliced bacon
8 ounces cream cheese, room temperature
1/2 cup mayonnaise
1/3 cup freshly grated parmesan cheese, divided
1 1/2 teaspoons prepared white horseradish (I used a little more)
1 teaspoon fresh lemon juice
1/8 teaspoon cayenne pepper
3 green onions, thinly sliced

Steps:

  • Heat oven to 375 degrees. Chop shrimp coarsely.
  • In a large skillet, cook the bacon over medium heat until browned, for 5 to 7 minutes. Drain on paper towels, then chop finely.
  • In a medium-sized bowl, combine the cream cheese, mayonnaise, all but 1 tablespoon of the parmesan cheese, the horseradish, lemon juice, and cayenne. Mix until well blended. Stir in the shrimp, bacon, and green onions. Scrape the mixture into a small gratin or other shallow baking dish, spreading into an even layer. Sprinkle the remaining 1 tablespoon parmesan over the top.
  • Bake for 20 minutes, until the mixture is bubbly hot and the top is lightly browned. Serve warm, right from the baking dish.
  • Makes about 2 cups, or 6 to 8 servings.

Posting another recipe for the Swiss region of ZWT, so not tested by me. All the ingredients sound wonderful and it is a dip that is served warm with whole crackers.

Number Of Ingredients 6

8 ounces cream cheese
1/2 cup ranch salad dressing
4 ounces swiss cheese, shredded
2 tablespoons green onions, slices
8 bacon, slices crisp-cooked (drained and crumbled)
1/2 cup crushed buttery cracker

Steps:

  • In a small saucepan (or could use microwave), combine cream cheese, ranch dressing, swiss cheese and green onion slices. Heat until cheese is melted; stirring constantly until smooth. Place in a small bowl.
  • Sprinkle with bacon and crushed crackers. Serve with whole crackers.

1/2 cup sour cream
1 (4 ounce) package crumbled blue cheese
1 (3 ounce) package cream cheese, softened
2 tablespoons diced onions
1/8 teaspoon hot sauce
4 slices bacon, cooked and crumbled
chopped fresh parsley (optional)
blue cheese, crumbles (optional)

Steps:

  • Process first 5 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
  • Stir in half of bacon. Cover and chill 2 hours.
  • Let stand at room temperature 15 minutes before serving.
  • Sprinkle with remaining bacon.
  • Garnish with parsley and crumbles, if desired.

Easy Bacon Wrapped Prawns image

This recipe is a lot easier than other bacon-wrapped prawn recipes I've seen. It's simple and delicious.

Number Of Ingredients 4

6 large prawns, per person you're serving,shelled and deveined
6 pieces of raw bacon, 5-6 inches per slice,one for each shrimp
1 -2 cup spicy barbecue sauce
cayenne (optional) or prepared horseradish, to taste (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Wrap a slice of bacon around each large prawn.
  • Secure bacon by skewering each shrimp and bacon slice through with a toothpick.
  • Place in baking dish or on baking tray.
  • Add cayenne or horseradish (or both) to taste to the BBQ sauce (you can substitute Tabasco, if you like - the point is for the sauce to have a little kick), then brush each shrimp/bacon with BBQ sauce. (Or you can dip each one in the sauce before putting it on the tray.)
  • Bake in oven for about 20-25 minutes or until bacon is thoroughly cooked through - if the bacon isn't crisping as much as you'd like, try broiling it for the last 5 minutes, being careful to check that the sauce isn't burning and so on.
