2 large sweet onions
12 hickory-smoked bacon strips
1/2 cup packed brown sugar
1/2 cup balsamic vinegar
1/4 cup molasses
2 tablespoons barbecue sauce

Steps:

  • Cut each onion into 12 wedges. Cut bacon strips in half widthwise; wrap a piece of bacon around each onion wedge and secure with toothpicks. Place in an ungreased 13-in. x 9-in. dish. , In a small bowl, combine the brown sugar, vinegar, molasses and barbecue sauce; pour 1/2 cup over onions. Cover and refrigerate for 1 hour, turning once. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Grill onions, covered, over medium heat for 10-15 minutes, turning and basting frequently with reserved marinade.

6 slices bacon, cooked and crumbled
2 tablespoons chopped fresh parsley
2 (8 ounce) cans refrigerated crescent dinner rolls

Steps:

  • Combine first 4 ingredients.
  • Unroll crescent rolls and separate into 8 rectangles; firmly press perforations of triangle to seal into a rectangle.
  • Spread butter mixture evenly over dough.
  • Roll up each rectangle, beginning with short side; pinch seam to seal.
  • Cut each into 4 slices.
  • Place pinwheels on ungreased baking sheet; flatten slightly.
  • Bake at 375 degrees for 15 minutes or until golden.

1 tablespoon extra-virgin olive oil
4 ounces double-smoked slab bacon, diced small
1 large onion, diced small
1/2 teaspoon kosher salt
1 cup whole milk Greek yogurt
2 tablespoons minced fresh chives
2 large carrots, cut on a sharp bias to form chips, for serving, optional
Pita chips, for serving, optional

Steps:

  • Place the olive oil and bacon in a medium skillet over medium heat. Cook, stirring often, until the bacon is golden brown and crispy, about 8 minutes. Using a slotted spoon, remove the bacon to a paper-towel-lined plate. Add the onions and salt to the pan and cook slowly in the bacon fat, stirring often, until deeply caramelized, about 15 minutes. Add the onions to the bowl with the bacon and let cool for about 5 minutes. Stir in the yogurt and chives. Cover and refrigerate for at least 1 hour to let the flavors mingle. Serve with the carrot "chips" or pita chips.

1 medium yellow onion, diced medium
coarse salt and ground pepper
1 teaspoon all-purpose flour
2 packages (10 ounces each) frozen spinach, thawed and squeezed dry
1 cup whole milk
1/2 cup sour cream
1 bar (8 ounces) cream cheese
1/2 cup grated Parmesan
Crostini or pita chips, for serving

Steps:

  • Preheat oven to 350 degrees. In a medium saucepan, cook bacon over medium, stirring occasionally, until browned and crisp, 10 minutes. Drain bacon on paper towels. Discard all but 1 tablespoon fat from pan. Add onion to pan, season with salt and pepper, and cook, stirring occasionally, until tender, 8 minutes. Add flour and cook 30 seconds. Add spinach, milk, sour cream, and cream cheese. Cook, stirring, until cream cheese melts, 2 minutes. Stir in bacon and 1/4 cup Parmesan.
  • Transfer mixture to a 1 1/2-quart baking dish and top with 1/4 cup Parmesan. Bake until bubbling, 14 minutes. Heat broiler and broil until top browns, 3 minutes. Let sit 5 minutes. Serve dip warm with crostini or pita chips.

  • You can cook the bacon however you wish, but we like to bake ours. Line a large baking sheet with foil and add the bacon slices to a wire baking rack which keeps them out of the grease. Make sure slices are not stacked on one another. Bake for 15-25 minutes or until slices are crisp and retain their shape when held up. You do not want to overcook your bacon so be sure to check on it at the 15-minute mark. Check on it in one-minute increments.Once cooked, carefully remove the pan from the oven. After bacon has cooled, chop it up into smaller bite-sized pieces. Allow the grease on the foil to also cool fully before throwing the foil out. You can also save the bacon fat in a food-safe tin for future cooking.
  • Cut off ends of onions and peel skin away. Slice onions into 1/4″ rings.Add butter, to skillet and heat. Place onion rings into the heated skillet. Sprinkle sugar, and balsamic vinegar, over the onions and cook over medium-low heat. Stir often to mix up onions and prevent any burning or sticking.Once onions begin to take on a golden color, sprinkle with salt, and stir. Cook for an additional 5 minutes. You do not need these to be too amber colored for this appetizer.
  • Slice your ciabatta bread stick(s) into 1/4″ thick slices. Line slices on a parchment-lined baking sheet. Bake at 350 degrees F. for 6-8 minutes or until slightly golden brown. Once toasted, remove from oven and cool for 3-4 minutes.
