This Pepper Jack Meatloaf is absolutely delicious. Especially if you like the flavor of Pepper Jack Cheese.

1 Egg
1 Cup Seasoned Bread Crumbs
1/4 Cup Yellow Onion (Finely Diced )
1 Tsp Salt
1/2 Tsp Ground Black Pepper
2 lbs Lean Ground Beef
1 Cup Pepper Jack Cheese (Shredded )
Salsa

Steps:

  • Preheat Oven to 350°F.
  • In a large mixing bowl, combine the egg, bread crumbs, onion, salt and pepper.
  • Add the ground beef to the mixture and mix well. Press half of the beef mixture into the bottom of a greased loaf pan. Sprinkle 3/4 cup of the pepper jack cheese over meat to within 1/2 inch of sides. Press remaining beef mixture over cheese.
  • Bake uncovered for 50-55 minutes or until the meat is no longer pink. Sprinkle the remaining cheese over meatloaf and bake an additional 5 minutes until cheese is melted.
  • Let meatloaf stand for 10 minutes before slicing. Serve with salsa if desired.

1 cup seasoned bread crumbs
1/4 cup chopped onion
1/2 to 1 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup (4 ounces) pepper jack cheese, divided
1 cup salsa, optional

Steps:

  • In a large bowl, combine the egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8x4-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese., Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a thermometer reads 160°. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with salsa if desired.

1 tablespoon Worcestershire sauce
1 (4 ounce) can tomato sauce
⅓ cup crushed fried pork skins
2 eggs
2 ½ tablespoons chili powder
1 tablespoon garlic salt
1 tablespoon garlic pepper seasoning

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix together the ground beef, Worcestershire sauce. tomato sauce, crushed pork skins, and eggs. Season with chili powder, garlic salt, and garlic pepper. Mix until well blended. Form into a loaf, and place into a greased loaf pan.
  • Bake, uncovered for 35 to 40 minutes in the preheated oven. Let stand for at least 5 minutes before slicing and serving.

3 large baking potatoes, peeled and quartered lengthwise
2 large eggs, lightly beaten
1 large onion, chopped
1 can (8 ounces) tomato sauce
3/4 cup crushed saltines
1/2 cup ketchup
3 garlic cloves, minced
2 teaspoons Worcestershire sauce
1/2 teaspoon seasoned salt
1/2 teaspoon seasoned pepper
3 pounds ground beef
1 pound spicy bulk pork sausage
SAUCE:
1 cup ketchup
1/3 cup packed brown sugar
1-1/2 teaspoons ground mustard
1/2 teaspoon ground nutmeg

Steps:

  • Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 6- or 7-qt. slow cooker. Coat strips with cooking spray. Top with potatoes., In a large bowl, combine eggs, onion, tomato sauce, saltines, ketchup, garlic, Worcestershire sauce, seasoned salt and seasoned pepper. Add beef and sausage; mix lightly but thoroughly. Shape into a loaf; transfer to slow cooker. Combine sauce ingredients; pour over top., Cook, covered, on low until a thermometer inserted into meat loaf reads at least 160° and potatoes are tender, 6 to 6-1/2 hours. Using foil strips as handles, remove meat loaf to a platter.

1 cup whole milk
6 slices white bread
2 lbs ground beef
1 cup parmesan cheese, freshly grated
1/4 teaspoon seasoning salt
3/4 teaspoon salt
fresh ground black pepper
1/3 cup flat leaf parsley, minced
4 whole eggs, beaten
10 slices bacon, thin
1 1/2 cups ketchup
1/3 cup brown sugar
1 teaspoon dry mustard
Tabasco sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
  • Pour in beaten eggs.
  • With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
  • Lay bacon slices over the top, tucking them underneath the meatloaf.
  • Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • Bake for 45 minutes.
  • Pour another 1/3 of the sauce over the top.
  • Bake for another 15 minutes.
  • Slice and serve with remaining sauce.
  • Serve with mashed potatoes. Yummy!

1 lb ground beef, turkey or chicken
1 cup celery, diced
1/2 cup onion, diced
1 cup oatmeal or crumbled saltine cracker
2 eggs
2 cups pepper jack cheese shredded
1/4 cup ketchup
1/8 tsp chili powder
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F. Grease a loaf pan. Mix meat, celery, onion, oatmeal or crackers, eggs together well. Press half of the meat mixture into prepared loaf pan. Place cheese over meat mixture. Top with remaining meat mixture and press down to seal. Spread ketchup over top of meat loaf...sprinkle with chili powder, salt and pepper. Bake, covered lightly with foil, for 30 minutes. Increase oven temperature to 425 degrees F, remove cover and continue to bake for 20 minutes or until edges are bubbling and knife inserted in center comes out clean. Let sit for 5 minutes then slice and serve.

Ground pork is a nice alternative to use for a meatloaf. For this recipe, I just used a pound. Since it shrinks, 1 lb is a good size to make a meatloaf for about 2-3 people.

1 pound(s) ground pork
2 tablespoon(s) salt
1 tablespoon(s) pepper
2 tablespoon(s) cumin
3 tablespoon(s) soy sauce
3 tablespoon(s) sweet n sour sauce
1 teaspoon(s) hot paprika
1 - medium-sized carrot
1 - small red onion
3-4 slice(s) pepperjack cheese

Steps:

  • Wash and clean carrot. Use vegetable peeler to slice it into thin slices.
  • Finely dice the onion.
  • Thoroughly mix all ingredients (except cheese) into ground pork. Let marinate in fridge overnight, or marinate in fridge for at least 2-3 hours, and 1 hour at room temp.
  • Preheat oven to 375*. Place meat into small loaf pan and shape into loaf size. Cover with foil and bake for 40 minutes.
  • Remove foil and pour out most of the fatty liquid that has gathered in the pan. Cover meatloaf with pepperjack slices and bake uncovered for 10 minutes, or until cheese is melty, bubbly and browning just a bit.
  • Remove from oven, cover with foil and let rest for about 20-30 minutes before serving.
