MUSHROOM, BACON, AND SWISS FRITTATA
Steps:
- Preheat oven to 400 degrees (F).
- In a large bowl, whisk together eggs, heavy cream, milk, black pepper, and salt. Set aside.
- Cook bacon in a 12-inch cast iron skillet over medium heat, stirring, until crisp. Using a slotted spoon, transfer the bacon to a large plate. Drain bacon fat from the skillet then place it back over medium heat.
- Melt 2 tablespoons of butter in the skillet. Add onions and cook, stirring occasionally, until tender and lightly browned, about 10 minutes. Add in the garlic, mushrooms, and rosemary and cook, stirring frequently, until mushrooms are golden brown and garlic is fragrant. Season with salt and pepper. Using a slotted spoon, transfer the onions, mushrooms, and garlic to a large plate.
- Place the skillet back over medium heat and add remaining butter. Add the egg mixture to skillet, then top with the bacon, mushrooms, and onions. Cook for 4 minutes over medium-heat without stirring or moving the eggs in any way. At this point carefully transfer the skillet to the oven.
- Bake until the top is golden brown and the frittata is set; about 30 minutes. Sprinkle the frittata with cheese and place under the broiler until just melted. Serve warm.
BACON-MUSHROOM-SWISS BURGER
Basic gets a boost when you pair burgers with crisp, smoky bacon, earthy mushrooms and melty Swiss cheese. The herbed mayonnaise adds instant sophistication, and toasting the buns gives an extra layer of texture. Sweet potato fries or chips go great with this burger.

- To prepare herbed mayo: In a medium bowl, combine mayonnaise, dried herbs, Worcestershire sauce and lemon juice, mixing well. Cover and refrigerate.
- Cut each strip of bacon in half and cook in a skillet over medium heat until crisp.
- Remove and drain on paper towels. Pour off all but 1 tablespoon bacon drippings from the pan.
- Add mushroom slices and soy sauce to the pan.
- Over medium heat, saute mushrooms until browned and soft, about 5 to 10 minutes. Drain on paper towels.
- Preheat grill for medium heat and lightly oil the grate.
- To prepare burgers, mix ground beef, garlic granules, and salt and pepper together in a bowl. Form into patties. Place on prepared grill and grill 3 to 5 minutes per each side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
- During last 2 minutes of cooking, top with cheese and cover to melt cheese.
- Meanwhile, heat oven to 400 degrees, arrange hamburger buns on a foil-lined cookie sheet and lightly toast hamburger buns in the oven on each side.
- When toasted, remove buns to serving plates and spread some of the herbed mayonnaise on each bun.
- To serve, put cheese-topped patties on each bun, add desired hamburger trimmings, finish with the top bun and enjoy.

- In a medium sized mixing bowl add 5 eggs with a pinch of salt and beat until smooth. Place to one side.
- In a large frying pan over medium heat melt in 2 tbsp butter. Add mushrooms and spread them out as best you can (important so they don't steam). Leave to fry until golden on one side, then flip over and continue frying. When they've got a couple of mins left until the other side is browned add in minced garlic and a pinch of salt and pepper. Continue frying then remove and place to one side.
- Turn heat to low and melt in 1 tbsp butter. Pour in beaten egg and gently stir to keep the eggs from catching on the pan. After around 5mins or so the eggs should start to turn into a thick custardy texture, with smaller curds forming. Keep on low heat.
- Stir in a circular motion to form larger curds. Don't dice the egg up into tiny pieces, you want nice long curds. When the eggs have formed into large soft curds, but still slightly runny, take them off the heat. They will continue cooking as they rest. This process can take anywhere between 10-15mins if you keep it low and slow!
