1 teaspoon unsalted butter, or as needed
2 skinless, boneless chicken breasts, cubed
3 cups finely chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
1 cup shredded Cheddar cheese
1 cup shredded Parmesan cheese, divided
½ cup shredded mozzarella cheese
½ cup sour cream
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom and sides of a 9x13-inch dish.
  • Bring a pot of water to a boil. Add chicken and continue to boil until no longer pink, 5 to 10 minutes.
  • Meanwhile, combine broccoli, cream of chicken soup, Cheddar cheese, 1/2 cup Parmesan cheese, mozzarella cheese, sour cream, and pepper in a large bowl. Mix well.
  • Drain chicken and add to broccoli mixture. Mix well. Pour into the prepared baking dish and spread evenly.
  • Bake in the preheated oven for 20 minutes. Add remaining Parmesan cheese on top and continue to bake until cheese is melted, 3 to 5 minutes.

This is a favorite of my family. I am asked to make it for each family gathering. Hope it brings the same fame for you. ENJOY!!

2 -3 lbs shredded chicken
2 lbs broccoli
1 (8 ounce) package cream cheese, softened
1 lb monterey jack cheese (shredded)
1 (8 ounce) can of campbell's cream of broccoli soup (You can use cream of Mushroom however I have a mushroom allergy.)
4 ounces milk

Steps:

  • Rinse and drain broccoli. Chop up the broccoli into small bite size pieces splitting the larger pieces as you get toward the top of the crown.
  • Warm the Shredded Chicken, I use mine straight out of the Crock pot. Mix chicken and the cream cheese until blended well. Does not have to have a perfect consistency. The cream cheese will melt in the oven. Put this in an 11 x 9 baking dish. Add some salt, pepper and garlic powder to the top.
  • Next put the entire bowl chopped broccoli on top of the chicken. Spread them out evenly. Making sure to completely cover the chicken.
  • In a sauce pan warm the cream of broccoli and a half of can of milk. If you follow the directions on the can you will make it too runny. So just use a half of a can of milk.
  • Cover with the top with all of the Monterey Jack cheese.
  • Bake at 375 degrees for 25- 35 mins or until cheese is bubbly and starting to brown on the sides.

4 boneless chicken breasts
3 cups cooked rice
1 (16 ounce) package Velveeta cheese
8 ounces shredded cheese
2 heads fresh broccoli
2 tablespoons butter

Steps:

  • Cook Chicken in skillet with butter until done all the way through.
  • Chop Velveeta and put in microwave safe dish. Melt in microwave, stirring occasionally.
  • Set aside one cup of Velveeta.
  • Cut heads off of broccoli and discard stems.
  • Boil 3 cups of water, and cook broccoli until tender.
  • Cook rice and add to Velveeta. Stir together until rice is cheesy. Put cheesy rice in a 9"X13" casserole dish.
  • Top rice with cooked chicken breasts, arranging in a row.
  • Top chicken and rice with broccoli.
  • Top chicken and broccoli with remaining Velveeta.
  • Sprinkle shredded cheese on casserole.
  • Bake at 350° for 20 minutes.

1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. 1/4 cup all-purpose flour
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
3/4 cup shredded sharp Cheddar
4 cups medium broccoli florets
Cooking spray
3 cups frozen brown rice, thawed
1 rotisserie chicken, skinned, white and dark meat shredded (about 4 cups)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.

2 skinless, boneless chicken breasts, cubed

2 tablespoons butter
1 ½ cups milk
¾ teaspoon salt

1 ½ cups shredded Cheddar cheese, or more to taste

½ cup seasoned bread crumbs, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine 1/2 the mushroom soup and an equal amount of water in a saucepan over medium heat. Add chicken. Bring to a simmer and cook until chicken is no longer pink in the center, 3 to 5 minutes.
