ULTIMATE GRILLED CHEESE SANDWICH
Steps:
- Preheat a skillet over medium heat.
- Slather one side of a slice of bread with butter. Place the bread butter-side-down in the skillet and add one slice of cheese.
- Butter another slice of bread and place it butter-side-up onto your sandwich.
- Grill the sandwich until it's lightly browned on one side and then flip. Continue grilling until both sides are browned and the cheese is melted.
- Repeat with the remaining ingredients for a second sandwich.
- Slice in half, serve, and enjoy!

- Spread 1 t of the butter over each top slice of bread.
- Place sandwiches, butter sides down, in skillet.
- Spread remaining butter over top slices of bread.
- Cook uncovered over medium heat about 5 minutes or until bottoms are golden brown.
- Turn and cook 2 to 3 minutes or until bottoms are golden brown and cheese is melted.
- Cut sandwiches into wedges or sticks, using pizza cutter.

Steps:
- In a small bowl mix together 1 tablespoon pesto and softened butter. Spread pesto butter on one side of all four slices of bread.
- Flip the bread slices butter side down and spread each slice with more plain pesto. Top two of the slices of bread with cheese. Sandwich the bread, butter side out and fry in a skillet over medium heat. Flip when golden brown and fry on the other side. Cook until browned and melty.
- Remove to a cutting board and allow to cool for 3 minutes before slicing in half and enjoying warm.

- Heat a nonstick skillet over medium heat with the butter. When the butter is melted. Lightly moisten both pieces of bread in the butter. Top one slice of bread with the provolone and tomato and cover with the other slice of bread. Cook until golden brown on both sides, flipping a couple of times.
- When the basic grilled cheese is done, remove it from the pan. Turn the heat to medium. If the pan seems very dry, melt a touch more butter in it. Sprinkle the Parmigiano in the still-hot skillet, in a shape roughly the same as the sandwich.
- Now watch closely, as the cheese melts. You'll see the fat start to cook out and the cheese begin to brown and crisp. When it has just begun to brown, put the sandwich back on top and press down with a large spatula to weld the frico to the bread. Let cook for one more minute then serve.
