8 slices bacon
6 tablespoons unsalted butter
1 cup fresh breadcrumbs
1/4 cup grated Parmesan
1/2 cup unbleached all-purpose flour
6 cups 2-percent milk
3/4 pound elbow macaroni
3 cups grated Gouda
1 cup grated Gruyere
1 teaspoon Dijon mustard
Kosher salt and freshly ground pepper

Steps:

  • Cook bacon until crisp. Remove from skillet and crumble (discard bacon fat).
  • Heat broiler. In a large straight-sided, oven-safe skillet, melt butter. Remove 1 tablespoon butter and combine with breadcrumbs and Parmesan.
  • Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer. Add macaroni and cook, stirring constantly and scraping bottom of pan, until tender, about 6 minutes. Remove from heat, stir in remaining cheese and the bacon and mustard, and season with salt and pepper. Top with breadcrumb mixture and broil until golden brown, 1 to 2 minutes.

16 ounces one box elbow macaroni
1/2 cup butter
1/2 cup sifted flour
4 cups milk
2 -3 teaspoons hot sauce
16 ounces shredded sharp cheddar cheese
16 ounces crumbled bacon
top with shredded parmesan cheese and breadcrumbs
top evenly with shredded sharp cheddar cheese (My personal favourite)

Steps:

  • Cook macaroni according to box directions and set aside.
  • In a medium saucepan melt butter over low heat. Add flour and stir constantly until smooth.
  • Turn heat to medium and add milk stirring constantly until thick. (About 10 minutes).
  • Add hot sauce. Stir until mixed in evenly.
  • Add pasta, bacon and cheese. Mix until cheese melts, bacon is mixed in, and pasta is evenly coated.
  • Pour macaroni and cheese into a 9x13 baking dish and top according to taste.
  • Bake in preheated oven at 350 degrees for about 25-30 minutes. (If using parmesan cheese and breadcrumbs take it out when the top looks lightly browned. If using cheddar cheese topping take out when top becomes darkened, but not burnt.).

1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

1 3/4 c uncooked elbow macaroni
2 Tbsp butter
2 Tbsp flour
1 c low sodium chicken broth
1/2 c half n half
1 c sharp cheddar shredded
1 c white cheddar shredded
4 slice bacon coarsely chopped
2 cooked chicken sausage links (i use aidells chicken & apple) sliced in 1/2 inch rounds
salt and pepper to taste

Steps:

  • 1. Cook macaroni according to box instructions and drain well in colander. Set aside.
  • 2. In large saucepan over medium heat melt butter. Whisk in flour, Whisking constantly cook for 1 minute. Slowly stir in chicken broth alternating with half n half. Cook over very low heat stirring frequently until slightly thickened; approximately 10 minutes. Slowly stir in the sharp cheddar and the white cheddar; stirring frequently.
  • 3. Meanwhile in a small skillet over medium low heat add bacon and cook until almost completely browned. Add sausage rounds and cook another 2-3 minutes or until bacon is crispy and sausage rounds are lightly browned. Remove bacon and sausage from pan with slotted spoon. Combine bacon, sausage, cheese sauce and elbow macaroni. Season with salt & pepper to taste. Serve immediately.

4 slices thick cut bacon
6 tbsp butter (separated)
4 tbsp all purpose flour

2 cups mozzarella cheese ((or Monterey Jack))
2 cups cheddar cheese
1 cup Panko bread crumbs
1/4 cup parsley (chopped (loosely packed))

Steps:

  • Preheat oven to 400°F. In a small bowl mix together 2 tablespoons of melted butter, Panko breadcrumbs and chopped parsley. Set aside.
  • In a large stock pot boil pasta in heavily salted water per package directions. Drain and toss with 1 tablespoon of olive oil to prevent sticking in a 9x9" square or a 13x9" pan coated with cooking spray. Set aside.
  • In a large skillet, render bacon until crispy and browned. Remove bacon and set aside to crumble. Keep bacon fat in pan. Add crumbled bacon to pasta, reserving some to top pasta at serving.
  • In same skillet with bacon fat add 4 tablespoons of butter and melt over medium heat. Whisk in the flour and cook for a minute. Add the milk and whisk to mix thoroughly. Whisk in the mustard, hot sauce, salt and pepper. Lower the heat to simmer and cook for 4 minutes, the sauce will thicken.
  • Add the cream cheese and stir to melt in the sauce. Add the mozzarella and cheddar cheeses and stir to melt and incorporate. Sauce should be smooth.
  • Pour cheese sauce over pasta and bacon and stir to mix in completely. Top with breadcrumb mixture and bake uncovered for 20 minutes until top is golden brown and crunchy. This should be enough for 4 large servings or 6 as a side.

2 tablespoons chopped fresh flat-leaf parsley
6 slices bacon, cooked, reserve 1/4 cup rendered bacon fat
1/4 cup unsalted butter
1/4 cup flour
3 cups hot whole milk
1/4 teaspoon nutmeg
salt & freshly ground black pepper, to taste

Steps:

  • Make the bechamel sauce, recipe follows, in a large 12-inch oven-safe skillet.
  • Bring a pot of salted water to a boil and cook the pasta until nearing al dente, but not fully cooked; drain. Preheat the oven to 400 degrees F.
  • Over low heat, stir the dry mustard and cayenne pepper into the bechamel sauce. Gradually add the Cheddar, Gruyere, and 1 cup Parmesan cheese, stirring constantly until all of the cheese has melted into the bechamel sauce. Add an additional cup of milk and cream. Taste and adjust the seasonings, if needed.
  • In another large skillet, cook the bacon until crispy and golden brown. Remove the cooked bacon from the skillet, reserving 3 tablespoons rendered bacon fat.

¼ cup butter
½ cup sour cream
1 egg, beaten
2 tablespoons cream cheese, softened
4 cups grated Asiago cheese
4 cups grated Vermont Cheddar cheese
4 slices bacon

1 large onion, sliced thin
4 cloves garlic, minced
⅛ teaspoon brown sugar

3 tablespoons butter
1 1/2 tablespoons all-purpose flour
1/4 cup grated Parmesan
1/4 cup grated Cheddar

  • Over medium heat in a saucepan, heat the milk with the stock and salt, stirring throughout. Continue to heat the milk mixture over medium heat, and then reduce to low heat once the milk has begun to froth or simmer.
  • Next, in a second saucepan, heat the butter until melted. Stir in the flour. Reduce the heat to low and stir until well incorporated. Remove from the heat when it is a pale tan color (a blond roux).

3 tablespoons flour
1 1/2 cups milk, heated
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Tabasco Sauce
5 oz parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees. Butter or spray a 3-quart glass or ceramic baking dish with non-stick spray. To make the Béchamel Sauce, melt the TWISTED Bacon, Dijon Mustard & Green Onion Butter in a medium saucepan and stir in the flour. Cook over low heat, stirring constantly for 3 minutes. Slowly add the heated milk and cook over medium heat, stirring constantly for 4 minutes. Reduce heat and simmer for 3 minutes, stirring constantly to prevent scorching. Remove from heat and add salt, pepper, parmesan and Tabasco. Stir until the cheese in melted. Cover and set aside. Cook the bacon until just crispy and set aside to cool. • 1 teaspoon salt
• 1 lb. elbow macaroni
• 2 tablespoons TWISTED Bacon, Dijon Mustard & Green Onion Butter
• 2 cloves garlic, minced
• 16 oz. sharp cheddar, shredded
• 16 oz. Velveeta, cut into 1/2 inch cubes
• 6 oz (1 can) French's Cheddar French Fried Onions, crushed
• 9 strips of bacon
Béchamel Sauce Ingredients
• 3 tablespoons TWISTED Bacon, Dijon Mustard & Green Onion Butter
• 3 tablespoons flour
• 1 1/2 cups milk, heated
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon Tabasco Sauce
• 5 oz parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees. Butter or spray a 3-quart glass or ceramic baking dish with a non-stick spray. To make the Béchamel Sauce, melt the TWISTED Bacon, Dijon Mustard & Green Onion Butter in a medium saucepan and stir in the flour. Cook over low heat, stirring constantly for 3 minutes. Slowly add the heated milk and cook over medium heat, stirring constantly for 4 minutes. Reduce heat and simmer for 3 minutes, stirring constantly to prevent scorching. Remove from heat and add salt, pepper, parmesan and Tabasco. Stir until the cheese in melted. Cover and set aside. Cook the bacon until just crispy and set aside to cool. Boil a large pot of water; add 1 tsp salt and the macaroni. Cook for approximately 5 minutes until the macaroni is very al dente. Drain the noodles and return to the pot. Immediately add the butter, garlic and Béchamel Sauce. Toss well. Place 1/3 of the macaroni in the baking dish. Evenly top with 1/3 of the shredded cheddar, 1/3 of the Velveeta and 3 slices of bacon broken into small pieces. Repeat until all noodles, bacon and cheese are in the pan. Top with the crushed French fried onions. Bake for 35 - 45 minutes or until the top is beginning to brown. Let it sit for 5 minutes before serving.
