CRISPY POTATOES WITH BACON, GARLIC, AND PARSLEY

Steps:
- Put the potatoes and salt in a medium saucepan and cover with cold water. Bring to a boil over high heat and simmer for 1 minute, then drain. Pat dry.
- Meanwhile, put the bacon in a well-seasoned cast iron skillet or a saute pan over medium-low heat, and cook until nearly all the fat has rendered and the bacon is crispy, aromatic, and browned, about 5 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel lined plate.
- Add the 1 to 2 tablespoons of butter or oil to the remaining bacon fat. Increase the heat to medium. Add the potatoes, positioning them in the pan so the cut sides get nice and brown. Cook turning only as needed until the potatoes are golden brown, about 15 minutes. Stir in the parsley, garlic, and bacon and stir until fragrant and lightly browned. Season with 1 teaspoon of salt and pepper. Serve.
BACON-AND-CHEESE SMASHED POTATOES

- Put the potatoes in a large saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil. Reduce the heat to medium and simmer until very tender, about 15 minutes.
- Meanwhile, cook the bacon in a large skillet over medium heat until crisp, 7 to 8 minutes; transfer to a paper towel-lined plate.
- Drain the potatoes and return to the saucepan over low heat; cook until any remaining water evaporates, about 2 minutes. Add the butter, then gradually mash in the sour cream with a potato masher. Stir in the bacon and chives, reserving 1 tablespoon of each. Transfer to a serving dish; top with cheddar and the remaining bacon and chives.

- Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.
- Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
- Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

CRISP ROAST POTATOES WITH HONEY AND BACON
These crispy little potato cubes are an amazing side dish, but there are nights when they might just be your whole meal. Sticky and crisp with salty cheese and sweet honey, these potatoes prove that there's nothing humble about a spud.

Steps:
- Put the potatoes in a saucepan and cover them with cold water, adding 1 tbsp salt. Bring to the boil and cook for 7-8 minutes, or until tender. Drain the potatoes and leave to steam dry for 10 minutes.
- Preheat the oven to 220C/200C Fan/Gas 7.
- Place an oven tray with a layer of oil into the oven to heat up for 10 minutes.
- Place the garlic onto a square of foil and drizzle with a little oil to coat. Wrap up the garlic in foil so it is sealed.
- Place the cooked potatoes and the garlic on the hot tray and roast for 30 minutes. Give the potatoes a stir and roast for a further 10-15minutes, or until they are crisp and golden brown all over.
- When the potatoes are nearly done, cook the bacon in a frying pan until crisp and browned all over.
- Add the honey and chilli flakes, and stir together.
- Drizzle the bacon and honey over the crisp potatoes and squeeze out a few soft cloves of the roasted garlic from their skins to stir in (how many is entirely up to you). Toss together so the potatoes are well coated.
- Crumble over the feta and parsley and serve.

- Peel potatoes. Dice them into 1/2 inch by 1/2 inch cubes.
- Parboil them for about five minutes so they are slightly tender but not falling apart. DO NOT OVER BOIL THEM. Drain water.
- Heat oil to 350 degrees in a pan.
- Fry them to a golden brown ( about 15-20 minutes) stirring occasionally.
- Drain on paper towel.
- Mix butter, honey, scallions and bacon in a bowl.
- Add potatoes and stir. Enjoy!

ACCORDION POTATOES
Steps:
- Preheat the oven to 425 degrees F.
- Smash a clove of garlic and place it in a small saucepan with the butter. Melt over medium-low heat.
- Using a sharp knife, make crosswise cuts in each potato about 1/8 inch apart, stopping about 1/4 inch from the bottom. Brush each potato generously with the garlic butter and sprinkle with salt and pepper.
- Bake the potatoes for 30 minutes, then take them out and re-brush with the remaining butter. Bake for another 15 minutes, then (using tongs because they will be hot) stuff the potatoes with the cheese in between the slices. Sprinkle the remaining cheese on top of the potatoes and cook until the cheese has melted. Top with the sour cream, bacon and chives.

- Cut each potato lengthwise into 6 wedges. Wrap each wedge with a slice of bacon and secure each end with a toothpick. Place the oil and potato wedges in a large saute pan-the oil should come at least halfway up the sides of the potatoes. Over medium heat, cook the potato wedges until tender, turning occasionally, about 20 minutes. Increase the heat to high and cook until the bacon is crisp, 3 to 5 minutes. Transfer to a paper towel-lined plate to drain.
- In a small bowl, mix the melted butter, honey, scallions, parsley, 1/4 teaspoon pepper and salt to taste.
