WHOLE ROASTED CHICKEN WITH BACON

- Preheat the oven to 500 degrees F. Prepare the chicken: Season the outside of the chicken with salt and pepper. Fill the cavity with the thyme sprigs and lemon wedges. Turn the chicken so the cavity is facing you. Put one end of a bacon slice squarely over the left thigh, run it over the breast meat and finish by covering the right thigh. Repeat with 9 more strips of bacon, slightly overlapping, so the thighs and all of the breast meat are covered. Then wrap one strip, slightly overlapping, around each drumstick.
- Cook the chicken: Transfer the chicken to a shallow baking pan or rimmed baking sheet fitted with a roasting rack and put it in the center of the oven. Roast for 20 minutes and then lower the oven temperature to 350 degrees F. Cook until the juices run clear or the internal temperature reaches 160 degrees F, 40 to 50 minutes. Remove the chicken from the oven and allow it to rest for 15 minutes before carving. The bacon should form a hard shell over the breast meat. Take care to use a sharp knife when carving so the bacon stays on top of the white meat.
- Finish the dish: Make a sauce by pouring the juices from inside the cavity (along with the thyme and lemon wedges) into the baking pan. Put the pan over medium heat and bring to a simmer. Whisk in the mustard, add 2 tablespoons water and simmer for 2 to 3 minutes to allow the sauce to come together. Strain, pressing down on the lemon wedges to extract all the juice, and season with salt and pepper. Discard the lemon wedges and thyme sprigs and taste for seasoning. Serve immediately.
THE ULTIMATE ROAST CHICKEN

- Preheat oven to 425 degrees F.
- Rinse the chicken with cool water, inside and out. Pat it dry with paper towels. Divide the herbs, keeping 1/2 of them whole. Finely chop the other half. In a small bowl, mash the softened butter with the chopped herbs, until combined. Rub the herbed butter under the skin, as well as all over the outside of the chicken. Season the bird all over with salt and pepper. Stuff the cavity with the orange, garlic, 1 onion, and the remaining herbs. Tie the legs together with kitchen twine to help hold its shape. Place the chicken, breast-side up, in a roasting pan. Put the remaining onion into the pan, which will help color and flavor the sauce. Lay the strips of bacon across the breast of the chicken and roast for 25 minutes.
- Remove the bacon and baste the chicken with the drippings and cook for another 25 minutes to brown the skin. The chicken is done when an instant-read thermometer reads 165 degrees F when inserted into the thickest part of the thigh (the legs of the chicken should wiggle easily from the sockets too.) Remove the chicken to a platter and let stand for 10 minutes, so the juices settle back into the meat before carving.
- Meanwhile, remove the softened onion from the roasting pan. Tilt the pan so the drippings collect in 1 corner, skimming off as much fat as possible, and leaving the drippings. Place the roasting pan on top of the stove over medium heat and take a wooden spoon to scrape up the flavor from the bottom of the pan. Stir the flour into the drippings to make a roux-like paste. Pour in the chicken broth in stages; continue to stir to dissolve the flour evenly to prevent lumps. Stir in the sherry and season with salt and pepper.
- To serve, carve the chicken tableside and squeeze the oranges from the cavity over the meat.

HERB-ROASTED CHICKEN

- Pat the chicken dry; generously season the skin and inside the cavity with salt and pepper. Refrigerate, uncovered, at least 4 hours or overnight to dry out the skin. Let stand at room temperature 30 minutes before roasting.
- Preheat the oven to 425 degrees F. Mash the butter with the chopped thyme and chopped rosemary in a small bowl. Gently slide your fingers under the chicken skin on the breasts and legs to loosen it. Scoop some of the herbed butter with a spoon; slide the spoon under the skin and hold the skin in place while you remove the spoon. Smooth the skin to distribute the butter. Repeat with the remaining butter.
- Squeeze a lemon half into the cavity of each chicken, then stuff the lemon half inside. Stuff 1/2 onion, 3 garlic cloves, 1 thyme sprig and 1/2 rosemary sprig into each chicken cavity. Tie the legs together with twine. Set a rack in a large roasting pan; put the chicken on the rack and roast 25 minutes. Toss the scallions, tomatoes, olive oil and a large pinch of salt in a bowl, then add to the roasting pan. Remove the twine from the chicken and continue roasting until the skin is golden brown and a thermometer inserted into the thigh registers 170 degrees F, about 50 more minutes.
- Transfer the chicken and vegetables to platters and let rest about 10 minutes before carving.
BACON HERB ROASTED CHICKEN
When I roast a chicken, I like to cut the backbone out and sometimes the breastbone, so that it cooks faster. Potatoes and carrots are roasted along side the chicken, then spinach and beans are stirred into the juices to make a tasty wilted spinach salad to accompany the roast.

- Fry the bacon until crisp, then drain on paper toweling; chop half the bacon and combine with chopped thyme and chopped rosemary, reserving the other half of bacon.
- Preheat oven to 350 degrees F; thoroughly rinse off the chicken inside and out.
- Place chicken on a cutting board and use kitchen shears to remove the backbone; turn chicken breast up and gently press to flatten somewhat.
- Gently ease the skin from the breast and season inside the pocket with salt pepper and 1/4 of the bacon herb seasoning and smooth skin back over the breast; season the entire outside with more salt, pepper, and 1/4 of the seasoning.
- Roast the chicken, on a rack, breast side up, placed over a baking dish for 45 minutes.
- Remove the rack and place the partially cooked chicken into the baking dish; surround with the carrots and potatoes.
- Roast until the chicken is done, internal temperature of 165 degrees F, and the vegetables are tender, about an hour; sprinkle with the remainder of the bacon herb seasoning and tent with foil about 10 minutes.
- Push the vegetables and chicken to one side in the pan; place beans and spinach into the other side of the pan and toss gently with chicken juices.
- Sprinkle spinach with reserved bacon, broken into pieces.
- Cut chicken into 4 pieces and serve with roasted vegetables and warm spinach salad.

LEMON AND GARLIC ROAST CHICKEN

- Preheat the oven to 425 degrees F.
- Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the thyme, reserving enough thyme to garnish the chicken dish, 1 lemon, halved, and 2 halves of the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Cut 2 of the lemons in quarters and scatter the quarters and remaining garlic around the chicken. Lay the bacon slices over the chicken to cover.
- Roast the chicken for 1 hour. Remove the bacon slices from the top of the chicken and set aside. Continue roasting the chicken for an additional 1/2 hour, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.
- Remove all but 2 tablespoons of the fat from the bottom of the pan. Add the wine and chicken stock and bring it to a boil. Reduce the heat, and simmer for 5 minutes, or until reduced by half.
- Slice the chicken on a platter. Garnish the chicken platter with the bacon slices, roasted garlic, reserved thyme and 1 lemon, sliced. Serve with the gravy.

- Preheat the oven to 450 degrees F (220 degrees C).
- Rub butter over the entire chicken. Season with salt, pepper and thyme. Place the carrots inside the cavity, and tie the legs together. Place the chicken breast side up in a roasting pan. Lay bacon strips across the top of the chicken, and secure with toothpicks. Sprinkle with paprika. Pour the beef broth into the roasting pan - do not pour over the bacon.

- Remove the bacon and discard toothpicks. Roast the chicken for 15 more minutes to brown the skin. Transfer to a serving platter, and remove the ties. You may eat the bacon, but it is best to discard the carrots.

- Heat oven to 190C/170C fan/gas 5. Put the pancetta in a heavy-based frying pan and gently fry until crisp - if you start the pancetta slowly from a cold pan you shouldn't need to add oil. Lift out with a slotted spoon and set aside. Add shallots to the pan, there should be some pancetta fat left, then fry for 10-15 mins until golden and starting to soften. Tip the shallots into your largest roasting tin.
- Rub the olive oil over both chickens, season well with salt and pepper, then snuggle the chickens into the tin. Roast for 1 hr 20 mins until golden and cooked through. To check they're cooked, pierce the thighs through to the bone - the juices should run clear. Lift the chickens onto a plate or another tin, cover with foil and rest while you finish the veg.
- Put the roasting tin directly on the hob and stir in the stock. Bubble for a few mins, scraping up any stuck bits, then stir in the peas, pancetta and most of the chopped tarragon. Bubble for a few mins more until the peas are cooked, then season and sit the chickens back on top, or transfer everything to a serving dish if you want a smarter presentation. Scatter the chickens with the remaining tarragon, and serve with potatoes - mashed, jacket or roasted, or boiled new potatoes.

- Preheat oven to 375*F (190*C) Rinse the chicken under cold water, drain and pat dry with paper towels.
- Season inside and out with salt and pepper.
- In a small bowl, mix together the sage, thyme, oregano, rosemary, 1/4 tsp salt and 1/8 tsp pepper.
- Using your fingers, loosen the skin of the chicken that covers the breast by sliding your fingers between the skin and the flesh, being careful not to tear the skin.
- Slip half of the herbs inside the pocket defined by each breast half, distributing them evenly over the breast and thigh.
- Tuck the lemon slices inside the pockest between the skin and flesh, placing 2 slices on each side.
- Truss the chicken by tying the legs together with kitchen string.
- Brush the chicken with the melted butter.
- Place the chicken on it's side on an oiled roasting rack in a roasting pan.
- Roast for 20 minutes.
- Turn the chicken onto it's other side and roast for another 20 minutes.
- Turn the chicken breast side up and continue to roast until the juices run clear when pierced in the thigh.
- 15 to 20 minutes longer.
- Remove the chicken from the oven and transfer to a platter.
- Cover loosely with aluminum foil and let stand for 10 minutes before carving.
HERB ROASTED CHICKEN PARTS
Found this delicious recipe in a basic cookbook and have really made great use of it! It is super easy on a busy night or when having company over. If you're using more than one pack of chicken, just increase the amount of oil and herbs used. Everything else remains the same.

- Leave skin on chicken and season lightly with salt and pepper.
- Set oven to 450 degrees. Once hot, spread tablespoon of oil or butter in pan and place in oven for 1 minute.
- Add chicken skin side up. Cook for 15 minutes.
- Mix 1/4 cup of extra virgin olive oil and a 1/2 cup of green herbs.
- Remove pan from oven and spoon 1/3 of herb mixture on top of chicken. Flip chicken over (skin side down) and coat with another 1/3 of herb mixture. Place back in oven for 10 minutes.
- Remove pan once more and flip chicken back to skin side up. Add the remaining herb mixture and cook for an additional 10-15 minutes.

BACON AND HERB ROASTED CHICKEN
Steps:
- Preheat oven to 450°F. In saucepan over low heat, cook garlic in oil for 10 min or until soft. Remove garlic and mash in small bowl. Discard all but 2 Tbsp. oil.
- In skillet over med-high heat, cook bacon, shallots and 2 tsp. thyme in 1 Tbsp. reserved oil. Cook, for 4 min. Let cool. Spread reserved garlic mash and bacon mix under skin of chicken. In bowl, mix remaining herbs and reserved oil, brush over chicken.
- Place chicken on rack set in roasting pan. Place lemon in chicken cavity. Add 1/2 cup broth to pan. Place chicken in oven. Reduce temp to 350°F. Roast about 1 hr and 45 min. Baste with broth often. Transfer chicken to platter. Pour pan drippings into glass measuring cup. Skim and discard fat. Place pan on 2 burners over med heat. Add remaining broth and pan drippings. Cook 2 min. Add vinegar and 2 tsp. garlic, minced. Stir. Serve with chicken.

- Preheat oven to 350'.
- Wash and prepare whole chicken, drain excess water off chicken.
- Mix together melted butter and salt,black pepper,paprika,Thyme and Old Bay Seasoning and brush over the chicken.
- Place in a roasted pan and set aside.
- In a large sauce pan add bacon pieces and butter, begin to fry pieces and add onion and celery. Saute lightly.
- Add minced garlic and stir to combine.
- When onion has turn lightly brown add chicken broth and herb stuffing. Stir well.
- Add salt,pepper and poultry seasoning and let simmer til mixture is not completely dry. (still moist like)
- Turn into a bowl and stir in egg and evaporated milk.
- Add stuffing to the cavity of the whole chicken.
- Add 3-4 slices across top of the whole chicken and place in oven and bake 2hrs or until done.
- After a hour cover with foil to reframe from over browning.
- The last 20 minutes uncover chicken and let brown alittle more.
- NOTE: If you have some stuffing mix lefted over you can bake the rest in a lightly greased baking dish or you may just bake the stuffing separate from the chicken at 350' for 30 minutes (depending on the amount lefted over).
