1 pound thick-sliced bacon
10 ounces white chocolate, chopped
1/2 cup pistachios, chopped
2 ounces milk chocolate

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Thread the bacon slices onto 12-inch wooden skewers that have been soaked in water. Bake until cooked but not too crisp, 20 to 25 minutes. Let cool completely.
  • While the bacon is cooling, set a glass bowl over a pot of simmering water so that the bottom of the bowl is not touching the water. Add the white chocolate to the bowl and heat until melted.
  • Line another baking sheet with parchment. Dip the bacon strips in the white chocolate so they are mostly covered. Place on the parchment. Sprinkle the bacon with the chopped pistachios and use a rasp grater to grate the milk chocolate on top. Let the chocolate harden at room temperature before serving.

1 (12 ounce) bag semisweet chocolate morsels
1 lb of uncooked bacon

Steps:

  • Heat large skillet on high; add bacon strips.
  • Turn bacon strips over as needed with tongs.
  • Cook back until it's reduced to about ¼ of its original size and appears to be crispy. (Personally I believe that the bacon should be crispy; however if you prefer your chocolate covered bacon chewy opposed to crunchy then reduce cooking time by removing your bacon earlier).
  • Drain bacon on papertowels to remove grease.
  • While the bacon is cooling fill the double boiler or medium sauce pan with water and bring to a medium heat.
  • Place double boiler top pan in double boiler bottom pan or put the small sauce pan in the medium sauce pan.
  • Slowly add chocolate morsels into top pan and stir while morsels melt. Do this until all morels have been added. (Be sure to keep stirring to prevent the chocolate from burning.).
  • Using your fingers or tongs carefully dip the bacon strips into the chocolate, if necessary use a spoon to spoon the melted chocolate over the bacon evenly coating it.
  • Once coated lay strips on cooling rack (with something underneath to catch the drips) or waxed paper lined cookie sheet. Cool in refrigerator for 15 minutes to set chocolate.

16 slices applewood smoked bacon, thick cut, cooked crisp and cooled, cut in half
3 (4-ounce) bars semisweet chocolate, chopped (recommended: Ghirardelli)
1 (4-ounce) bar white chocolate, chopped

Steps:

  • Melt both the semisweet chocolate and white chocolate in separate double boilers. Whisk until completely smooth. Remove them from the heat.
  • Dunk the bacon into the semisweet chocolate and make sure it is completely coated. Let excess drip off and lay on a parchment or waxed paper lined quarter sheet tray. Repeat with all the bacon slices. Drizzle the white chocolate over the chocolate covered bacon. Put the sheet tray in the refrigerator to set, about 20 to 30 minutes. Remove from the sheet tray to a serving dish and serve.

Steps:

  • Gather the ingredients.
  • Prepare bacon according to package directions, either on stovetop or in oven. Cook bacon until it is crispy.
  • Once bacon is cooked, drain fat and let cool, then pat both sides of bacon with a paper towel to remove any lingering fat.
  • Melt chocolate in a double boiler or in microwave. If you are using chocolate candy coating, simply melting it is fine. If you are using real chocolate, temper it so that it remains shiny and hard at room temperature.
  • Holding a strip of bacon at the top, carefully dip most of it into melted chocolate. If you have trouble dipping bacon, use a spoon to pour melted chocolate over bacon until both sides are covered to your liking.
  • Lay chocolate-dipped bacon on a tray or plate covered with waxed paper. While chocolate is still wet, sprinkle top with flaked sea salt, chopped toasted nuts, or any other toppings you'd like. Repeat until all of the bacon is covered with chocolate.
  • Refrigerate tray to set chocolate for about 15 minutes. Once set, let bacon come to room temperature, and it's ready to eat!

1 1/4 lbs unsalted butter or 1 1/4 lbs unsalted margarine, room temperature
3/4 cup granulated sugar
3 extra-large eggs
3/4 teaspoon pure vanilla extract
4 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 lb unsalted butter or 1 lb unsalted margarine
1 cup good honey
3 cups light brown sugar, packed
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1/4 cup heavy cream
2 lbs pecans, coarsely chopped
8 ounces good semi-sweet chocolate chips
8 ounces heavy cream
1 teaspoon instant coffee granules (optional)

Steps:

  • Preheat the oven to 350ºF.
  • MAKING THE CRUST:.
  • Beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approxiamtely, 3 minutes.
  • Add the eggs and the vanilla, and mix well.
  • Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined.
  • Press the dough evenly into an ungreased 18x12x1" baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour.
  • Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
  • TOPPING:.
  • Combine the butter, honey, brown sugar and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir.
  • Raise the heat and boil for 3 minutes. Remove from heat. BE VERY CAREFUL - IT IS HOT CARAMEL!
  • Stir in the heavy cream and the pecans. Pour over the crust, trying not to get the filling between the crust and the pan.
  • Bake for 25-30 minutes, until the filling is set.
  • Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into small bars(as they are rich).
  • MAKE GANACHE:.
  • Cook the heavy cream, chocolate chips, and instant coffee(if using) in the top of a double boiler over simmering water until very smooth and warm, stirring occasionally.
  • Dip only one end of pecan bars in the ganache, & place on white muffin cup liners; smoosh(for lack of a better word - this word is mine, not Ina Garten's) to open and place the dipped pecan bar in it. This way it can drip into the liner! Serve with or without liners.

8 ounces of chocolate chips {I prefer milk, but if you like dark chocolate use semi sweet or even dark}
1 cup heavy whipping cream

Steps:

  • In a small pot over medium heat, cook heavy cream until it simmers (DO NOT BOIL). While cream is heating, add chocolate chips to a heat proof bowl. When cream comes to a simmer, pour hot cream over chocolate chips. Slowly mix until chocolate has completely melted and thoroughly mixed with hot cream. Allow mixture to cool to room temperature {about 1 hour} stirring approximately every 15 minutes. Ganache will thicken as it cools. When ganache reaches desired thickness and temperature, use immediately. Store leftover ganache in a covered dish in the fridge. Slowly reheat on stove over LOW stirring regularly until melted. A double broiler works great!
