BACON AND CHEDDAR TOASTS
An easy recipe from Gourmet magazine that is one of Ruth Reichl's favorites.

Steps:
- Put oven rack in middle position and preheat oven to 375°F.
- Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
- Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.
- Trim crusts off bread and reserve for another use (see cooks' note, below), then cut each slice into 4 squares. Bake toasts on baking sheet until beginning to brown on edges, about 20 minutes.
BACON-TOMATO CHEESE TOASTS

- Preheat the oven to 400 degrees. Core the tomatoes and thinly slice. Place in a colander in the sink and sprinkle with 1/2 teaspoon salt; let drain for at least 15 minutes.
- Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 10 minutes; transfer to a paper-towel-lined plate. Pour off and reserve the drippings, leaving 1 tablespoon in the skillet; toast the bread on one side in the drippings until golden (do this in batches, adding more drippings as needed). Place the bread, toasted-side down, on a baking sheet.
- Combine the cheeses with the mayonnaise, scallions and parsley in a bowl. Spread the cheese mixture on the toasts, reserving about 1/3 cup. Crumble the bacon on top. Shake any excess liquid from the tomatoes; distribute the zucchini and tomatoes among the toasts. Dot with the reserved cheese mixture and season with pepper. Bake until golden brown, 15 to 20 minutes. Serve warm.
GRILLED CHEDDAR, TOMATO AND BACON SANDWICHES
From Bon Appétit, March 2000. Makes the ordinary special. Good for breakfast, lunch, dinner or even brunch and late-night snack. Spreading a little mayonnaise over the outside of the bread before grilling adds golden color and delicious crunch. Experiment with different cheeses, like munster and maybe add a sliced jalapeno. Recipe can easily be reduced for even a single serving.

- Cook bacon in heavy large skillet over medium heat until brown and crisp, turning occasionally, about 6 minutes. Transfer bacon to paper towels and drain. Wash and dry skillet.
- Place 4 bread slices on work surface. Press 1/4 cup grated cheese onto each slice. Top each with 2 tomato slices the optional basil leaves. Sprinkle with pepper. Place 2 bacon slices atop each, breaking into pieces if necessary to fit. Press 1/4 cup grated cheese over bacon on each. Top sandwiches with remaining bread slices, then spread 1/2 tablespoon mayonnaise over top (outside) of each sandwich.
- Spray with non-stick cooking spray 2 heavy large skillets. Heat skillets over medium heat. Add 2 sandwiches, mayonnaise side down, to each skillet. Place plate atop both sandwiches to weigh down. Cook sandwiches until bottom is golden brown, about 2 minutes. Spread top of each sandwich with 1/2 tablespoon mayonnaise. Turn sandwiches over, mayonnaise side down. Top with plates and cook until golden brown on bottom, about 2 minutes. Transfer sandwiches to work surface. Cut sandwiches crosswise in half and serve with pickle.

- TOP 1 bread slice with 1 cheese slice and apples; cover with remaining cheese and bread slices.
- SPREAD outside of sandwich with mayo.
- COOK in skillet on medium heat 3 min. on each side or until golden brown on both sides.
- Serving Suggestion: Serve with a mixed green salad tossed with your favorite KRAFT Dressing.
- Substitute: Substitute fresh pear slices or other fresh fruit slices for the apples.
BACON CHEESE MELT
This is a yummy sandwich to make on a cold day or just for when you are in the mood for something cheesy with bacon.

Steps:
- Preheat the oven to broil at 425°F.
- Heat a frying pan on the stove.
- Fry bacon strips until they are the desired doneness.
- Set aside bacon to cool and drain. place bread on a cookie sheet and broil for about 3 minutes until bread is lightly toasted.
- Turn bread slices over (use a tong) and sprinkle shredded cheese on top in a nice thick layer and broil for about 3 minutes until the cheese is nice and melted.
- Take the bread out of the oven and let cool for about 2 minutes.
- Next layer a slice of tomato, onion, pickle and lettuce on one side and place bacon on.
- You may want to add a little low fat mayo or mustard.
- Put together and enjoy!

- ON PREP DAY Combine all of the ingredients and knead by hand (mix first in a large bowl, then turn out and knead) or in a stand mizer fitted with the dough hook, until the dough is elastic. It will be lumpy, of course, but the dough itself should be stretchy. Cover the bowl with plastic wrap and let the dough rise until it has doubled in size, about 1 hour in a warm room. Meanwhile, spray a 9 x 5-inch loaf pan with baking spray. Turn the dough out onto a lightly floured surface and pat it into a rough 8-inch square. Fold the top half to about the middle of the dough and press the edge down to secure it. Fold the top over again, this time to within about an inch or so of the bottom. Press the edge to seal. Now grab the bottom of the dough and pull it up to meet the dough roll you've created and seal the seam. Pinch the ends closed and place the dough, seam side down, in the prepared loaf pan. Cover the pan with plastic wrap and refrigerate the dough overnight or up to 24 hours before baking. The dough should be fully risen after about 6 hours, but a longer rest is good for it. ON BAKING DAY Take the pan out of the refrigerator and heat the oven to 350 degrees Fahrenheit. Put a rack in the center of the oven. Remove the plastic and bake the bread until it is richly browned and the internal temperature reaches 195 degrees Fahrenheit on an instant-read thermometer, about 55 minutes. Transfer the bread from the pan and cool completely on a wire rack before slicing.

MAKE-AHEAD CHEDDAR, BACON, AND TOMATO STRATA

- Cook bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Remove bacon from pan, reserving drippings in the skillet. Crumble when cool enough to handle.
- Add onion to drippings in the skillet; saute for 4 minutes. Add garlic and saute for 1 minute. Remove from heat; combine onion mixture and bacon.
- Whisk milk, eggs, basil, thyme, salt, and pepper together in a bowl until well combined.
- Spray a 9x13-inch baking dish with cooking spray and arrange 1/2 of the bread cubes in the bottom.
- Top bread cubes with 2/3 cup Cheddar cheese, 1/2 of the onion mixture, and 6 tomato slices. Pour 1/2 of the milk mixture over tomatoes. Top with remaining bread cubes and 2/3 cup Cheddar. Top with remaining onion mixture, tomato slices, and milk mixture. Cover and place in the refrigerator to chill at least 8 hours or up to 24 hours.
- Preheat the oven to 325 degrees F (165 degrees C).
- Bake strata in the preheated oven, uncovered, for 55 minutes. Sprinkle with remaining Cheddar cheese and bake until cheese melts, an additional 5 minutes. Let stand 5 minutes before serving.
