This is a delicious, savory quick bread that is sure to become one of your family favorites. The ease of the recipe will be sure to be the cook's favorite, also. Cutting a thin slice in the top of the dough allows for the heat to seek in and ensure even cooking.

- 1. Pre-heat oven to 400 degrees. Grease two 5 x 9 loaf pans.
- 2. In a large frying pan, cook bacon until crisp. Drain excess grease on paper towels. Cut strips up into bite size pieces.
- 3. In a large mixing bowel, sift salt, baking soda and flour together.
- 4. With your fingers, combine 2 tbsp. of butter until thoroughly combined. It should look like sand. Stir in cheese and bacon until well mixed. Add buttermilk until dough just comes together.
- 5. Divid dough evenly between both loaf pans. Smooth tops of dough. With a knife, cut a thin slice down the center of each loaf. Thinly slice remaining butter and put in the slices, using more if needed.
- 6. Bake until tops are golden brown and a tester comes out clean, approximately 25 - 30 minutes. Allow to cool for 30 minutes before slicing. Enjoy! :o)

LEEK, CHEDDAR & BACON LOAF SANDWICH

- Make up the bread mix following pack instructions, using the 2 tbsp oil and the recommended amount of water. Leave in an oiled bowl, covered with oiled cling film, somewhere warm-ish to rise for 1 hr.
- Meanwhile, put the lardons in a big, cold frying pan. Heat gently at first so the fat runs from the lardons before they crisp up - about 10 mins. Remove with a slotted spoon. Add the butter and leeks to the pan and cook to soften. Cool.
- Roll out the dough on a lightly floured surface to a rectangle about 20 x 70cm. Mix the lardons, leeks, cheddar, one of the eggs, the sage and some seasoning. Spoon the filling down one long edge of the rectangle, then brush the edge with some remaining egg. Fold the other half of the dough over the filling and pinch together the edges, but not the ends, to seal into a long sausage. Carefully shape into a ring on a floured baking tray, around a floured empty jar or tin. Pinch together the open ends to finish the ring. Brush all over with egg, scatter with Parmesan and cover with a clean tea towel. Leave to rise for 15-20 mins.
- Heat oven to 200C/180C fan/gas 6. Bake for 30-40 mins until golden and the base sounds hollow when tapped. Eat in wedges.

- Add all ingredients in the order listed to the bread maker pan, reserving 1/4 cup of cheese for the top. *Check your brand's manual for the correct order to add ingredients if you are not using a Cuisinart bread machine. If it differs, add them in the order that your manual states.
- Select the basic/white bread setting. Choose the 1.5 lb loaf size and your preferred crust color. If baking in the oven, choose the dough setting. Press start and allow machine to run through the cycle, then follow steps below for your preferred method for baking.
- Baking in Machine: At the end of the last kneading cycle, remove the kneading paddle. This is optional and can also be done once the bread cools. When the bread completes it's last rise, gently brush the sides with an egg wash and top with the remaining cheese. Once the bake cycle is complete, remove the pan from the bread maker immediately. Let cool for at least 10 minutes, then carefully remove the bread from the pan. Cool completely before slicing.
- Baking in Oven: Once the dough cycle is complete, remove from the dough from the bread pan. Punch down a few times and form into your desired shape. Set on a parchment-lined baking sheet and cover with a towel. Let rise in a warm place until doubled in size, about 45 minutes. - Bread Machine settings - 2 pound loaf, light color and "basic" bread setting.
- Unplug bread machine and remove bread pan.
- Add all ingredients (except the bacon bits) starting with the water into the bread machine "bucket" (loaf pan). Place the bread machine yeast in last and the yeast should not touch the water (until the bread machine is turned on and the ingredients start to be mixed together).
- Place the bread pan back into the bread machine and plug in bread machine.
- Enter the correct settings (2lb, light color and basic) and press "start" button.
- After the bread machine has finished its FIRST kneading cycle, add the bacon bits. You can add them with the other ingredients but the bacon bits will be more broken up and very small if they go through two kneading cycles. Wear oven mitts.
- After the bread machine has finished its FINAL kneading cycle and before the baking cycle starts, gently sprinkle on some bacon bits on top of the dough. Wear oven mitts.
- After the bread machine has finished baking the bread, remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container as it will be very hot!
- In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don't want to be away from home when the bread machine "finished" alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.
