1 small red onion, thinly sliced
1 stalk celery with leaves, thinly sliced

For serving:
2 cups store-bought or homemade queso dip
1 crispy tostada bowl or taco salad shell
Special Equipment:
1 (18x26") or 2 (13x18") baking sheets, lined with foil

Steps:

  • Preheat oven to 400°F. Plan to create 5 sections of nacho flavors, each section with 3 layers of ingredients. Spread one-third of the chips in an even layer on foil-lined baking sheet, then follow the directions to build each section. Once all sections are assembled, bake until cheese is melted and ingredients are hot, 8-10 minutes. Then finish with fresh toppings.
  • For the Spinach-Artichoke Dip Nachos:
  • Working in the first section, spread one-third of the spinach dip over chips with a spoon. Top with one-third of the onions, artichoke hearts, Fontina, and Parmesan. Repeat with 2 more layers of chips and ingredients.
  • After baking, top with sliced tomatoes.
  • For the Loaded Potato Skin Nachos:
  • Cook bacon in a large skillet over medium heat, working in batches if necessary, until crisp, about 10 minutes. Transfer to a paper-towel lined plate. Crumble bacon once cooled. Pour fat from skillet into a heatproof bowl, leaving burned bits in skillet. Wipe out skillet and return bacon fat to skillet.
  • Peel potatoes in long, thin strips, reserving potato skins. Heat skillet with fat over medium-high and fry potato skins, turning, until golden brown, 4-6 minutes. Transfer skins to another paper towel-lined plate, reserving fat in skillet; season skins with salt.
  • Cut potato flesh into 1/2" cubes. Heat skillet with fat over medium and add potatoes. Season with salt and pepper and cook, stirring occasionally, until potatoes are golden brown and cooked through, 8-12 minutes. Transfer to another paper towel-lined plate.
  • Working in the second section, top tortilla chips with one-third of the potato chips, cubed potatoes, bacon, cheddar, Monterey Jack, 3/4 cup sour cream, scallions, and paprika. Repeat with 2 more layers of chips and ingredients.
  • After baking, top with additional sour cream, fried potato skin strips, chives, avocado, and pepper.
  • For the Baby Back Rib Nachos:
  • Toss pork in 1/2 cup barbecue sauce in a large bowl. Working in the third section, top tortilla chips with one-third of the pork, mozzarella, and jalapeños. Repeat with 2 more layers of chips and ingredients.
  • After baking, drizzle with additional barbecue sauce and top with slaw, white onion, and cilantro.
  • For the Meat Lover's Pizza Nachos:
  • Working in the fourth section, drizzle tortilla chips with one-third of the marinara sauce, then top with one-third of the pepperoni, Canadian bacon, sausage, bell peppers, mozzarella, and Pecorino. Repeat with 2 more layers of chips and ingredients.
  • After baking, top with olives, red pepper flakes, garlic powder, oregano, and basil.
  • For the Buffalo Chicken Nachos:
  • Toss chicken in 1/2 cup buffalo wing sauce in a large bowl. Working in the fifth section, top tortilla chips with one-third of the chicken, Colby cheese, blue cheese, and red onion. Repeat with 2 more layers of chips and ingredients.
  • After baking, drizzle with additional wing sauce and top with celery stalks, leaves, and pepperoncini peppers.
  • To serve:
  • While nachos bake, heat queso dip until hot in microwave or in a heatproof bowl set over a pot of barely simmering water. Place tostada bowl in the center of the baked nachos and fill with queso dip. Serve immediately.

CHEESY PICKLE NACHOS

Cheesy Pickle Nachos image

Provided by Molly Yeh

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 15

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2/3 cup whole milk
1/2 cup light lager style beer
1 teaspoon mustard powder
1/2 teaspoon kosher salt
1/8 teaspoon freshly grated nutmeg
4 ounces Havarti cheese, grated (1 1/2 cups)
2 tablespoons cream cheese
3 jalapeno-Cheddar brats
One 8-ounce bag kettle chips
8 to 10 pickle chips
2 tablespoons chopped fresh dill
Sriracha, as desired
Ranch dressing, as desired

Steps:

  • For the cheese sauce: In a medium saucepan over medium heat, melt the butter with the flour. Cook, whisking continuously, until the roux starts to smell toasty but has not taken on any color yet, about 5 minutes. Carefully whisk in the milk until there are no lumps. Add the beer, mustard powder, salt and nutmeg. Bring to a boil, whisking, then cook until thick enough to coat a spoon, 5 to 7 minutes. Add the grated cheese and cream cheese and whisk until melted. Turn the heat to very low and keep warm.
  • For the cheesy pickle nachos: Score the brats and char in a grill pan heated over medium-high for a few minutes on each side or in a saute pan under the broiler. (This can also be done on the grill outside.) Remove from the heat and slice on a hard bias. Set aside and keep warm.
  • Dump the bag of chips into a serving dish. Top with the warm cheese sauce, sliced brats, pickle chips and chopped dill. Drizzle on the sriracha and ranch dressing and serve immediately.

Provided by Eric Greenspan

Time 7h35m

Yield 4 to 6 servings

Number Of Ingredients 23

Vegetable oil, for frying
8 Kennebec or other white potatoes, skin on
2 red bell peppers, charred, stemmed, skinned and chopped
1 jalapeno, stemmed and chopped
2 red onions, thinly sliced
Olive oil, for cooking
Two 9-ounce tubes Mexican pork chorizo
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 cup vinegar
1 tablespoon salt
1 tablespoon sugar
Homemade American Cheese, recipe follows
Leaves from 1 bunch fresh cilantro
1 cup sour cream
8 ounces firm, solid mild Cheddar, finely grated
8 ounces firm, solid low-moisture mozzarella, finely grated
4 tablespoons tapioca flour
2 teaspoons kosher salt
2 ounces melted unsalted butter
1/2 cup strong beer
1/2 cup milk

Steps:

  • Bring oil to 350 degrees F in a deep-fryer. Slice the potatoes thin on a mandoline. Run under cold water until the water is clean. Fry until crispy.
  • Saute the bell peppers, jalapeno and half the red onions in olive oil in a medium skillet over medium-high heat until the onion is translucent. Add the chorizo, chili powder, cumin and paprika, then reduce heat to medium and cook until the chorizo cooks through. Transfer to a food processor and blend.
  • Combine the vinegar, salt, sugar and remaining onions in a small saucepot and bring to a boil. Strain.
  • Layer the Homemade American Cheese over the chips. Top with hot chili to melt. Top with cilantro, sour cream and pickled onions and serve.
  • Line a 8 1/2-by-4 1/2-by-2 3/4-inch-deep loaf pan with plastic wrap.
  • Combine the Cheddar, mozzarella, tapioca flour and salt in a food processor and pulse to combine.
  • Combine the butter, beer and milk in a small saucepan and bring to a boil over high heat. Remove from the heat and slowly pour the hot liquid into the cheese, processing until fully melted and smooth (use caution when blending hot liquids). Spoon the mixture into the prepared loaf pan, spreading it evenly (it should fill three-quarters of the loaf pan). Let stand in the refrigerator until the cheese sets, 4 to 6 hours. Invert the pan on a cutting board to remove the cheese and peel off the plastic wrap. Cut crosswise into 16 slices.

Bacon nachos with cheese sauce image

Rustle up these bacon nachos as a party snack or for that big sporting event. They only take 20 minutes, including the tasty cheese sauce topping

Provided by Lulu Grimes

Categories     Snack, Treat

Time 20m

Number Of Ingredients 12

100g mature cheddar , grated
50g red leicester , grated
1 tbsp cornflour
300ml whipping cream
1-2 tbsp maple syrup
a few drops smoky Tabasco sauce
6rashers smoked streaky bacon
200g plain tortilla chips
3 spring onions , finely sliced
1 jalapeno chilli , sliced (optional)
handful coriander leaves
soured cream , to serve

Steps:

  • Stir the cheeses, cornflour, cream and 1 tbsp maple syrup in a saucepan over a low heat. Continue stirring - it may split or look lumpy but will eventually come together. Season with the Tabasco and a little more maple syrup to taste. Keep warm to prevent it setting quickly.
  • Grill the bacon until very crisp, and warm the tortilla chips on the shelf below in the oven. Heap the chips onto a platter and pour over the cheese sauce. Break the bacon into small pieces and sprinkle over, followed by the spring onions, jalapeño (if using) and coriander.

BACON NACHOS

Bacon Nachos image

This recipe is inspired by appleydapply Bacon and Onion Nachos. We had unexpected company come by and I wanted to make lunch for them. This is the result I got. It's hot and spicy but you can decrease the amount of jalapeno peppers. If you do not like crisp vegetables, microwave them to the desired consistency you like. We like crisp.

LOADED POTATO CHIP "NACHOS"

Loaded Potato Chip

Adapted from a recipe by Kerry Saretsky at Serious Eats. She adapts the nachos concept, using the flavors of loaded baked potatoes. Use a good, sturdy, thick-cut kettle-cooked potato chip for this.

Provided by DrGaellon

Categories     Lunch/Snacks

Time 30m

Yield 4-8 serving(s)

Number Of Ingredients 10

1 medium russet potato, peeled and cut into 1-inch cubes
1/2 cup whole milk
1 tablespoon butter
salt
ground black pepper
4 slices thick-cut bacon
7 ounces kettle-cooked potato chips (1 bag)
1 cup grated extra-sharp cheddar cheese
2 -3 scallions, sliced
1/4 cup sour cream

Steps:

  • Preheat oven to 400°F.
  • Place potato cubes in a small saucepan. Add enough cold water to just cover, and a generous pinch of salt. Cover and cook over high heat until potatoes are fork tender.
  • Drain potatoes and return cubes to the hot pot (off heat). Let stand 5 minutes. Meanwhile, place milk and butter in another saucepan and heat until butter melts. Pass potatoes through a ricer (or mash with a potato masher), then stir in milk and butter. Season with salt and pepper and set aside.
  • Slice each bacon rasher in half lengthwise, then cut crosswise into 1/4" pieces. Scatter pieces into a large skillet and cook over medium heat until almost crispy. Transfer with slotted spoon to a paper-towel lined plate.
  • Place potato chips on a large, oven-safe dish. Dollop with mashed potatoes, sprinkle with cheddar cheese then with scallions. Bake 10 minutes until hot and gooey. Drizzle with sour cream and serve hot.
