1 cup Biscoff creamy cookie spread
1/2 cup corn syrup
3 cups Rice Krispies
32 milk chocolate kisses

Steps:

  • In a large saucepan, combine cookie spread and corn syrup. Cook and stir over low heat until blended. Remove from heat; stir in Rice Krispies until coated. Shape level tablespoons of mixture into balls; place on waxed paper. Immediately press a kiss into center of each cookie. Let stand until set.

Have you ever heard of Peanut Blossoms cookies (aka Kiss Cookies)? They are super popular around the holidays, and you can't hardly go to a Christmas party without seeing some. They are my favorite, but unfortunately my son has is highly allergic to nuts, so they are a no-go for us. That's why I came up with this alternative - Cookie Butter Blossoms!

1 ¾ cup sifted flour
1 teaspoon baking soda
½ teaspoon salt
½ cup butter or margarine
¾ cup cookie butter
½ cup sugar
¾ cup brown sugar
1 egg
1 teaspoon vanilla
3 dozen milk chocolate candy kisses

Steps:

  • Sift together flour, soda and salt and set aside. Cream together butters. Gradually add sugars. Add egg and vanilla. Blend in dry ingredients.
  • Form into balls using a teaspoon of dough for each. Roll in granulated sugar and place on ungreased cookie sheets.
  • Bake at 350° for 8 minutes. Place a chocolate kiss on top of each cookie until it cracks around the edges.
  • Bake 2-5 minutes more until golden brown.

  • Bring first 4 ingredients to a boil.
  • Cook for 1 minute.
  • Remove from heat.
  • Add remaining ingredients.
  • Mix well and drop by teaspoon onto wax paper.
  • Let cool.
  • Note: After I have let them cool, I put them in the fridge.
  • They seem to harden better, plus they taste good that way.

  • Prepare cookie sheet covered in foil or parchment paper.
  • In a saucepan, bring the butter, milk and vanilla to a boil over medium heat. Let it boil for one minute.
  • Remove from heat and stir in salt, rolled oats, and cookie butter.
  • Scoop spoonfuls onto parchment paper or foil and let cool completely before eating.
  • Place in fridge for faster cooling! We also love to eat them straight from the pan.

1 ½ cups sugar
½ cup butter ((one stick))
½ cup milk ((any percentage works))
1 cup cookie butter ((like Biscoff or Trader Joe's))
1 cup shredded sweetened coconut
3 cups rolled oats
½ cup chocolate chips

Steps:

  • Lay out parchment paper or baking mats for the cookies; set aside.
  • In a medium saucepan over medium-low heat, stir together the sugar, butter, and milk. Bring to a low simmer and cook for about a minute, stirring constantly.
  • Remove from heat and stir in the cookie butter until it is completely melted into the mixture. Stir in the coconut and rolled oats and mix until well combined. Use a cookie scoop to measure out rounded mounds of the mixture and place on to parchment paper or baking mat to cool. (You should get about 3 to 4 dozen cookies).
  • While the cookies are cooling, place the chocolate chips in a microwave safe bowl. Microwave on 50% power, until melted, stopping to stir every 30 seconds. Pour the chocolate into a small plastic baggie. Snip off the corner of the bag and drizzle the chocolate over the tops of the cookies. Let harden completely before storing.
