4 strips bacon
1 cup low-sodium chicken broth
2 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon light brown sugar

5 cups cooked brown rice
4 cups small broccoli florets
2 scallions, sliced, white and green parts separated

1 medium carrot, shredded
2 teaspoons toasted sesame oil

Steps:

  • Cover the eggs with about 1 inch of water in a small saucepan. Bring to a high simmer, cover and remove from heat. Let stand for 8 minutes. Run under cold water; peel and quarter each.
  • Meanwhile, arrange the bacon in a large skillet and cook over medium heat until golden brown and crisp, about 4 minutes per side. Remove the bacon from the skillet and chop into bite-size pieces.
  • Whisk together the chicken broth, soy sauce, vinegar, brown sugar, 3/4 teaspoon salt and a few grinds of pepper in a large microwave-safe bowl. Add the rice, broccoli and scallion whites and toss to combine. Cover and microwave on high, stirring occasionally, until the broccoli is crisp-tender and the rice is warmed through, about 6 minutes.
  • Divide the rice-broccoli mixture among four bowls. Top each with a quartered egg, bacon, carrot and scallion greens. Drizzle each with sesame oil.

¼ cup chopped onion
1 (10 ounce) bag frozen broccoli rice
3 eggs, beaten
3 tablespoons soy sauce
2 tablespoons green onion, chopped (green part only)

Steps:

  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon to a paper towel-lined plate, and leave 2 tablespoons bacon grease in the skillet. Crumble bacon when cool enough to touch.
  • Add onions to the skillet and cook over medium-high heat until soft and translucent, 3 to 4 minutes. Add broccoli rice and fry until tender, stirring frequently, about 5 minutes. Mix in beaten eggs and stir until well combined. Cook until eggs are completely scrambled into broccoli rice mixture. Turn off heat and stir in soy sauce.
  • Add crumbled bacon just before serving and stir to incorporate. Top with green onions.

1/2 cup Bacon (Roughly chopped)
1 tsp Sesame oil
1/2 cup Onion (Finely chopped)
2 cloves Garlic (Finely minced)
1 cup Frozen vegetables (Combination of peas, carrots, corn, green beans)
3 Eggs (Lightly beaten)
3.5 cups Jasmine or white rice (Cooked, Day old is best)
3 tbsp Soy sauce
1 tbsp Sriracha sauce
Salt (To taste)
Pepper (To taste)

Steps:

  • Heat a nonstick pot over medium high heat.
  • Add bacon and cook for a few minutes until crisp. Remove bacon from pot and keep aside. Crumble it when it cools down a bit. Don't throw away the bacon fat.
  • In the same pot with bacon fat, add sesame oil, onion, garlic, frozen vegetables and saute for a few minutes until they are tender.
  • Push these vegetables to one side of the pot and add eggs.
  • Scramble them until fully cooked.
  • Mix them together with the veggies.
  • Add boiled rice, cooked bacon, soy sauce, Sriracha sauce, salt, pepper and mix everything together.
  • Garnish with some more cooked bacon and lots of green onions. Enjoy!

12 oz boneless, skinless chicken breasts, diced in bite-sized pieces
salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 cup long grain white rice
2 cups water
1 teaspoon salt
1 cup onion, diced
12 oz (about 4 cups) broccoli florets, roughly chopped into small, bite-sized pieces
2-4 cloves garlic, minced
2 (10-oz) cans Ro-Tel Diced Tomatoes and Green Chiles
2 tablespoons butter
2 tablespoons flour
1 cup chicken broth
1 cup extra sharp shredded cheddar cheese
1/2 teaspoon salt and pepper, each

Steps:

  • Add the diced bacon to a very large skillet or Dutch oven and turn heat to medium high. Cook the bacon until crisp, stirring occasionally, about 10 minutes. Season the diced chicken generously on both sides with salt and pepper. When the bacon is crisp, use a slotted spoon to remove to a plate. Remove the bacon grease. Add butter and olive oil to the skillet. Add the chicken in a single layer and cook for five minutes, flipping once halfway through. Remove the chicken to the plate with the bacon.
  • Add the rice, water, and salt to a saucepan and bring to a boil. Cover, reduce heat to low, and simmer for 14 minutes. When done, remove from heat.
  • Meanwhile, add the onion and broccoli to the skillet where you cooked the bacon and chicken. Cook over medium-high heat, stirring occasionally until broccoli is tender and onions are brown and caramelized, about 8-10 minutes. Add in minced garlic and cook, stirring constantly until just fragrant, about 30 seconds. Top with tomatoes, rice, chicken and bacon and stir to combine. Reduce heat to low to keep warm.
  • Melt the butter in a small saucepan and whisk in the flour until just combined. Add in the chicken broth and stir well. Increase heat to high and cook until thickened and bubbly. Remove from heat and add in cheese and salt and pepper. Stir until cheese is melted, then pour in the skillet with the chicken and rice. Stir to combine and serve.

6 slices bacon, chopped
1 head broccoli, florets cut into pieces, stems peeled and sliced
2 tablespoons low-sodium soy sauce
1 1/2 teaspoons sesame oil
4 large eggs
Kosher salt
3 tablespoons chopped fresh cilantro
2 scallions, sliced
2 tablespoons chopped pickled jalapenos

Steps:

  • Place the rice in a medium saucepan with 2 1/2 cups water. Bring to a boil over medium-high heat, then cover, reduce the heat to medium and simmer until most of the water has been absorbed, about 6 minutes. Reduce the heat to low and cook 12 more minutes. Remove from the heat and let stand, covered, until ready to serve. Meanwhile, cook the bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Steps:

  • 1. Place diced bacon in very large skillet or dutch oven and heat to med. high. Cook until crisp, stirring as needed - about 10 min.
  • 2. While bacon cooks, dice chicken into bite-sized pieces, and season generously on both sides with Cajun seasoning. When bacon is crisp, remove to plate with slotted spoon. At this point, if bacon has not created enough grease to cover bottom of pan, add butter and olive oil as needed.
  • 3. Add chicken to skillet in single layer, and cook for 5 minutes, flipping once to brown evenly. Remove chicken to plate with bacon.
  • 4. While chicken browns, combine rice, water and salt in separate saucepan and bring to boil. Cover and reduce heat to low, and simmer for 14 minutes. Then remove from heat.
  • 5. Meanwhile, add onion and broccoli to hot skillet, and cook over med. high heat, stirring occasionally, until broccoli is tender and onions are caramelized - about 10 minutes. Add in garlic, and cook just until fragrant - about 30 seconds. Top with tomatoes, rice, chicken and bacon and stir to combine. Reduce heat to keep warm.
  • 6. Melt butter in small saucepan and whisk in flour until just combined. Add chicken broth and stir will. Cook on high til thickened and bubbly. Remove from heat and add cheese, salt and pepper. Stir until cheese is melted, then pour into skillet with chicken and rice.
  • 7. Stir well to combine and serve.

10.5 ounce Chicken Breasts ((300g))

  • Heat up 2 teaspoons of olive oil in a large frying pan. Add broccoli florets and stir-fry these on high heat for about 3 minutes.
  • Meanwhile, prep the chicken. Cut the breasts into thin strips. Season them with salt and pepper and rub in the turmeric.
  • When the broccoli is done, transfer it into a bowl.
  • Heat the rest of the olive oil in the pan and throw the seasoned chicken pieces. Stir-fry until cooked through. This will take about 4-5 minutes. When ready, transfer the chicken into the same bowl.
