Steps:
- Bring a large pan of water to the boil. Cook the orzo following pack instructions, drain and set aside. Meanwhile, heat the oil in a frying pan and fry the bacon for 4-5 mins until crispy. Stir in the tomatoes and cook for a couple mins more. Stir in the orzo, pesto and avocado, and heat for 2 mins more.
- Spoon onto a serving plate, then scatter with rocket leaves and Grana Padano.

- Pulse to blend and add heavy cream gradually. Blend the sauce until smooth and set aside.
- Cut up strips of bacon and cook in a large pan. Set aside.

- Drain and coat with olive oil.

AVOCADO, BACON, BLEU CHEESE PASTA

- Add the bacon strips to a large, heavy-bottomed skillet over medium heat. Stir the bacon and cook until crispy. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Pour all but about 2 teaspoons out of the pan.
- Return the pan to the burner over medium heat and add the onions to the pan with a pinch of salt. Stirring frequently, cook until the onions are crisp tender (about 5 minutes) and golden in color. Transfer the onions to a large mixing bowl.
- Pour the lemon juice over the two halves of avocado. Coarsely chop the avocado and add to the bowl with the onions. Stir to combine. Add the red wine vinegar, garlic, and all but 2 tablespoons each of the crispy bacon, snipped basil and the bleu cheese and stir well again.
- Bring a gallon of water to a full rolling boil in a large stockpot. Salt the water and pour in the pasta. Cook to al dente according to package directions.
- Drain the pasta, reserving about a cup of the pasta water. Add the hot pasta to the avocado mixture. Stir in gently but thoroughly to distribute the sauce. If it is too thick, add a splash of the reserved pasta water to thin it. Taste and adjust seasonings with salt and black pepper. Top the pasta with the reserved basil, bacon and bleu cheese and serve warm or room temperature.

- Preheat oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper.
- In a medium bowl, drizzle tomatoes with olive oil and sprinkle with salt and pepper. Stir until tomatoes are coated. Transfer tomatoes to the prepared baking sheet and spread into a single layer. Bake for 15 to 20 minutes until tomatoes are slightly wilted and bursting. Remove from the oven and set aside.
- While the tomatoes cook, bring a large pot of water to a boil. Season water with a generous pinch of salt. Cook pasta according to package directions until al dente. Drain pasta and run under cold water until completely cooled.
- Add pasta to a large bowl and pour in avocado ranch dressing. Stir until pasta is completely coated.
- Run a knife through the avocado flesh to make a checkerboard pattern, then run a large spoon under the avocado right up against to skin to remove the flesh. Add most fo the avocado to pasta bowl.
- Add most of the crumbled bacon and roasted tomatoes to the pasta. Gently stir everything together until combined. Season with salt and pepper, to taste.
- Sprinkle reserved bacon, avocado, and tomatoes on top of the pasta salad. Cover with plastic wrap and refrigerate until ready to serve.

- To make the dressing, combine mayonnaise, lemon juice, lemon zest, sugar and thyme in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add the olive oil in a slow stream until emulsified; set aside.
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.

- Put a large pot of salted water on to boil for the pasta.
- Combine the avocado, olive oil, garlic, lime juice, cilantro leaves, salt and a few grinds of black pepper in the work bowl of a food processor. Process until smooth and creamy.
- Fry the bacon until crisp, then transfer to a paper towel-lined plate and set aside. Leave about 2 tablespoons of the bacon fat in the pan and heat over medium-high heat.
- Add the shrimp and cook, turning frequently, until they turn bright pink and opaque, about 3 minutes total. Remove from the heat.
- Cook the linguine according to package directions and drain, reserving 2 tablespoons of the cooking water. Add the pasta water to the pesto and process just long enough to combine.
- Place the linguine in a large bowl. Add reserved bacon and pesto and toss to combine thoroughly.
- Plate individual portions of the pasta and top each with shrimp. Serve immediately with wedges of fresh lime.
