GRAHAM CRACKER FRUITCAKE
Steps:
- In a very large bowl combine first seven ingredients with 1/2 cup flour. In another bowl, mix remaining flour with next 5 ingredients.
- In another large bowl, beat butter and sugar until creamy. Gradually add egg yolks and beat until thick and creamy. Add graham cracker mixture, blend well. Then stir into fruit mixture with orange juice. Can substitute juice from cherries. Beat egg whites until stiff but not dry. Fold in graham mixture. Can use a tube pan if you choose or several smaller pans for personal sizes.
- Bake at 325 degrees F. If tube pan approx 1-1 1/2 hours, if smaller pans 1/2 hour.

CHRISTMAS ICEBOX FRUIT CAKE
An old-fashioned Christmas treat! This delicious, no-bake icebox fruitcake is made using crushed graham cracker crumbs, candied cherries, coconuts, raisins, pecans and walnuts.

Steps:
- Line a 9X13 baking dish or pan with wax paper or parchment paper.
- Coarsely chop the candied cherries.
- Mix together graham crackers, coconut, raisins, nuts and candied fruit in a large bowl or stockpot. Stir well to combine.
- Melt marshmallows in evaporated milk over low heat.
- Pour marshmallow mixture over dry ingredients.
- Use a wooden spoon or sturdy spatula to mix all ingredients together. You may find it useful to use your clean hands to mix.
- Spoon mixture into a lined 9X13 pan. Allow to cool, cover with plastic wrap and refrigerate for 6 hours, or overnight.
- Once the fruitcake has set, remove it from the baking pan and discard the parchment or wax paper. Slice into loaves.
- Wrap each fruitcake loaf tightly with plastic wrap. Place wrapped loaves in a freezer-safe sealed plastic bag and freeze for up to 1 year.

GRAHAM CRACKER FRUITCAKE
I like fruitcake as long as it doesn't have a lot of strange fruit in it. I like dates, candied cherries, raisins, and walnuts. So that limits a lot fruitcakes although I have changed recipes to suit my taste. I also like graham crackers, so when I found this on the cracker box years ago, I had to try it. I liked it.

MAMMA'S ICEBOX FRUITCAKE
My family doesn't really like the traditional fruitcake, but will eat this like crazy. The thing I like most about it is that it freezes really good. You can make it a month in advance, freeze, defrost and serve later. Cook time is actually chill time.

- Mix graham cracker crumbs and milk until well blended.

- Mixture will be very stiff.
- Pack into a Christmas mold, which has been sprayed with oil, or form into logs and wrap with wax paper.

- Warm the opened can of Sweetened Condensed Milk in a saucepan of boiling water to make it easier to pour. Add the milk to the Melted Butter and Marshmallows stirring to combine well. - Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
- Chop the nuts; drain and cut cherries in half (if they are whole).

- Pack into regular sized loaf pan.
- Refrigerated overnight and cut with a hot knife.

- Place graham crackers in the bowl of a food processor and blitz until they become fine crumbs. Place crumbs in a large mixing bowl. Drain maraschino cherries, reserving 1 tablespoon of the juice. Slice each cherry in half and add to the graham cracker crumbs along with the reserved cherry juice.
- Add the pecans, currants, dates, apricots, dried cherries, and crystalized ginger. Stir well to coat all of the ingredients in graham cracker crumbs. Add the rum extract and sweetened condensed milk. Use a sturdy spoon to stir mixture until everything is well combined. Transfer to prepared loaf pan and press the top down firmly to evenly pack mixture into the pan. Cover in plastic wrap and refrigerate overnight.
- Remove pan from refrigerator, and use a warm wet rag to rub the outside of the pan. Invert the loaf out of the pan onto a serving platter.
