- To a large mixing bowl, add cream cheese, sour cream (if using), ranch seasoning, garlic powder, minced onion, salt and pepper. Stir until well combined with a rubber spatula.
- Add 1 cup of the cheddar cheese, all of the pepper jack cheese, half of the bacon, and half the green onions. Stir until mixed.
- Lay out a large sheet of plastic wrap and drop cream cheese mixture onto it. Cover tightly on all sides, and shape into a ball shape. Refrigerate for several hours or overnight, until firm.
- Add remaining 1/4 cup cheddar cheese, remaining bacon and green onions to a small mixing bowl. Add in poppy seeds and refrigerate alongside the cheese ball.
- Before rolling the cheese ball, add pecans and stir well.
- Line a rimmed baking sheet with aluminum foil and spread out the outer coating in an even layer.
- Remove plastic wrap and roll cheese ball in coating, making sure all sides are coated. You may have to pick up some of the coating and press it so it sticks.
- Serve immediately, or cover loosely with plastic wrap and refrigerate until ready to serve.

- Preheat the oven to 375 degrees F. Butter a shallow 3-quart baking dish. Cook the bacon in a large nonstick skillet over medium-high heat, stirring, until crisp, about 5 minutes. Add 6 tablespoons butter, the onions, scallion whites and a pinch of salt. Cook, stirring, until softened, about 5 minutes. Stir in the rosemary. Add the chicken broth and 1 teaspoon salt; bring to a simmer, then remove from the heat.

- In bowl, combine cream cheese and cheddar cheese. Microwave cheeses for about 45 seconds (depending on microwave) or just until the they are soft and cheddar is slightly melted. Stir to combine.
- Add ranch dressing mix, garlic powder, onion powder, Worcestershire sauce, paprika, black pepper and half of the green onions. Stir the mixture until everything is combined. Chill in fridge for about 5 minutes if necessary so it can be formed into a ball.
- Lay plastic wrap on surface and transfer cheese mixture on top. Wrap the plastic wrap around cheese mixture and shape the mixture into a ball. Chill until the cheese ball is firm.

- Take your cream cheese out of the fridge to soften about 15-20 minutes before making your cheese ball.
- Put all of the ingredients for the cheese ball in a large bowl and mix with hand or stand mixer.
- When the ingredients are well mixed, turn out the cheese mixture onto a large piece of plastic wrap. Pull up the edges of the plastic wrap up and twist so that all of the cheese is inside and begins to form a ball. Use a combo of twisting the plastic wrap and your hands to form the cheese into a ball. When the ball becomes the shape you like, place it in the refrigerator for at least 1 hour before serving so that it becomes firm.
- Mix the chopped pecans, bacon pieces, chives and paprika in a bowl, using a fork. When mixed, spread them out in a solid layer on a piece wax paper. Remove chilled cheese ball from fridge. Unwrap the plastic wrap from the cheese ball and roll ball over the toppings mix. You might also have to pull toppings up onto the sides or top and press in a bit to get the covering you like.
- Serve with crackers, celery, crostini, more pecans, even fruit.
