EASY BACON AND CHEESE QUICHE
This is an easy, delicious quiche that will take no time to prepare and your friends will ask for the recipe! I have made this for numerous office gatherings and everyone raves about it!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
- Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

BACON SPAGHETTI SQUASH
Spaghetti squash is known as "the fun squash" because it's so different from any other type of squash you are going to cook. There are also so many different things you can do with it. This is a basic preparation.

Steps:
- Cut the squash in half and carefully remove the seeds.
- You might want to use a kitchen scissors to cut around the edge because you don't want to dig into the squash itself (which is easy to do).
- Turn upside down in a baking pan.
- Bake at 375-degrees until the inside is somewhat soft (about 45 minutes for this sized squash).
- Let cool until the squash can be handled and then carefully remove the inside of the squash.
- They will come out in threads that look and act much like cooked spaghetti (thus, the name).
- There will be a much larger volume of strands than you think!
- Cook several pieces of bacon very crisp and chop into bacon bits.
- In a skillet, heat some olive oil and/or butter.
- Add the spaghetti squash threads.
- Toss with spices as desired and the bacon bits.
- Heat through and serve.

- Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down; microwave on high until tender, 15-20 minutes. Cool slightly. Separate strands with a fork., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. With a slotted spoon, remove bacon to paper towels; reserve drippings., In same pan, heat drippings over medium heat; stir in butter, brown sugar, salt and pepper until blended. Add squash; toss and heat through. Remove from heat; stir in cheese. Top with bacon.

- Preheat the oven to 350 degrees F (175 degrees C).
- Coat the inside of squash with about 1 tablespoon olive oil. Place squash, cut-side down, on a baking sheet.
- Bake in the preheated oven until squash is tender, about 30 minutes. Cool squash for 10 minutes.
- Grease a casserole dish.
- Shred the inside of squash with a fork and transfer to a bowl. Add 1/2 the shredded Cheddar cheese, bacon bits, butter, salt, and black pepper; mix until well blended. Transfer mixture to the prepared casserole dish.
- Bake in the preheated oven until heated through, about 45 minutes.
- Remove casserole from oven. Sprinkle with remaining Cheddar cheese and return to the hot oven. Bake until cheese is browned and bubbly, 15 to 20 minutes more.

- Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.

BACON AND CHEESE SPAGHETTI SQUASH QUICHE

- Preheat oven to 400F. Poke several holes into the spaghetti squash and place on a foil-lined baking sheet. Bake for 45min - 1 hr or until the inside flesh feels tender when pierced with the knife (the skin will remain firm)
- Remove squash from oven and carefully cut in half to allow the steam to escape. Scoop out and discard the seeds in the center, then use a fork to fluff out the "spaghetti". Measure out 3 cups and set aside, and store any leftovers for other uses.
- Reduce oven to 350F.
- Heat butter over medium heat in a large skillet. Add the onion and cook until soft and fragrant. Add the garlic cloves and cook for 1-2 more minutes. Add the measured squash and chopped bacon to the skillet and mix it all together. Remove from heat.
- In a mixing bowl, whisk together the eggs, milk, seasoned salt, pepper, and dried oregano.
- In a deep dish pie pan sprayed with cooking spray, add the squash and bacon mixture to the bottom and spread it out evenly. Top with the shredded cheddar cheese, and then pour the egg mixture over the top.
- Bake uncovered for 45 min - 1 hr or until the eggs are set and the top is beginning to brown. Check on the quiche during the baking process and if it starts to get too brown before the eggs are set, cover with aluminum foil.
- When done, remove from oven and allow it to rest for 10 minutes before slicing and serving.

CARAMELISED ONION QUICHE WITH CHEDDAR & BACON

- Melt the butter in a large non-stick frying pan, add the onions and cook for 20 mins, stirring now and then, until they are soft and golden brown. Season, stir in the thyme leaves, then transfer to a plate to cool.
- Heat oven to 200C/180C fan/gas 6 with a large baking sheet inside. Roll out the pastry on a lightly floured surface until large enough to line a 25cm loose-bottomed tart tin, with a little overhang of pastry all the way round the top. This will stop the pastry shrinking in the oven later. If there is more overhang than you need, trim off the excess with scissors. Gently press the pastry into the sides of the tin and prick the base with a fork. Chill for 15 mins.
- Line the pastry case with a sheet of baking parchment and fill with ceramic baking beans. Bake for 15 mins on the hot baking sheet (this helps to prevent a soggy bottom). Carefully remove the parchment and beans, then return to the oven for 10 mins more until the pastry looks cooked like shortbread, but is not too brown.
- Meanwhile, put the bacon in the pan you cooked the onions in (there's no need to wash it first or add any oil) and fry for 10 mins until golden. Lift from the pan onto kitchen paper to remove any excess fat. Beat the cream, milk and eggs with seasoning and nutmeg, then stir in the bacon and half the cheese.
- Remove the pastry case from the oven and reduce heat to 190C/170C fan/gas 5. Spoon the caramelised onions evenly over the base of the pastry case. Pour in the bacon mixture, then scatter with the remaining cheese, the thyme sprigs and a little nutmeg. Bake for 25-30 mins until golden and the filling is just set with a slight wobble in the centre.
- Trim the excess pastry and leave to settle for 10 mins, then remove from the tin and slice.

- To prepare crust, weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and 1/2 teaspoon salt in a food processor, and pulse 2 times or until combined. Remove top sheets of plastic wrap, and fit dough, plastic wrap side up, into a 9 1/2-inch deep-dish pie plate coated with cooking spray. Remove remaining plastic wrap from dough. Fold edges under, and flute. Pierce bottom and sides of dough with fork. Bake at 400° for 15 minutes. Cool on a wire rack.
