1 1/2 cups Golden Grahams™ cereal
3/4 cup granulated sugar
3/4 cup packed brown sugar
3/4 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup quick-cooking or old-fashioned oats
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped peanuts
1 cup (6 ounces) semisweet chocolate chips
2 tablespoons quick-cooking or old-fashioned oats

Steps:

  • Heat oven to 350°F. Crush cereal. Mix sugars, butter, vanilla and eggs in large bowl. Stir in flour, cereal, 3/4 cup oats, the baking soda, baking powder and salt. Stir in 3/4 cup of the peanuts and 2/3 cup of the chocolate chips.
  • Spread in ungreased rectangular pan, 13x9x2 inches. Sprinkle with remaining 1/4 cup peanuts, remaining 1/3 cup chocolate chips and 2 tablespoons oats.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 1 hour. For 24 bars, cut into 6 rows by 4 rows.

1 cup butter
1 1/2 cups brown sugar, divided
1 cup quick-cooking oats
1 cup whole wheat flour
1 cup all-purpose flour
1/2 cup wheat germ
1 tablespoon grated orange zest
4 large eggs, lightly beaten
2 cups sliced almonds
1 cup mini chocolate chips or 1 cup regular size chocolate chips
1 cup chopped raisins
1 cup flaked coconut

Steps:

  • Set oven to 350°.
  • Grease a 13 x 9" baking pan.
  • Cream butter, with 1 cup brown sugar.
  • Stir in oats, wheat flour, white flour, wheat germ and orange zest.
  • Press mixture into bottom of prepared baking pan.
  • Combine eggs, almonds, chocolate chips, raisins, coconut, and remaining 1/2 cup brown sugar; mix gently, but thoroughly.
  • Pour over butter mixture; spread evenly.
  • Bake for 30-35 minutes.
  • Cool before cutting into bars.

I've been using these for 8 or 9 years for my primary powerbars while hiking. They are delicious, and have a lot more energy than the commercial ones. Try to vary the types of nuts and chocolate chips. Mint are my favorite chips, but butterscotch is a family favorite too. You can also you different flavors of protein powder.

1 cup rolled oatmeal
1/2 cup wheat bran
1/2 cup oat bran
1 cup crunchy peanut butter
2 tablespoons margarine
1/2 cup protein powder
1 cup coconut
1 cup Karo syrup
1 cup nuts
1 cup chocolate chips

Steps:

  • Mix all ingredients. This will be thick, so a stand mixer is useful.
  • Roll into a tube with plastic wrap, or press into a pan.
  • Refrigerate for 1 hour, then cut into 15ish bars.
  • Place in individual baggies.
  • Enjoy while hiking!
