Time 15m

Yield Serves 4

Number Of Ingredients 8

2 tablespoons neutral cooking oil, like canola
2 garlic cloves, peeled and minced
1 ½-inch piece ginger root, peeled and minced

1 tablespoon soy sauce
1 tablespoon chicken stock or water
Toasted sesame oil for drizzling

  • Add bok choy and stir carefully to cover with oil, then cook for approximately 2 minutes. Add soy sauce, stock or water, then cover pan and cook for approximately 2 minutes more, until steam begins to escape from beneath the lid of the pan.
  • Uncover and continue to cook until liquid is close to evaporated and stalks are soft to the touch, approximately 3 minutes more.
  • Remove to a warmed platter and drizzle with sesame oil.

I just recently introduced Paul to Bok Choy. He had never even heard of it. I was really happy with his reaction. I thought this was delicious. This is a great side dish to a marinated flank steak and pairs well with a nice Riesling.

BABY BOK CHOY SAUTE

Baby Bok Choy Saute image

If you can buy baby bok choy, please do give a try. We much prefer the flavor of baby bok choy to standard boy choy which to our palates at least is quite bitter and too strong tasting. Omit the Thai pepper and replace with milder chile or freshly ground black pepper for less spicy version. A CG Original.

Provided by COOKGIRl

Categories     Greens

Time 25m

Yield 3-4 serving(s)

Number Of Ingredients 9

6 -8 heads baby bok choy, chopped coarsely
1 small Thai peppers, cut into thin slivers (optional)
1 garlic clove, finely minced
1/4 cup green onion, sliced
1 -2 teaspoon fresh galangal, grated (NOT dried)
salt
1 teaspoon regular sesame oil
1/2 teaspoon toasted sesame oil
fresh lime juice, for garnish

Steps:

  • In large saute pan, heat the oil on medium heat.
  • Lightly saute the garlic for 30-45 seconds then increase the heat to medium-high and add the baby bok choy and Thai pepper.
  • Saute another 2-3 minutes, being careful not to burn; adding more oil and/or reducing heat if necessary. The bok choy should be cooked through and wilted slightly, NOT slimey or dark colored.
  • Add the galangal and the green onions. Saute another 45 seconds, stirring constantly. Season with salt and drizzle with lime juice.
  • Serve as a side dish or over steamed brown rice or soba noodles.

BABY BOK CHOY WITH OYSTER SAUCE

Baby Bok Choy with Oyster Sauce image

We love the combination of bright green vegetables such as bok choy or broccoli and oyster sauce. Garlicky and a little spicy, this version has a sweet-acidic punch from the addition of balsamic vinegar which has similar qualities to Chinese black vinegar. Recipe developed by Food Network Kitchen.

SIMPLE BABY BOK CHOY AND SNOW PEAS

Simple Baby Bok Choy and Snow Peas image

This is a flavorful and quick side dish to serve with your Asian meal. The recipe is adapted from The Steamy Kitchen Cookbook by Jaden Hair.

Provided by PanNan

Categories     Greens

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 tablespoon peanut oil
2 garlic cloves, finely minced
1 teaspoon grated fresh ginger
3/4 lb baby bok choy, leves separated
1/2 lb snow peas
1/2 cup chicken stock (or vegetable stock if you wish to keep it vegetarian)
2 tablespoons oyster sauce
1/2 teaspoon sesame oil

Steps:

  • Add the oil, garlic and ginger into a wok or large saute pan. Turn the heat to medium-high. As the oil heats, the garlic and ginger will infuse the oil with flavor. Take care that they do not burn. When the oil is hot, add the bok choy and the snow peas and toss to coat them in the oil.
  • Stir-fry the mixture for about a minute. Add the stock and oyster sauce and bring to a boil. Cover and cook for 2 minute until the bok choy stems are crisp-tender. Drizzle the sesame oil over the mixture and serve.

BABY BOK CHOY - AUTHENTIC CHINESE RECIPE

Baby Bok Choy - Authentic Chinese Recipe image

My mother taught me this basic technique for several vegetables. It can be used also with broccoli and gai lan for example. The result is a crisper texture at the end. The only unauthentic part of the recipe is using garlic salt instead of fresh garlic (but you can easily substitute back!)

Provided by MyraMedstudent

Categories     Vegetable

Time 6m

Yield 2 serving(s)

Number Of Ingredients 4

10 bunches baby bok choy
1 tablespoon oil (I prefer sesame)
1/2 teaspoon garlic salt
1/4 cup chicken broth

Steps:

  • Clean baby bok choy in cold water several times to get out the sand/dirt. You can slice the vegetable in half length-wise if you like.
  • heat oil over medium heat in skillet. (very briefly if using sesame oil since this burns quickly).
  • If you are using fresh garlic instead of garlic salt, add to oil now.
  • Add baby bok choy to skillet, stirring constantly, about 1 min until leaves are coated with oil and beginning to wilt.
  • Add chicken broth and cover pan.
  • Simmer for 2-3 minutes. Test for doneness with a fork - if it can pierce the white thick part of the stalk without much resistance it is ready.
  • Remove from heat, add garlic salt.
  • When transferring to serving dish, you can move some of the broth but don't take the bottom bits since this may have residual sand.
